Hoff’s Rice & Lentils II

Hoff’s Rice & Lentils II
Yields: 4 servings
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free


Ingredients:
  • 2 cups Water
  • 1 cup Rice Blend
  • 1 cup Brown Lentils
  • 1/3 cup shredded Carrots
  • 1/3 cup Spinach
  • 1/3 cup chopped Red/Orange Pepper
  • 1/3 Sweet Onion (chopped)
  • 1 tsp. minced Garlic
  • 2 tsp. Chicken Broth Base

Directions:
  1. Stir all ingredients together in IP
  2. Lock lid in place and make sure pressure release valve is closed
  3. Press "Manual" button
  4. Decrease cooking time to 10 minutes
  5. When done, use natural release method for at least 10 minutes
  6. Stir & dig in!

 Hoff Thoughts: Serve with steamed veggies like Cauliflower or Broccoli.

Hoff's Waffles

Yields: 8 waffles
dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients:

  • 2 cups Rolled Oats
  • 2 cups Water
  • 1/2 cup Apple Sauce
  • 1 cup Water
  • 2 tsp. Cinnamon
  • 1tsp. Baking Powder
  • 1 tsp. Sea Salt

Directions:
  1. Using a high speed blender, blend Oats, Cinnamon, Baking Powder & Salt into a flour (about 30 seconds)
  2. Blend until smooth, about 30 seconds
  3. Mix-in Apple Sauce & Water, let stand for 30 minutes
  4. Add more Water if necessary to get a batter consistency
  5. Cook like any other Waffle, but using a non-stick waffle plate/mold, no oil needed

Hoff Thoughts: I prefer to use my Cuisinart Griddler - they now sell waffle plates (just make sure to order the right size for your Griddler model) But I have also used silicon waffle molds, baking in the oven.

Hoff's Plant-based Sour Cream

Hoff's Plant-based Sour Cream

Yields: about 1 cup
dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients:
  • 1 cup frozen Cauliflower (steamed)
  • 1/2 cup unsweetened plain Almond Milk
  • Juice from 1/2 Lemon
  • 1 tsp. Apple Cider Vinegar
  • 1 tsp. Sea Salt
Directions:
  1. Using a high speed blender, blend ingredients until smooth
  2. Place in airtight container in fridge up to 1 week

*Vegan Hamburger Helper

Recipe modified from Well Your World*

*Vegan Hamburger Helper Yields: 3-4 servings
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients: 

  • 2 cups dry GF Pasta
  • 15 oz. can diced Tomatoes
  • 1 cup TVP Crumbles
  • 1 cup Hot Water
  • 1 cup unsweetened plain Soy Milk
  •  4 tbsp. Tomato Paste
  • 1/3 cup Nutritional Yeast
  • 1 tbsp. Garlic Powder
  • 2 tsp. Onion Powder
  • 1 tsp. Oregano
  • 1 tsp. Smoked Paprika
  • 1 tsp. Mustard
  • 1/2 tsp. Chili Powder

Directions:
  1. Cook Pasta according to package directions
  2. Meanwhile in another medium-sized pot, over medium-high heat, add & stir remaining ingredients
  3. Bring to a low boil for a few minutes
  4. Reduce to a simmer and allow TVP to re-hydrate until Pasta is cooked
  5. Drain Pasta & stir into "Hamburger Helper" sauce
  6. Enjoy the nostalgia!

Hoff’s Throw Together Soup (IP)

Serves: 4-6
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free 

 Ingredients:

  • 4 cups Veggie Broth
  • 16 oz. bag frozen Cauliflower
  • 15 oz can Beans (rinsed & drained)
  • 15 oz can diced Potatoes
  • 1 carton Hungry Jack's Premium Hashbrown Potatoes (re-hydrated)
  • 1 tsp. Smoked Paprika 
  • 1 tsp. Onion Powder
  • 1 tsp. Garlic Powder
  • 1 tsp. Sea Salt

Directions:
  1. Place all ingredients (except Hashbrowns) in Instant Pot
  2. Close & lock lid
  3. Set Pressure Valve to Sealing
  4. Select Manual setting on High Pressure & cook for 6 minutes
  5. Quick release pressure
  6. Using an immersion blender blend soup until smooth
  7. Stir in Hashbrowns & serve with some nice crusty bread
