DIY “Just Egg” II


Yields: 2 1/2 cups

meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free


Ingredients:
  • 1 cup dried Split Mung Beans/Flour
  • 1 1/3 cup Water
  • 2 tbsp. Nutritional Yeast
  • 1 tsp. Hoff’s Seasoning
  • 1 tsp. dried Onion Flake
  • 1/2 tsp. Turmeric
  • 1/2 tsp. Black Salt
  • Black Salt to taste

Directions:
  1. Using a high speed blender, blend Beans into Flour or just start with Mung Bean Flour
  2. Add rest of ingredients 
  3. Blend for 30 seconds or until smooth & well combined
  4. To make an “omelette” pour into silicon baking pan
  5. Bake at 400 degrees for 10 minutes
  6. Remove & cut into desired pieces
  7. Season finished product with Black Salt

 Hoff's African Stew



Yields: 4 servings
meat-free, dairy-free, egg-free, oil-free, soy-free


Ingredients:
  • 4 cups Veggie Broth
  • 1 bag chopped Kale/Spinach
  • 2 bags frozen Sweet Potatoes
  • 1 can Chickpeas (rinsed & drained)
  • 1 can Tomato Sauce
  • 1 can diced Tomatoes (seasoned)
  • 1 tbsp. Tomato Paste
  • 1 small - medium Sweet Onion (chopped)
  • 3 tbsp. Almond Butter Powder
  • 2 tsp. minced Garlic
  • 1 tbsp. Nutritional Yeast
  • 1 tsp. crushed Red Pepper
  • 1 tsp. minced Ginger
  • 1 tsp. Cumin
  • 1 tsp. Cinnamon 
  • 1 tsp. fine Sea Salt

Directions:
  1. Dump everything into a large stock pot, bring to a boil
  2. Cook till desired consistency achieved, minimum 10 minutes
  3. Serve over Rice or other grain if desired

KISS: Potatoes w/Cheesy Cauliflower

  KISS: Keep It Super Simple! 

I know there is typically another "S" to that saying, but we don't need that negativity in our lives.

This is a brand new series in which I share super simple meal ideas; because we vegans tend to get so buried in complex recipes that we forget that a meal can simply consist of a starch/grain and a veggie and be perfectly satisfying.

I pair each of these meals with a simple side salad and that's it! As a recovering bulk meal creator, I was quite skeptical that these meals would be filling enough, but just try it, you'll be amazed.

Ingredients:

I like to steam-prep my Potatoes using the InstantPot for 1-2 minutes at the beginning of the week and then storing in the fridge for latter in the week. 

I slice the Potatoes in half & finish cooking in the Airfryer at 400 degrees for 20 minutes. Serve with Hummus.

Meanwhile lightly steam Cauliflower in the microwave for 2-10 minutes, timing depends on the size, until tender. Finish by roasting in the oven at 400 degrees for 20-25 minutes.   Add about an inch of Water to the baking dish prior to steaming.

Make the Cheese Sauce.

That's it! Plate & eat!

Servings: 6
meat-free, dairy-free, egg-free, oil-free, gluten-free, soy-free

Ingredients:
  • 1 serving Hoff Vegan Cheese Sauce
  • 16 oz. GF Pasta
  • 4 cups Water 
  • 1 packet Taco Seasoning
  • 1 Red Pepper (chopped)
  • 1 can Black Beans (rinsed & drained)
  • 1 can Black Olives (sliced)
  • 1/2 Sweet Onion (chopped)

Directions:
  1. Pre-heat oven to 400 degrees
  2. In a medium glass baking dish, stir all ingredients together
  3. Cover & bake 45 minutes

Ingredients:
  • 1 cup Rolled Oats
  • 1/2 ripe Banana
  • 1/2 cup Cauliflower Rice
  • 1 cup Water
  • 1/2 cup frozen Blueberries (hold)
  • 2 tbsp. Maple Syrup
  • 1 tbsp. Cacao Powder
  • 1 tbsp. Flax Seed
  • 1 tsp. Baking Powder
  • 1/2 tsp. Salt

Directions:
  1. Using a high speed blender, blend all ingredients (hold Blueberries)
  2. Pour into microwave-safe bowl
  3. Stir in Blueberries
  4. Microwave for 4 minutes
