Hoff's Perfect Pancakes

Hoff's Perfect Pancakes
Yields: 10ish Pancakes
dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients:

  • 2 cups Rolled Oats
  • 1 cup Plant Milk
  • 1 cup Water
  • 1 cup Blueberries (frozen/fresh)
  • 2 tbsp. Coconut Sugar
  • 1 tbsp. Apple Cider Vinegar
  • 5 tsp. Baking Powder
  • Pinch Sea Salt

Directions:
  1. Throw all ingredients (except Blueberries) in a high speed blender, like a Vitamix
  2. Blend until smooth, about 30 seconds
  3. Stir in Blueberries
  4. Let sit for a few minutes for batter to thicken
  5. Cook like any other Pancake, but on a non-stick pan, using no oil
