Simple "Healthier" Cookies

Simple "Healthier" Cookies
Yields: 12 Cookies
dairy-free, egg-free, oil-free, soy-free, gluten-free
 

Ingredients:
  • 2 cups Old Fashioned Oats
  • 1/2 cup Apple Sauce
  • 1/2 cup Maple Syrup
  • 1/3 cup Vegan Chocolate Chips
  • 1/3 cup Raisins/Cranberries
  • 1 tsp Baking Powder
  • 1 tsp Sea Salt

Directions:
  1. Blend Oats, Baking Powder & Salt in a high speed blender until finely ground
  2. Pour dry ingredients to a mixing container and using a fork, stir in Maple Syrup, Apple Sauce, Chocolate Chips & Raisins/Cranberries
  3. Scoop batter onto parchment lined cookie sheets or silicon mat
  4. Bake at 350 degrees for 15 minutes
  5. Remove from cookie sheet and allow to cool

 Hoff Thoughts: Use Almond Flour instead, for a more decadent, but higher fat, cookie.

Hoff's Raw Winter Squash Soup

Hoff's Raw Winter Squash Soup
Serves: 2
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients:

  • 2 cups Squash (peeled & cubed)
  • 2 1/2 cups Water
  • 1 tbsp. Sun-dried Tomatoes
  • 1 tsp.Cumin
  • 1 tsp. Sea Salt
  • 1/2 tsp. Smoked Paprika
  • 1/2 tsp. Onion Powder
  • 1/4 tsp. Garlic Powder

Directions:
  1. Place all ingredients in a Vitamix & blend until heated
  2. Serve immediately

Hoff Thoughts: When eating raw, food should not exceed 118 degrees.  A Vitamix should raise the temperature of food 10 degrees every minute it is run. However, my Vitamix runs hotter; it's a good practice to use a meat thermometer to test how hot this sauce gets based on how long you run your machine.  Three minutes for me = 115 degrees.

Hoff's Raw "Cheese" Sauce

Hoff's Raw "Cheese" Sauce
Yields: About 3 Cups
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients:
  • 2 cups Cauliflower Rice
  • 1/2 Red Pepper
  • 1 cup Water
  • Juice from 1/2 Lemon 
  • 1/4 cup Nutritional Yeast
  • 2 tbsp. Hemp Seed
  • 1 tsp. Smoked Paprika
  • 1 tsp. Onion Powder
  • 1 tsp. Garlic Powder
  • 1 tsp. Sea Salt

Directions:
  1. Using a Vitamix, blend all ingredients together 3-4 minutes to heat through
  2. Serve over pasta, veggies, nachos, etc.

    Hoff's Jackfruit Paprikash Over Rice

    Hoff's Jackfruit Paprikash Over Rice
    Servings: 6-8
    meat-free, dairy-free, egg-free, soy-free, oil-free, gluten-free

    Ingredients:
    • 3 cups prepared Rice
    • 2 cups Veggie Broth
    • 2 20 oz. cans Jackfruit (rinsed & drained)
    • 1 15 oz. can Tomato Sauce
    • 1 medium Sweet Onion (chopped)
    • 2 tbsp. minced Garlic
    • 3 tbsp. GF All-purpose Flour
    • 2 tbsp. Smoked Paprika
    • 1 tsp. Sea Salt
    • Pepper to taste
    'Sour Cream"
    • 1/2 cup Water
    • 1/2 cup Cashews
    • 1/2 Lemon
    Instant Pot Directions:
    1. Blend "Sour Cream" ingredients in a Vitamix or high power blender - set aside
    2. Using your fingers or two forks, break apart Jackfruit until it resembles shredded “Chicken”; removing any hard pieces
    3. Dump Jackfruit & all remaining main ingredients (except Flour) into the Instant Pot
    4. Lock lid in place and make sure pressure release valve is closed
    5. Press "Manual" button and adjust cooking time to 4 minutes at high pressure
    6. Natural Release for 10 minutes
    7. Stir in Flour & Sour Cream
    8. Serve over Rice

    Stove Top Directions:
    1. Blend "Sour Cream" ingredients in a Vitamix or high power blender - set aside
    2. Using your fingers or two forks, break apart Jackfruit until it resembles shredded “Chicken”; removing any hard pieces
    3. In a large stock pot on medium-high heat, sautee Onion, adding Garlic for 30 seconds to prevent burning
    4. Add Veggie Broth, Jackfruit, Tomato Sauce & Seasonings to Onions & Garlic
    5. Bring to a boil, reduce to low heat
    6. Stir in Flour
    7. Cook on low & covered for 10 minutes
    8. Stir in Sour Cream
    9. Serve over Rice
