Chocolate Chip Cookie Pie

Chocolate Chip Cookie Pie
Yields: 1 Pie
dairy-free, gluten-free, oil-free, soy-free, gluten-free


Ingredients:
  • 1 15oz. can Chickpeas (with liquid)
  • 2/3 cup King Arthur Gluten-free Flour
  • 1/3 cup Almond Butter
  • 1/4 cup Maple Syrup
  • 2 tbsp. Almond Milk
  • 1 tsp. Vanilla Extract
  • 1 tsp. Baking Powder
  • 1 tsp. Sea Salt
  • 1/2 cup Vegan Chocolate Chips

Directions:
  1. Preheat oven to 350 degrees
  2. Blend all ingredients in a high speed blender, except Chocolate Chips
  3. Once blended, turn to low, add Chocolate Chips and blend a few seconds to incorporate 
  4. Pour batter into glass/silicone pie dish
  5. Bake for 25 minutes or until pie is set and lightly browned

Hoff's Personal Portabella Pizza

Hoff's Portabella Pizza
Serves: 2
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free


Ingredients:
  • 4 large Portabellas
  • 1/2 cup Pizza/Spaghetti/Marinara Sauce
  • 1/3 cup Black Olives (rinsed & drained)
  • 1/3 cup Onion (chopped)
  • 1/3 cup Red Pepper (chopped)
  • Nutritional Yeast
  • Vegan Cheese (optional)

Directions:
  1. Preheat oven to 450 degrees
  2. Remove stem & gills from Portabellas
  3. Spoon Sauce into cleaned-out Portabella
  4. Sprinkle Nutritional Yeast over Sauce
  5. Divide remaining ingredients among each Portabella
  6. Place "Pizza" on baking sheet
  7. Cook for 15 minutes
  8. Let rest for 15 minutes
  9. Cut in half & serve

Hoff Thoughts: I use frozen Onions & Peppers for this, much easier than chopping & dealing with the leftovers.

Hoff's Cauliflower Alfredo

Hoff's Cauliflower Alfredo
Yields: 5-6 servings
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free


Ingredients:
  • 12 oz. Gluten-free Pasta
  • 12 oz. frozen Cauliflower (thawed or steamed)
  • 1 1/2 cups unsweetened plain Plant-Milk
  • Juice from 1/2 Lemon
  • 3 tbsp. Old Fashioned Oats
  • 2 tbsp. Nutritional Yeast
  • 2 tsp. minced Garlic
  • 1 tsp. Miso (optional)
  • 2 tsp. Sea Salt
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder
  • Pinch of Nutmeg
  • Pepper (to taste)

Directions:
  1. Cook Pasta according to directions
  2. If Cauliflower is not thawed beforehand, steam in microwave for 4 minutes
  3. Place Cauliflower, Milk, Lemon Juice, Oats, Yeast, Garlic, Miso & Seasonings into a high speed blender
  4. Blend for 6 minutes
  5. Combine Pasta with Sauce


Doc: May I Be Frank?

This doc started out on a good note...Frank Ferrante wonders into San Francisco, Café Gratitude, a raw, organic and vegan café.  After befriending some of the staff and confiding that he is a drug addict, is morbidly obese, is pre-diabetic, and is fighting Hepatitis C the boys decide to take Frank under their wing for 42 days and coach him physically, emotionally and spiritually.  Frank goes on to eat only raw food, practices gratitude, visits local holistic practitioners, and gets a weekly colonic.

That all sounded great, but the doc failed to deliver on any inspirational level and it wasn't even clear if Frank gained anything from his experience as he ended up with a drug overdose sometime after.  In fact, towards the middle, the doc took a very dark tone and never quite recovered.

Frankly, I wouldn't recommend this film to anyone.

Hoff's Chana Masala (IP)

Hoff's Chana Masala (IP)
Servings: 4
meat-free, dairy-free, egg-free, oil-free, gluten-free, soy-free



Ingredients:
  • 2 cups Water
  • 2 cups Jasmine Rice
  • 2 15 oz. cans Chickpeas (rinsed & drained)
  • 15 oz. can Fire Roasted Tomatoes
  • 1 Roasted Red Pepper (jarred)
  • 5 oz. frozen chopped Onions (half a bag)
  • 1 tsp. minced Garlic
  • 1 tsp. frozen Ginger
  • 1 tsp. Garam Masala
  • 1 tsp. Turmeric
  • 1 tsp. Cumin
  • 1 tsp. Smoked Paprika
  • 1 tsp. Sea Salt

Directions:
  1. Place Rice & 2 cups Water in IP
  2. Lock lid in place and make sure pressure release valve is closed
  3. Press "Manual" button
  4. Decrease cooking time to 3 minutes
  5. When done, use Natural Release method for 5 minutes, then Quick Release
  6. Remove Rice
  7. Meanwhile, using a high speed blender, blend Tomatoes, Red Pepper, Onions & Seasoning
  8. Place mixture & Chickpeas into the IP
  9. Lock lid in place and make sure pressure release valve is closed
  10. Press "Manual" button
  11. Decrease cooking time to 5 minutes
  12. Use Quick Release method
  13. Plate by topping Rice with Sauce

Hoff Thoughts: This recipe is just one reason why I have two Instant Pots.  I find myself cooking with both IP's at the same time for several meals.
