Hoff's Mushroom Asparagus Frittata

Hoff's Mushroom Asparagus Frittata
Servings: 6-8
meat-free, dairy-free, egg-free, oil-free, gluten-free

Ingredients:
  • 2 cups Chickpea Flour
  • 1 1/2 cups Water
  • 1 carton sliced Mushrooms (chopped)
  • 1 bunch Asparagus (chopped)
  • 1 medium Sweet Onion (half moon slices)
  • 1/3 cup Nutritional Yeast
  • 1 tsp. Italian Seasoning
  • 1 tsp. Baking Powder
  • 1 tsp. Black Salt
Directions:
  1. Preheat oven to 400 degrees
  2. Sauté or Air Fry Mushrooms, Asparagus & Onions until browned
  3. Meanwhile in a high speed blender on low,  combine Flour, Nutritional Yeast, Baking Powder, Italian Seasoning & Salt
  4. Add Water & blend on high until combined 
  5. Pour mixture into glass 9" pie dish and add Veggies
  6. Bake for 25-30 minutes or until firm and browned

Hoff’s Sweet & Sour Sauce

Hoff’s Sweat & Sour Sauce
Yields: 2 cups
dairy-free, egg-free, oil-free, gluten-free

Ingredients:
  • 1 cup Water
  • 1/3 cup Coconut Sugar
  • 1/4 cup Braggs Amino Acids
  • 1/4 cup Ketchup
  • 2 tbsp. GF All-Purpose Flour
  • 1 tbsp. Mustard
  • 1 tbsp. Honey
  • Juice from 1/2 Lemon
Directions:
  1. In a medium sauce pan whisk all ingredients together over medium- high heat, until boiling and sauce thickens
  2. Serve over veggies, rice, etc.

Raw Lemon Tea

Raw Lemon Tea
Serves: Just You
meat-free, dairy-free, egg-free, oil-free, soy-free


Ingredients:

  • 32 oz. Water
  • 1 Lemon (peeled & seeded)
  • 1 spoonful Honey

Directions:
    1. Using a Vitamix, blend all ingredients 3-4 minutes
    2. Drink immediately


    Hoff Thoughts: When eating raw, food should not exceed 118 degrees.  A Vitamix should raise the temperature of food 10 degrees every minute it is run. However, my Vitamix runs hot; it's a good practice to use a meat thermometer to test the temperature based on how long you run your machine.  Three minutes for me = 115 degrees.

    Hoff's Perfect Pancakes

    Hoff's Perfect Pancakes
    Yields: 12 Pancakes
    dairy-free, egg-free, oil-free, soy-free, gluten-free

    Ingredients:

    • 2 cups Rolled Oats
    • 1/2 cup - 3/4 cup Water
    • 1/2 cup Apple Sauce
    • 2 tbsp. Coconut Sugar
    • 1 tbsp. Baking Powder
    • Pinch Sea Salt

    Directions:
    1. Blend dry ingredients in a high speed blender, like a Vitamix, until smooth
    2. Using a fork, mix in wet ingredients, do not over mix
    3. Start with 1/2 cup of Water & gradually add more as needed
    4. Let sit for five minutes for batter to thicken
    5. Cook like any other Pancake, but on a non-stick pan, using no oil

    Hoff’s Raw Tomato Soup
    Serves: 2
    meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free

    Ingredients:
    • 4-6 Roma Tomatoes or 1 container of Grape Tomatoes
    • 1/2 Red Pepper
    • 3 cups Water
    • 3-4 fresh Basil Leaves
    • 1 tbsp. Sun-dried Tomatoes
    • 1 tsp. Smoked Paprika
    • 1 tsp. Onion Powder
    • 1 tsp. Garlic Powder
    • 1 tsp. Sea Salt

    Directions:
    1. Place all ingredients in a Vitamix & blend on high for 3-4 minutes
    2. Serve immediately
