DIY “Just Egg”

DIY “Just Egg”

Yields: 2 1/2 cups

meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free


Ingredients:
  • 1 cup dried Split Mung Beans (soaked overnight)
  • 1/2 cup unsweetened Plant-Milk
  • 1/2 cup Chickpea Liquid
  • 2 tbsp. Nutritional Yeast
  • 2 tsp. Hoff’s Seasoning
  • 1 tsp. Baking Powder
  • 1/2 tsp. Black Salt
  • Black Salt to taste

Directions:
  1. Soak Beans in Water overnight
  2. Drain & rinse Beans, add to high-speed with the rest of ingredients 
  3. Blend for 30 seconds or until smooth & well combined
  4. To make scrambled eggs, spread mixture thinly and cook for about 20-30 seconds or until the mixture starts to bubble
  5. Scramble and break apart mixture until desired consistency is achieved
  6. Season finished product with Black Salt
Hoff’s Thoughts: Don’t expect this to be an exact dup for Just Egg. It’s more doughy.

Hoff's GF Lasagna



Hoff's GF Lasagna
Yields: About 8 large servings
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free


Ingredients:
  • 1 box GF Lasagna Noodles
  • 1 jar Spaghetti Sauce (Prego Light)
  • 1 15 oz. can of Tomato Sauce
  • 1 package Tofu
  • 15 oz. can Black Beans
  • 1/2 cup Nutritional Yeast
  • Juice from 1/2 Lemon 
  • 2-3 cloves of Garlic
  • 2 tbsp. Italian Herbs
  • 1/2 tsp. Sea Salt

Directions:
  1. Preheat oven to 350 degrees
  2. Soak Noodles in hot water for 10 minutes 
  3. Meanwhile, blend Tofu, Black Beans, Nutritional Yeast, Lemon Juice, Garlic, Italian Herbs & Salt until creamy
  4. In a 9x13 baking dish, create the following layers
  5. First Layer: coat bottom of dish with Spaghetti Sauce, 1 layer of Noodles & Tofu mixture 
  6. Second Layer: 1 layer of Noodles, Spaghetti Sauce & Cauliflower Rice
  7. Third Layer: 1 layer of Noodles, top with can of Tomato Sauce
  8. Cover & bake for 1 hour
  9. Rest for 10 minutes before cutting

Hoff’s Seasoning Mix

Hoff’s Seasoning Mix

Yields: about 16oz. “ish”
dairy-free, egg-free, oil-free, gluten-free

Ingredients:

  • 1 container Onion Powder
  • 1 container Garlic Powder
  • 1 container Paprika
  • 1 tbsp. Turmeric
  • 1 tbsp. Kelp Granules
Directions:
  1. Dump everything into a 16oz. mason jar or something similar
  2. Apply lid & shake to combine
Hoff Thoughts: These are my three holy grail seasonings, that I use in almost all of my cooking; with Turmeric & Kelp for added health benefits. Now instead of pulling all these seasonings out every time, I just grab the one jar. It’s the little things that bring joy. What your signature seasoning mix?

Hoff's Pad Thai III

Hoff's Pad Thai III

Yields: a lot
meat-free, dairy-free, egg-free, oil-free, gluten-free 

Ingredients:

  • 14 oz. pack Rice Noodles
  • 7 cups Water
  • 12 oz. bag Asian Chopped Salad Mix
  • 1 Zucchini (shredded)
  • 1/2 cup Shelled Organic Edamame
  • 8 oz. carton Mushrooms (shredded)
  • 1/2 cup Organic Corn
  • 1 Carrot (shredded)
  • 1/2 cup Onion (chopped)
  • 1/2 cup Braggs
  • 3 tbsp. Brown Sugar
  • 2 tbsp. Almond Powder
  • 1 tbsp. Tamarind Paste
  • 1 tbsp. powder Ginger
  • 1 tbsp. minced Garlic
  • Juice from 1 Lime


Directions:

  1. Add all ingredients (except Noodles) to a large pot, bring to a boil, add Noodles
  2. Cook for 6 minutes or until Noodles are desired texture
  3. Sauce will thicken as dish sits
  4. Enjoy!

Hoff's Quinoa Nachos II

Hoff's Quinoa Nachos II

Yields: 2 hearty entrees
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free 

Ingredients:

Nacho "Meat" 
  • 1 cup Quinoa
  • 1 1/2 cups Veggie Broth
  • 1 tsp. Taco Seasoning
  • 1 tsp. Cumin
  • 1 tsp. smoked Paprika 
  • 1/2 tsp. Garlic Powder
  • 1/2 tsp. Salt
Cheese Sauce: 
  • 1/3 cup Instant Mashed Potatoes
  • 1/3 cup Nutritional Yeast
  • 1 cup Water
  • Juice from 1 Lemon
  • 1 tsp. smoked Paprika 
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder
  • 1 tsp. Sea Salt 
Nachos:
  • Organic Corn Chips
  • 1 Avocado (chopped/optional)
  • 3 tbsp. diced Onion
  • 1 15 oz. can Black Beans
  • 1 2.25 oz. can sliced Black Olives (rinsed & drained)

Directions:
  1. Pre-heat oven to 400 degrees
  2. Prepare Quinoa per the box directions, adding the rest of the ingredients, I prefer using the Instant Pot - throw all the ingredients in the IP, seal & lock lid, set Manual timer for 4 minutes, allow to Natural release for 10 minutes, then Quick release
  3. Meanwhile put Cheese Sauce ingredients into Vitamix & blend on high for 6 minutes
  4. Separately, heat up Black Beans, using a hand blender to create desired texture
  5. When the Quinoa, Cheese & Beans are done, assemble your Nachos anyway you see fit
  6. Bake in oven for 5 minutes
