Hoff’s AF Baked Potato w/Mushroom & Carmalized Onions

Hoff’s AF Baked Potato w/Mushroom & Carmalized Onions

Servings: 2
meat-free, dairy-free, egg-free, oil-free, gluten-free, soy-free


Ingredients:

Carmalized Onions & Mushrooms
  • 1 Sweet Onion (half moon slices)
  • 1 carton Mushrooms (sliced)
  • 1 tsp Sugar
  • 1 tsp Salt
Potatoes
  • 2 Baking Potatoes
Pick One:

Sour Cream
  • 1/2 cup Cashews
  • 1/4 cup Water
  • 1 tbsp Lemon Juice
  • 1 tbsp Roasted Garlic Rice Vinegar
  • 1/4 tsp Salt
Ranch Dressing
  • 1/2 cup Cashews
  • 1/4 cup Water
  • 1 tbsp Lemon Juice
  • 1/4 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Dill (mix-in)
  • 1/4 tsp Salt

Directions:

Carmalized Onions & Mushrooms
  1. Turn on Saute setting, to heat up IP
  2. Add Onions, Mushrooms, Sugar & Salt; mix together
  3. Saute until Onions & Mushrooms release their water 
  4. Turn off Saute setting
  5. Lock lid in place and make sure pressure release valve is closed
  6. Press "Manual" button & reduce time to 20 minutes
  7. When done, use quick release 
  8. If too much water is left, turn on Saute setting until desired amount is left
Potatoes
  1. Meanwhile, poke each Potato with holes & microwave for 5 minutes
  2. Cut each Potato open & air fry at 400 degrees for 15 minutes
Sour Cream
  1. Meanwhile dump all Sour Cream ingredients into a high speed blender, blend until smooth
  2. Once all components are done assemble Potatoes & enjoy
Ranch Dressing
  1. Meanwhile dump all Ranch Dressing (hold Dill) ingredients into a high speed blender, blend until smooth
  2. Mix-in Dill
Meal
  1. Once all components are done, assemble Potatoes with desired toppings & enjoy

Hoff Thoughts: Want to prep in advance? Slice Onions & Mushrooms a few days before use. Microwave Potatoes & store in refrigerator until meal time. Sour Cream or Ranch Dressing can also be made at the same time & stored in the refrigerator for up to two weeks.

Hoff’s Mashed Potato Waffles

Hoff’s Mashed Potato Waffles

Yields: about 6 waffles
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free



Ingredients: 

    • 2 cups Mashed Potato Flakes
    • 1 1/2 cups Water
    • 1/2 Onion (corse chopped)
    • 1 tbsp minced Garlic
    • 1 tbsp Imitation Bacon Bits (yes they are vegan)
    • 1 tbsp Nutritional Yeast
    • 1 tbsp Everything But the Bagel


    Directions:

    1. Preheat Cuisinart Griddler with waffle plates
    2. Mix all ingredients together, forming a dry dough that just holds together
    3. Place two scoops of mixture per waffle, spread out
    4. Cook about 15 minutes until crispy
    5. Serve with favorite fry condiments: Ketchup, Mustard, Just Mayo, etc.

    Onion Rings

    Onion Rings 

    Yields: 2 servings
    dairy-free, egg-free, oil-free, soy-free, gluten-free

    Ingredients:
    • 1 large Sweet Onion (sliced)
    • 1 cup GF Panko Bread Crumbs
    • 1 cup Oat Flour
    • Water
    • 2 tbsp. Nutritional Yeast
    • 1 tsp. Sea Salt
    • 1 tsp. Garlic Powder
    • 1 tsp. Onion Powder 

    Directions:
    1. Whisk together Oat Flour, Yeast & Seasonings
    2. Add Water & stir until a pancake-like batter is reached
    3. Add Panko crumbs to another shallow dish
    4. Dunk each Onion Ring into the wet batter, followed by Panko crumbs
    5. On a silicon lined baking sheet spread out Rings
    6. Air-fry at 475 degrees for about 15 minutes or until crunchy

    Hoff’s Stuffed Mushrooms



    Hoff's Stuffed Mushrooms
    Yields: about 10 Mushrooms

    meat-free, dairy-free, egg-free, gluten-free, oil-free

    Ingredients:
    • 1 cartoon Button Mushrooms (stems removed)
    • 2 tbsp. GF Bread Crumbs
    • 2 tbsp. Nutritional Yeast
    • 2 tbsp. Braggs
    • 1 tsp. Italian Seasonings
    • 1/2 tsp. Onion
    • 1/2 tsp. Garlic

     Directions:
    1. Preheat oven to 350 degrees
    2. Mix everything but the Mushrooms together in a small bowl
    3. Using a spoon, gently fill each Mushroom
    4. Space apart Mushrooms on a silicon lined baking sheet
    5. Spray Mushrooms with additional Braggs
    6. Bake for 15-20 minutes
    7. Watch that the topping does not burn
    8. Enjoy!

    Hoff's Bombay Potatoes

    Hoff's Bombay Potatoes
    Yields: Perfect snack for two
    meat-free, dairy-free, egg-free, oil-free, gluten-free, soy-free

    Ingredients:

    • 5-6 Yukon Gold Potatoes
    • 1 cup Water
    • 2 tsp. Garam Masala
    • 1 tsp. Mustard Powder
    • 1 tsp. Black Pepper
    • 1 tsp. Sea Salt

    Directions:
    1. Place Potatoes whole into the Instant Pot, add Water
    2. Lock lid in place and make sure pressure release valve is closed
    3. Press "Manual" button and adjust cooking time to 10 minutes at high pressure
    4. When done, use quick release method
    5. Allow Potatoes to cool before slicing into cubes and move to a large bowl
    6. Add Seasoning & toss to coat
    7. Transfer Potatoes to Airfryer
    8. Bake at 400 degrees for 30-40 minutes

    Hoff's Potato Puffs

    Hoff's Potato Puffs
    Yields: 18ish Puffs
    meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free


    Ingredients:
    • 6 Yukon Gold Potatoes
    • 1 cup Water
    • 1/4 cup Nutritional Yeast 
    • 1 tsp. Yellow Mustard
    • 1 tsp. Bacon Seasoning (optional)
    • 1 tsp. Onion Powder
    • 1 tsp. Garlic Powder
    • 1-2 tsp. Sea Salt
    • Pepper to taste
    • Plain unsweetened Plant-based Milk

    Directions:
    1. Place Potatoes & Water in Instant Pot
    2. Set Manual setting at High Pressure for 10 minutes
    3. Manually release steam
    4. Drain Potatoes
    5. Using a Ricer (it will remove the peel), press each Potato
    6. Mix riced Potatoes with Nutritional Yeast, Mustard, seasonings & splash of Milk, not too much, dryer Potatoes will result in crisper Puffs
    7. Chill Potatoes in the fridge, they need to be cold & stiff
    8. Form Potatoes into golf ball sized shapes, I use a spring triggered scooper (no idea it's real name)
    9. Place balls on a silicone lined baking sheet or in a silicone muffin tray
    10. Air fry or bake at 450 degrees for 20 -25 minutes

    Hoff Thoughts: I use Yukon Gold Potatoes because they naturally have a rich, buttery flavor and therefore additional fake butter is not needed.

    Vegan Artichoke Dip

    Vegan Artichoke Dip
    Servings: About 3 cups
    meat-free, dairy-free, egg-free, oil-free, gluten-free


    Ingredients:
    • 2-14 oz. cans Artichoke Hearts in Water (rinsed & drained)
    • 1-15 oz. can White Beans (rinsed & drained)
    • Juice from 1 Lemon
    • 2 tbsp. Minced Sweet Onion
    • 2 tsp. Minced Garlic
    • 2 tbsp. Braggs
    • 1 tsp. Sea Salt
    • Nutritional Yeast (optional)

    Directions:
      1. Preheat oven to 375 degrees F
      2. Blend all ingredients together in a high speed blender until smooth
      3. Bake in a small serving dish for about 15 minutes
      4. Sprinkle top with Nutritional Yeast just before serving 

      Hoff Thoughts: This will keep 4-5 days in the fridge, so a perfect make ahead party app!

      Hoff's Maple Glazed Brussels (IP)
      Serves: 2
      meat-free, dairy-free, egg-free, oil-free, gluten-free

      Ingredients:

      • 1 lb. Brussels Sprouts
      • 1 small Sweet Onion (half moon slices)
      • 1/2 cup Water
      • 1/4 cup Maple Syrup
      • 2 tsp. Braggs
      • 1 tsp. Arrowroot

      Directions:
      1. Prepare the Brussels by cutting off the end and quartering
      2. Whisk seasoning together in the IP
      3. Stir in Sprouts & Onions to coat
      4. Close & lock lid
      5. Set Pressure Valve to Sealing
      6. Select Steam setting on High Pressure & cook for 2 minutes
      7. Quick release pressure

      Hoff's Twice Backed Potatoes

      Hoff's Twice Backed Potatoes
      Yields: 6 servings
      meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free

      Ingredients:
      • 8 large Russet Potatoes
      • 1 15 oz. can White Beans (rinsed & drained)
      • 3/4 cup Plant-based Milk 
      • 4 tbsp. Nutritional Yeast
      • 1 tsp. Smoked Paprika
      • 1 tsp. Garlic Powder
      • 1 tsp. Onion Powder
      • 1 tsp. Sea Salt
      Directions:
      1. Preheat oven to 400 degrees 
      2. Wash & slice each Potato just enough to pierce the skin
      3. Place Potatoes directly on oven rack
      4. Bake 2 hours (Not a typo)
      5. Allow to cool before proceeding (about 10 minutes)
      6. Lay each Potato on it’s side & cut off top using a serrated knife
      7. Scoop Potato insides into large bowl, leaving about a 1/4” to keep Potato shell intact (I use a melon baller for this)
      8. Mash all ingredients together using a potato masher or blend on low in your Vitamix
      9. Scoop mashed Potatoes back into each shell
      10. Sprinkle with Paprika
      11. Place each Potato on a baking sheet and place in freezer for about an hour
      12. Once frozen, wrap each Potato in plastic wrap and again in foil, store in freezer bag in the freezer
      13. Remove from freezer at least 8 hours before serving, in order to cook for 25 minutes at 400 degrees, or cook at 400 degrees for 35-45 minutes if frozen


      Hoff Thoughts: Be sure to use Russet Potatoes, as their skin is thicker and will reduce damage to the skin. Stir in chopped Onion for a little something extra!

      Socca Flat Bread

      Socca Flat Bread
      Yields: 4 -6 servings
      dairy-free, egg-free, oil-free, soy-free, gluten-free

      Ingredients:

      • 1 cup Chickpea Flour
      • 1 cup Water
      • 1/2 tsp. Sea Salt
      • Seasonings (optional)
      Directions:
      1. Whisk Chickpea Flour, Water & Salt together and allow to rest for 30 minutes up to 12 hours
      2. Move oven rack 6" from broiler
      3. Preheat oven to 450F degrees, allow pan to heat up in oven
      4. Pour batter into a  hot 10" pan
      5. Bake 10 - 15 minutes
      6. Cut into wedges to serve

      Hoff Thoughts: Add-in ideas: Onions, Asparagus, Spinach, Mushrooms, Rosemary, Garlic

      Hoff's Crisps

      Hoff's Crisps
      Yields: 2-3 serving
      meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free

      Ingredients:
      • 4-6 medium Yukon Gold Potatoes
      • 1 tsp. Smoked Paprika
      • 1 tsp. Garlic Powder
      • 1 tsp. Onion Powder
      • 1 tsp. Sea Salt
      Directions:
      1. Preheat oven to 450 degrees
      2. Slice the Potatoes into fry-like wedges
      3. Spread out wedges onto a baking sheet lined with parchment or a silicon mat
      4. Sprinkle with Seasonings
      5. Toss to evenly coat
      6. Bake for 30-45 minutes

      Hoff Thoughts: Yeah, I know technically these are Potato Wedges or large fries, but I've been watching a lot of Australian YouTube lately and they call them Crisps and I like that!  The Smoked Paprika is what really makes these Potatoes special.

      Hoff's Orange Rice (Instant Pot)

      Hoff's Orange Rice (Instant Pot)
      Yields: 3-4 Servings
      meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free

      Ingredients:
      • 2 cups Orange Juice
      • 2 cups Jasmine Rice
      • 1 15 oz. can Mandarin Oranges in light syrup
      • 3 tbsp. chopped Cashews (optional)
      • Sea Salt
      Directions:
      1. Mix Juice & Rice together in IP
      2. Lock lid in place and make sure pressure release valve is closed
      3. Press "Manual" button & reduce time to 3 minutes
      4. When done, use manual release method
      5. Fluff Rice with fork
      6. Stir in Mandarin Oranges with Juice & Cashew pieces
      7. Season with Sea Salt


      Hoff Thoughts: I don't actually chop my Cashews, I just throw them in a sandwich bag and bash them a bit with a heavy object, ah...Zen.  I also don't buy whole Cashews, too pricey!  Instead, I opt for their cheaper, yet still tasty alternative - Cashew pieces.  As I typically blend them to make sauces or break them into tiny pieces for a hit of crunch in dishes such as this, the cost effective pieces work out perfectly!

      Airfryer Potatoes

      Airfryer Potatoes
      Yields: 5-6 servings
      meat-free, dairy-free, egg-free, oil-free, gluten-free, soy-free

      Ingredients:
      • 1 bag Baby Potatoes (quartered)
      • 2 tbsp. Braggs
      • 1 tsp. Onion Powder
      • 1 tsp. Garlic Powder
      • 1/2 tsp. Sea Salt

      Directions:
      1. In a large bowl, toss Potatoes with Water to coat
      2. Add Seasoning & toss to coat
      3. Microwave for 5 minutes
      4. Transfer to Airfryer
      5. Bake at 360 degrees for 10-20 minutes
      6. Shake, check for doneness

      Hoff's Mashed Potatoes II (IP)
      Yields: 4-5 servings
      meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free


      Ingredients:
      • 5-6 small/medium Yukon Potatoes
      • 1 cup Water
      • 1/4 cup Nutritional Yeast
      • 1 tbsp. Dried Onion
      • 1-2 tsp. Sea Salt
      • Plain unsweetened Almond Milk (as needed)

      Directions:
      1. Place Potatoes into the IP on the steamer rack
      2. Add Water
      3. Close the lid, set pressure valve to sealing
      4. Select Steam setting on High Pressure for 20 minutes
      5. Use Natural Steam Release
      6. Using a Ricer, press each Potato
      7. Add Nutritional Yeast, Dried Onion, Sea Salt & splash of Milk
      8. Mix "shredded" Potatoes to achieve a mashed texture
      9. Add additional "Milk" until desired consistency is reached

      Hoff Thoughts: Unless you have "man hands" you'll need to cut larger Potatoes in half before pressing through the Ricer.  Place the cut side down inside the Ricer.  I love the Ricer, because you don't have to peel the Potatoes, the peels will come right off in the pressing process.  Ricing your Potatoes will help prevent the gummy "gluteny" mashed Potatoes that can result from overworking the Potatoes.  While I love Baby Yellow Potatoes because they naturally have a rich, buttery flavor that took forever to rice, I found this side dish comes together much quicker with larger Potatoes.

      Mushroom Risotto (Instant Pot)

      This recipe was adapted from Vegan Under Pressure: Perfect Vegan Meals Made Quick and Easy in Your Pressure Cooker


      Mushroom Risotto (Instant Pot)
      Serves: 6-8
      meat-free, dairy-free, egg-free, oil-free, gluten-free

      Ingredients:
      • 4 cups Veggie Broth
      • 1 cup Water
      • 3 cups Arborio Rice
      • 1 cup frozen Edamame/Lima Beans (optional)
      • 1 Sweet Onion (chopped)
      • 1 carton sliced Mushrooms (chopped)
      • 1/4 cup Nutritional Yeast
      • 1/4 cup Coconut Aminos
      • 2 tsp. minced Garlic
      • Sea Salt to taste

      Directions:
      1. Stir all ingredients together in IP
      2. Lock lid in place and make sure pressure release valve is closed
      3. Press "Manual" button
      4. Decrease cooking time to 5 minutes
      5. When done, use quick release method, watch for liquid splatter
      6. Fluff with a fork, season with Braggs or Sea Salt

      Airfryer French Fries

      Airfryer French Fries
      Serves: 2 people
      meat-free, dairy-free, egg-free, oil-free, gluten-free, soy-free

      Ingredients:
      • 2 large Russet Potatoes
      • 2 tbsp. Water
      • 4 tbsp. Nutritional Yeast
      • 1/2 tsp. Sea Salt

      Directions:
      1. Pierce each Potato with a fork & microwave for 5 minutes 
      2. Place in fridge for at least a few hours (not essential, but better outcome)
      3. Slice Potatoes into consistent sized pieces
      4. In a large bowl toss with Water to coat
      5. Add Yeast & Salt, toss to coat
      6. Spread evenly in Airfryer basket, do not layer on top of each other (may require more than one round of cooking)
      7. Bake at 360 degrees for 13 minutes
      8. Using a spatula, toss to expose uncooked Fries
      9. Cook for another 10-15 minutes, periodically checking for doneness

      Hoff's Spiral Oil-Free Fries
      Serves: 2
      dairy-free, egg-free, oil-free, soy-free, gluten-free


      Ingredients:
      • 2 Russet Potatoes
      • 1/4 cup Nutritional Yeast
      • 1 tsp. Sea Salt

      Directions:
      1. Using a Spiralizer, cut the Potatoes
      2. In a large bowl, toss Potatoes with Yeast & Salt
      3. Place Potatoes into an Airfryer
      4. Set to 360 degrees for 13 minutes
      5. Periodically remove basket, and using tongs, toss Potatoes around
      6. Return basket & cook until done, periodically checking for doneness

      Hoff's Dump Mashed Potatoes (IP)

      Hoff's Dump Mashed Potatoes (IP)
      Yields: 4-5 servings
      meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free


      Ingredients:
      • 1 small bag Baby Dutch Yellow Potatoes (about 1.5 pounds)
      • 1 cup Water
      • 2 tbsp. minced Garlic
      • 1/4 cup Nutritional Yeast
      • 1 tbsp. Dried Onion
      • 1-2 tsp. Sea Salt
      • Plain unsweetened Almond Milk (as needed)

      Directions:
      1. Dump the Potatoes into the IP
      2. Add Garlic & Water
      3. Close the lid, set pressure valve to sealing
      4. Select Manual setting on High Pressure for 15 minutes
      5. Quick release steam
      6. Add Nutritional Yeast, Dried Onion, Sea Salt & splash of Milk
      7. Using a handheld immersion blender, blend everything until desired texture is reached
      8. Add additional "Milk" until desired consistency is reached

      Hoff Thoughts: I use Baby Yellow Potatoes because they naturally have a rich, buttery flavor and therefore additional fake butter is not needed. Top this with Hoff's Instant Mushroom Gravy (IP).

      Servings: 4
      meat-free, dairy-free, egg-free, oil-free, gluten-free

      Ingredients:
      • 1 bunch Broccoli (chopped)
      • 1/2 cup Water
      • 1 frozen Ginger cube
      • 4 tbsp. Honey Mustard
      • 3 tbsp Braggs
      • 2 tsp. Arrowroot
      • 1 tsp. Coconut Sugar

      Directions:
      1. Whisk together Water, Braggs, Mustard, Arrowroot & Seasoning
      2. Toss sauce with Broccoli in the IP
      3. Close & lock lid
      4. Set Pressure Valve to Sealing
      5. Select Steam setting on High Pressure & cook for 1 minute
      6. Quick release pressure
      7. Stir & serve

      Ingredients:

      • 1/2 cup Water
      • 3 tbsp. Braggs
      • 3 tbsp. Honey Mustard
      • 2 tsp. Arrowroot
      • 1 tsp. Coconut Sugar

      Directions:
      1. Whisk together Water, Braggs, Mustard, Arrowroot & Sugar
      2. Toss sauce with Brussels in the IP
      3. Close & lock lid
      4. Set Pressure Valve to Sealing
      5. Select Steam setting on High Pressure & cook for 2 minutes
      6. Quick release pressure
      7. Stir & serve
