Hoff's Not A Burger Wrap

Yields: 4 Wraps
meat-free, dairy-free, egg-free, soy-free



Ingredients:

  • 4 Wraps
  • 15 oz can Black Beans (rinsed & drained)
  • 2 Roma Tomatoes (sliced)
  • Lettuce
  • 1/2 Red Onion (sliced)
  • Pickles
  • Vegan Mayo
  • Ketchup
  • Mustard
  • 2 tsp Hoff Seasoning

 Directions:
  1. Mash Black Beans with Hoff Seasoning
  2. Microwave 2 minutes to warm
  3. Spread mashed Beans onto center of wrap
  4. Assemble rest of wrap like your burger
  5. Enjoy!

Black Bean Smoothie

Black Bean Smoothie

Serves: 1
dairy-free, egg-free, oil-free, soy-free, gluten-free


Ingredients:
  • 1 can Black Beans (rinsed & drained)
  • 2 cups Almond Milk
  • 1 cup frozen Strawberries, Cherries or Mixed Berries
  • 1 tbsp Cacao Powder
  • 1 tbsp Almond Powder (optional)
  • 1 tbsp Maple
  • 1 tbsp Chia Seeds
  • Pinch of Salt

Directions:
    1. Blend everything together using a high speed blender; 1 minute
    2. Consume immediately

    Hoff Thoughts: This is meant to be a meal replacement as it comes in over 500 calories with Almond Powder & under without. Best served ice cold, add ice cubes if needed.

    Hoff's Baked Pineapple Chkn

    Yields: 5-6 servings
    meat-free, dairy-free, egg-freeoil-free, gluten-free



    Rice:
    • 1 1/2 cups Jasmine Rice
    • 2 1/2 cups Water

    Ingredients:
    • 1 cup Soy Curls (rehydrated) or 14 oz firm Tofu (cubed)
    • 1 Red Pepper (chopped) 
    • 1/2 Sweet Onion (chopped)

    Sauce Ingredients:
    • 20 oz can Pineapple chunks in 100% Juice
    • 1/2 cup Bragg Liquid Aminos
    • 1/4 cup Water
    • 2 tbsp Brown Sugar
    • 2 tbsp Corn Starch
    • 1 tsp minced Ginger
    • 1 tsp minced Garlic

    Directions:
    1. Dump Pineapple w/Juice & Sauce Ingredients into 9x13 baking dish, stir
    2. Add Soy Curls/Tofu, Peppers & Onions together, stir to combine
    3. Bake uncovered at 400 degrees for 20 minutes
    4. Meanwhile prepare Rice
    5. Once everything is cooked, spoon Rice into a bowl, top with Veggies & any additional sauce such as Tahini if desired
    6. OR 
    7. Dump Pineapple w/Juice, Sauce Ingredients, plus 2 cups Water into 9x13 baking dish, stir, add remaining ingredients, stir to combine
    8. Bake, covered at 400 degrees for 45 minutes, check Rice for doneness

    Ingredients:
    • 4 tsp Instant Coffee
    • 8 tbsp Water
    • 2 tbsp Cacao Powder or Hershey Syrup
    • 4 tbsp DaVinci Raspberry Syrup
    • 8 Ice Cubes
    • 2 cups Soy Milk
    Directions:
    1. Divide Instant Coffee, Chocolate & Syrup between two glasses
    2. Add Water, use Milk Frother to blend
    3. Add Ice & Milk
    4. Screw you Starbucks!

    Dressing Ingredients:
    • Juice from 1 Lime
    • 2-3 tbsp Brown Sugar
     
    Salad Ingredients:
    • 1 container Strawberries (chopped)
    • 1 container Blackberries
    • 1 container Blueberries

    Directions:
    1. In a large bowl mix Berries & Lime Juice together until combined

    Hoff Thoughts: Raspberries seem like a natural addition to this Salad, but they are too delicate & breakdown.

    Hoff’s Red Beans & Rice

    Yields: 6 servings
    meat-free, dairy-free, egg-free, oil-free, gluten-free, soy-free

    Ingredients: 
    • 2 1/2 cups Veggie Broth
    • 1 1/2 cups Jasmine Rice
    • 15 oz can Kidney Beans (rinsed & drained)
    • 1 cup Soy Crumbles
      • 1 tsp Hoff Seasoning
      • Pinch of Fennel Seeds
      • Splash of Hot Sauce
    • 1 Red Pepper (chopped)
    • 1 Sweet Onion (chopped)
    • 1 tsp Garlic (minced)
    • 2 tbsp Nutritional Yeast
    • 2 tsp Hoff’s Seasoning
    • 2 tsp Smoked Paprika
    • 1 tsp Thyme

    Directions: 
    1. Preheat oven to 375 degrees
    2. Rehydrate Soy Curls in just enough Water to cover, mix in Seasonings, let sit 15 minutes
    3. In a 9x13 casserole dish, dump all ingredients, mix to combine 
    4. Cover & bake for 45 minutes

    Hoff Thoughts: If making ahead of time, add Water at prep or right before baking - whichever your spirit whispers…mine can’t make up its mind.

    • 15 oz can Black Beans (rinsed & drained)
    • 1 cup Plant-based Milk + Milk (reserved)
    • 4 Dates
    • 3 tbsp Cacao Powder
    • 1/4 tsp Sea Salt

    Directions:
    1. Add all ingredients to a high-speed blender like a Vitamix
    2. Blend until smooth about 30 seconds
    3. Pour mixture into one Ninja Creami Deluxe Container
    4. Place in freezer for 24 hours without the lid*
    5. When ready to enjoy, process using a Ninja Creami Deluxe Lite Ice Cream setting
    6. Make “well” in Ice Cream, add enough “Milk” to fill, re-spin using the Milkshake setting

    Yields: 1 Deluxe Pint (3 cups)

    Ingredients:
    • 15 oz can crushed Pears in 100% Juice
    • 10 oz frozen organic Raspberries
    • 1 tbsp Lime Juice
    • 4 Dates
    • Plant Milk (if needed)

    Directions:
    1. Blend Pears, Raspberries & Dates using a high speed blender until smooth about 30 seconds
    2. Pour mixture into Ninja Creami Deluxe Container, if space left before Scoopable Max Fill line, add some Plant Milk, stir
    3. Place in freezer for 24 hours without the lid*
    4. When ready to enjoy, process using a Ninja Creami Deluxe Sorbet setting, Re-Spin w/milk as a Pear base tends to be icy
    5. Eat it all or place leftovers back into freezer till next time

    • 4 Wraps
    • 4 pre-made Burgers
    • 2 Roma Tomatoes (sliced)

    • 1/2 Red Onion (sliced)

     Directions:
    1. Heat Burgers, cut each in half
    2. Add one Burger to each wrap
    3. Assemble rest of wrap like a normal Burger
    4. Enjoy!

    Hoff Thoughts: In a pinch I use Beyond, Impossible or Aldi’s Earth Grown Veggie Burger.  When I have time, I prefer to make my own.

    Yields: 2 servings

    Ingredients:

    • 1 cup Jasmine Rice or Quinoa
    • 1 1/2 cups Water
    • Tofu or Baby Potatoes
    • 15 oz can Chickpeas
    • 1 Avocado (cubed)
    • 1 cup Cucumber (chopped)
    • 1 cup Carrots (shredded)
    • 1/2 cup Onion (diced)
    •  2 tsp. Sunflower/Pumpkin Seeds
    • Cashew Cream (1/4 cup Cashews, 1/4 cup Water)
    • Hummus

    Directions:
    1. Drain Chickpeas but don’t rinse, add Tofu or Potatoes toss with desired spices, spread out on baking sheet air-fry or roast at 400 degrees for 12 minutes (AF), 30 minutes (oven)
    2. Meanwhile, place Rice & Water in an Instant Pot & cook on Manual for 3 minutes or Quinoa for 4 minutes Quick Release
    3. Divide Rice/Quinoa evenly into two bowls 
    4. Divide remaining ingredients
    5. Top with desired amount of Cashew Cream & Hummus

    1. Dump ingredients into a food processor
    2. Blend until smooth, about 1-2 minutes

    Ingredients:
    •  4 Gluten-free Wraps
    • 1 cup Baby Spinach or Cole Slaw mix
    • 1 Zucchini (sliced)
    • 4 Portobello Mushrooms (thinly sliced)
    • 2 Roma Tomatoes (sliced)
    • 1 Avocado (optional)
    • 1 Red Pepper (sliced)
    • 1 small Onion (sliced)
    • Hummus
    • Salt & Lemon Pepper to taste


    Directions:
    1. Air-fry Veggies (except Spinach & Avocado) at 400 degrees for 20 minutes
    2. Spread Hummus onto one side of Wrap and layer with Veggies, Avocado & Spinach, season with Salt & Lemon Pepper
    3. Roll into a "burrito" & enjoy!

    Hoff Thoughts: Crisp these up by placing in a 450 degree oven for 14 minutes.

    Yields: 3 sandwiches

    Ingredients:

    • Sourdough Bread
    • 14 oz. Extra Firm Tofu
    • Shredded Lettuce
    • Tomato (sliced)
    • Red Onion (sliced)
    • Avocado (sliced)
    • Hummus
    • Mustard
    Marinade Ingredients:
    • 1 tbsp Braggs
    • 1 tbsp Maple Syrup
    • 1 tsp Liquid Smoke
    • 1 tsp Smoke Paprika
    • 1/2 tsp Onion Powder

    Directions:
    1. Cut Tofu into 8 equal slices
    2. Mix marinade ingredients together in a shallow dish
    3. Place sliced Tofu into marinade, let sit minimum 1 hour, best is left overnight
    4. Air-fry Tofu at 375 degrees for 15 minutes
    5. Toast Bread
    6. Assemble sandwich, enjoy!

    Hoff Thoughts: Don’t press the Tofu, it causes the Tofu to be more prone the breaking apart when handling.

    Ingredients:

    Carmalized Onions & Mushrooms
    • 1 Sweet Onion (half moon slices)
    • 1 carton Mushrooms (sliced)
    • 1 tsp Sugar
    • 1 tsp Salt
    Potatoes
    • 2 Baking Potatoes
    Pick One:

    Sour Cream
    • 1/2 cup Cashews
    • 1/4 cup Water
    • 1 tbsp Lemon Juice
    • 1 tbsp Roasted Garlic Rice Vinegar
    • 1/4 tsp Salt
    Ranch Dressing
    • 1/2 cup Cashews
    • 1/4 cup Water
    • 1 tbsp Lemon Juice
    • 1/4 tsp Onion Powder
    • 1/4 tsp Garlic Powder
    • 1/4 tsp Dill (mix-in)
    • 1/4 tsp Salt

    Directions:

    Carmalized Onions & Mushrooms
    1. Turn on Saute setting, to heat up IP
    2. Add Onions, Mushrooms, Sugar & Salt; mix together
    3. Saute until Onions & Mushrooms release their water 
    4. Turn off Saute setting
    5. Lock lid in place and make sure pressure release valve is closed
    6. Press "Manual" button & reduce time to 20 minutes
    7. When done, use quick release 
    8. If too much water is left, turn on Saute setting until desired amount is left
    Potatoes
    1. Meanwhile, poke each Potato with holes & microwave for 5 minutes
    2. Cut each Potato open & air fry at 400 degrees for 15 minutes
    Sour Cream
    1. Meanwhile dump all Sour Cream ingredients into a high speed blender, blend until smooth
    2. Once all components are done assemble Potatoes & enjoy
    Ranch Dressing
    1. Meanwhile dump all Ranch Dressing (hold Dill) ingredients into a high speed blender, blend until smooth
    2. Mix-in Dill
    Meal
    1. Once all components are done, assemble Potatoes with desired toppings & enjoy

    Hoff Thoughts: Want to prep in advance? Slice Onions & Mushrooms a few days before use. Microwave Potatoes & store in refrigerator until meal time. Sour Cream or Ranch Dressing can also be made at the same time & stored in the refrigerator for up to two weeks.

    Ingredients:
    • 4 Wraps or Tortillas
    • 1 cup Water
    • 1 cup Jasmine Rice
    • 15 oz can Pinto Beans (rinsed & drained)
    • 15 oz can Petite Diced Tomatoes
    • 1/2 cup organic Corn
    • 1/2 cup Onion (diced)
    • Juice from 1 Lime
    • 2 tbsp Taco Seasoning
    Add-in Ideas:
    • Shredded Lettuce
    • Avocado or Guacamole
    • Crushed Tortilla Chips
    • Black Olives (sliced)
    • Salsa or Taco Sauce

    Directions:
    1. Mix everything together in the IP
    2. Close & lock lid
    3. Set Pressure Valve to Sealing
    4. Select Manual setting & reduce timer to 3 minutes
    5. Quick Release
    6. Fluff Rice with a fork 
    7. Add Lime Juice and stir to combine
    8. Assemble Burritos

    Ingredients:

    • 6 Deli Rolls
    • 6 Romaine Lettuce Shells
    • 1 English Cucumber (chopped)
    • Tomato (chopped)
    • Hummus
    • Vegan Cheese
    • Red Onion 
    • Relish
    • Black Olives Slices
    • Mustard

     Directions:
    1. Hollow out bread from inside Roll, discard
    2. Lightly toast for 3 minutes
    3. Spread Hummus on one side of Bread
    4. Break Cheese slice in half, place on bottom of Roll or sprinkle shredded Cheese in hollowed out top piece
    5. Apply Mustard
    6. Add Romaine shell
    7. Pile on remaining ingredients inside a Romaine shell, helps to keep ingredients from falling out as you eat
    8. Using a knife push ingredients into Hoagie, just like Subway does it

    Yields: 2 1/2 cups

    Ingredients:

    • 2 cups Old Fashioned Oatmeal
    • 1/2 cup Craisins
    • 1/4 Tahini
    • 1/4 cup Brown Sugar
    • 1/4 cup chopped Walnuts
    • 2 tbsp Maple Syrup
    • 2 tsp Pumpkin Spice
    • 1/4 tsp Salt

    Directions:
    1. Preheat oven to 300 degrees
    2. In a large mixing bowl, mix Oats, Brown Sugar & Seasonings together
    3. Add remaining ingredients (except Craisins, mix to combine
    4. On a parchment lined baking sheet, spread out Granola
    5. Bake for 15 minutes, stir, bake another 5 minutes
    6. Mix in Craisins
    7. Allow to cool before transferring to storage container

    Hoff Thoughts: Store in air tight container up to three  weeks. I like to enjoy this over yogurt.

    Yields: 6-8 open-faced sandwiches 
    meat-free, dairy-free, egg-free, soy-free, gluten-free



    Ingredients:

    • 1 15 oz. can Chickpeas (rinsed & drained)
    • 3 tbsp. Red Onion (chopped) 
    • 3 tbsp. Vegan Mayo
    • 2 tbsp. Craisins
    • 2 tbsp. Pistachios
    • 2 tbsp. Lemon Juice
    • 2 tbsp. Pickle Relish
    • 1 tbsp. Chicken Broth Powder
    • Salt & Pepper to taste

    Directions:
    1. Using a high speed blender, pulse Chickpeas, Pistachios & Craisins until ground
    2. Transfer to a medium bowl & mix in remaining ingredients
    3. Serve chilled just as you would chicken salad

    Hoff’s Thought: If doubling this recipe, pulse the Chickpeas, Pistachios & Craisins in a food processor.

    Yields: 10 cups

    Ingredients:
    • 3 cups Veggie Broth
    • 1 1/2 cup Basmati Rice
    • 1 cup Brown Lentils
    • 1 Zucchini (shredded)
    • 1 Carrot (shredded)
    • 1 15 oz. can Kidney Beans (drained)
    • 1 15 oz. can Chickpeas (drained)
    • 1 15 oz. can diced Potatoes (rinsed & drained)
    • 1 medium Sweet Onion (chopped)
    • 1 tsp Sugar
    • 1 tsp Salt
    • 1 clove Garlic (minced)
    • 1 tbsp Lemon Juice (reserved)
    • 1 tbsp Cumin
    • 1 tbsp Coriander
    • Season with Salt to taste
    • Tahini

    Directions:
    1. Turn on Saute setting, to heat up IP
    2. Add Onions, Sugar & Salt; mix together
    3. Saute until Onions release their water 
    4. Turn off Saute setting
    5. Lock lid in place and make sure pressure release valve is closed
    6. Press "Manual" button & reduce time to 20 minutes
    7. When done, use quick release
    8. Combine rest of ingredients in the IP, except Lemon Juice
    9. Lock lid in place and make sure pressure release valve is closed
    10. Press "Manual" button
    11. Decrease cooking time to 10 minutes 
    12. When done, Quick release
    13. Add Lemon Juice
    14. Finish with Tahini
    15. Serve & enjoy!

    Super Easy Basic DIY Thick Yogurt (IP)

    Yields: 32oz

    Ingredients:


    Directions (Instant Pot):
    1. Pour Milk into 32oz/Quart wide mouth mason jar, leave some room at top; a little Milk will be left over
    2. Add Yogurt starter of choice & whisk or apply lid & shake to combine
    3. Place mason jar directly into Instant Pot (remove lid if used)
    4. Cover with Instant Pot lid
    5. Select Yogurt setting & change time to 18 hours
    6. Let Yogurt cool on counter until room temperature, apply lid, transfer to refrigerator
    7. Serve Yogurt with jam, fruit, nuts, etc. or use as a base to a sauce/dressing

    Hoff Thoughts: 
    • Sterilize mason jar using microwave: wash jar, leave wet & a little water in the jar, microwave 1-2 minutes (until water boils)
    • Timing: Start IP by 4:00pm to finish by 10:00am next day
    • Your IP will never come up to pressure, the timer will start at zero & go up until the time set; that’s how you know it’s working
