Hoff's Macaroni Salad

 Hoff's Macaroni Salad

Yields: 5 servings
meat-free, dairy-free, egg-free, oil-free, gluten-free, soy-free


















Ingredients:
  • 12 oz. gluten-free Macaroni Pasta
  • 1 Red Pepper (diced)
  • 1 Red Onion (diced) 
  • 1/4 cup Sweet Pickle Relish
  • 3 tbsp. Dill (fresh or dried)
  • 1 1/2 cups vegan Mayo
  • 2 tbsp. Sweet Pickle Relish juice
  • 1 tbsp. Lemon Juice
  • 1 tbsp. White Sugar
  • 1 tbsp. Yellow Mustard
  • 1 tsp. Garlic Powder
  • 1 tsp. Salt
  • Season w/Pepper


Directions:
  1. Cook Pasta, run cold water over Pasta to stop the cooking process, drain well
  2. Meanwhile mix remaining ingredients together in a large bowl
  3. Mix in cooked Pasta
  4. Refrigerate at least 30 minutes to allow flavors to blend together

Hoff's Loaded Quesadillas

Hoff's Loaded Quesadillas

Yields: 7 Quesadillas x 4 = 28 pieces
meat-free, dairy-free, egg-free, gluten-free, soy-free




Ingredients:
  • 14 Soft Corn Tortillas
  • 1/2 cup Rice
  • 1 can Refried Beans
  • 1 Red Pepper (thinly sliced)
  • 1 medium Sweet Onion (halfmoon slices)
  • 1 cartoon sliced Mushrooms
  • 1 Zucchini (thinly sliced)
  • Vegan Liquid Mozzarella


Directions:
  1. Spread Pepper, Onions, Mushrooms, & Zucchini on a baking sheet, air-fry at 400 degrees for 15 minutes
  2. Preheat Cuisinart Griddler or non-stick frying pan
  3. Meanwhile heat Refried Beans
  4. Mix Rice, Pepper, Onions, Mushrooms, & Zucchini into Refried Beans
  5. Spread Refried Beans mixture onto 1 Tortilla, top with Cheese, finish with another Tortilla
  6. Brown each side of Quesadilla
  7. Cut into triangles with a pizza cutter or large knife
  8. Serve with Salsa of choice!

Hoff Thoughts: The Cheese & Refried Beans act like a glue to hold the Quesadilla together.

Vegan Liquid Mozzarella

 Vegan Liquid Mozzarella

Yields: about 1 cup, enough for 2 Pizzas
meat-free, dairy-free, egg-free, oil-free, gluten-free, soy-free

Ingredients: 
  • 1 cup Water 
  • 1/2 cup Cashews or Chickpeas
  • 1/4 Tapioca Starch or Flour (same thing)
  • 2 tbsp Nutritional Yeast
  • 1 tsp Lactic Acid or Lemon Juice
  • 1 tsp Onion Powder 
  • 1 tsp Sea Salt 
Directions: 
  1. Blend ingredients together using a Vitamix for 5 minutes (once the motor starts to drag, Cheese is ready)
  2. Immediately transfer Cheese to storage container or use, will continue to thicken as it cools (clean carafe immediately)

Hoff Thoughts: This liquid cheese works for pizza, lasagna, grilled cheese (increase Nutritional Yeast to 1/2 cup), quesadillas, Reuben’s, “meat”ball subs & mushroom cheese “steaks.”

Hoff's GF Alfredo Lasagna

Hoff's GF Alfredo Lasagna

Yields: About 8 large servings
meat-free, dairy-free, egg-free, oil-free, gluten-free




Ingredients:
  • 1 box GF Lasagna Noodles
  • 1 jar Spaghetti Sauce (Prego Light)
  • 1 15 oz. can of Tomato Sauce
  • 1 serving Healthy Hoff Alfredo Sauce
  • Baby Spinach
  • 1 Zucchini (shredded, pressed & drained)
  • 1 package Extra Firm Tofu
  • 15 oz. can Black Beans
  • 1/2 cup Nutritional Yeast
  • Juice from 1/2 Lemon 
  • 2-3 cloves of Garlic
  • 2 tbsp. Italian Herbs
  • 1/2 tsp. Sea Salt

Directions:
  1. Preheat oven to 350 degrees
  2. Meanwhile in a food processor, pulse Tofu, Black Beans, Nutritional Yeast, Lemon Juice, Garlic, Italian Herbs & Salt until it resembles Ricotta
  3. Make Alfredo Sauce
  4. In a 9x13 baking dish, create the following layers
  5. First Layer: coat bottom of dish with Spaghetti Sauce, 1 layer of Noodles & Tofu mixture, drizzled with Alfredo
  6. Second Layer: 1 layer of Noodles, Spaghetti Sauce, Zucchini & Spinach, drizzled with Alfredo
  7. Third Layer: 1 layer of Noodles, top with can of Tomato Sauce & rest of Alfredo
  8. Cover & bake for 1 hour
  9. Rest for 10 minutes before cutting

Yields: 10 Pizzas

Ingredients:
  • Corn Tortillas
  • 8 oz Oil-free Pizza Sauce
  • 1 tbsp. Italian Seasoning
  • 1/2 cup Sweet Onion (chopped)
  • 1/2 cup Mushrooms (chopped)
  • 1/2 cup Red Pepper (chopped)
  • Black Olives (sliced)

Directions:
  1. Air-fry Onions, Mushrooms & Red Pepper at 400 for 15 minutes
  2. Mix Italian Seasoning with Pizza Sauce
  3. Spread Sauce onto each Tortilla
  4. Top with Onions, Mushrooms, Red Peppers & Black Olives
  5. Air-fry at 400 for additional 5 minutes
  6. Cut in half

Hoff’s Thoughts: Make a double layer pizza by adding vegan Cheese between two Tortillas before cooking the crust for the first time.

Falafel “Bread” Ingredients: 
    • 16 oz. dried Chickpeas (soaked at least 6 hours)
    • 1/4 cup Chickpea Flour 
    • 1 bunch fresh Cilantro or Parsley
    • 1/2 Onion (corse chopped)
    • Juice of 1 Lemon
    • 1 tbsp. Flax or Chia Seed
    • 1 tbsp. minced Garlic
    • 1 tsp. Baking Powder
    • 1 tsp. Cumin 
    • 1 tsp. Onion Powder
    • 1 tsp. Garlic Powder 
    • 1 tsp. Sea Salt

    Sandwich Filling Ideas:

    • Lettuce
    • Tomato
    • Cucumber Slices
    • Kraut
    • Sliced Red Onion 
    • Pickle Slices
    • Black Olives
    • Hummus
    • Yogurt Dill Sauce
    • Mustard

    Directions:
    1. Preheat Cuisinart Griddler with waffle plates
    2. Using a Food Processor blend “Bread” ingredients
    3. Place two scoops of mixture per waffle, spread out
    4. Cook about 10 minutes until crispy 
    5. Assemble sandwich

    Servings: 4

    Sauce Ingredients:
    • 5 oz fresh Spinach
    • Fresh Mint
    • Fresh Parsley
    • Juice of 1 Lemon
    • 2 tbsp Pine Nuts/Cashews/Any Nut
    • 2 tbsp Nutritional Yeast
    • 2 tbsp Braggs 
    • 2-3 cloves of Garlic
    • 2 tbsp Water

    Pasta Ingredients:
    • 16 oz GF Pasta
    • 1 jar Artichoke Hearts (drained)
    • 1/2 cup frozen Peas
    • 1 bunch Asparagus (chopped)
    • 1 carton Mushrooms (chopped)
    • 1/2 Sweet Onion (chopped)
    Directions:
    1. Cook Pasta
    2. Meanwhile roast Artichokes, Asparagus, Mushrooms & Onions
    3. Combine all Sauce ingredients in a blender and blend until smooth (10-20 seconds)
    4. Mix everything (add Peas) together and serve

    Yields: 2 hearty entrees

    Ingredients:

    Nacho "Meat" 
    • 1/2 cup Pea Protein
    • 1 1/2 cups Water
    • 1 tsp. Taco Seasoning
    • 1 tsp. Cumin
    • 1 tsp. smoked Paprika 
    • 1/2 tsp. Garlic Powder
    • 1/2 tsp. Salt
    Cheese Sauce: 
    • 1/3 cup Instant Mashed Potatoes
    • 1/3 cup Nutritional Yeast
    • 1 cup Water
    • 1 tsp. Lactic Acid
    • 1 tsp. smoked Paprika 
    • 1 tsp. Garlic Powder
    • 1 tsp. Onion Powder
    • 1 tsp. Sea Salt 
    Nacho Base & Toppings:
    • 1 lb. bag Mini Peppers (cut in 1/2 & de-seeded)
    • 1 Avocado (chopped/optional)
    • 3 tbsp. diced Onion
    • 1 15 oz. can Black Beans
    • 1 2.25 oz. can sliced Black Olives (rinsed & drained)

    Directions:
    1. Soak Pea Protein in Water  & Seasonings for at least 5 minutes, strain water, microwave for 2 minutes 
    2. Meanwhile put Cheese Sauce ingredients into Vitamix & blend on high for 6 minutes
    3. Separately, heat up Black Beans, using a hand blender or potato masher to create desired texture
    4. When the “Meat” “Cheese” & Beans are done, assemble your Nachos anyway you see fit

    Hoff’s Sheet Pan Omelette

    Servings: 6 large portions

    meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free



    “Egg” Ingredients:
    • 1 cup dried Split Mung Beans (soaked overnight)
    • 1 cup unsweetened Plant-Milk
    • 2 tbsp. Nutritional Yeast
    • 2 tsp. Hoff’s Seasoning
    • 1 tsp. Baking Powder
    • 1/2 tsp. Black Salt
    • 1/2 tsp. Salt
    • Black Salt to taste

    Omelette Ingredients:
    • 1 carton Mushrooms (sliced)
    • 1 Red Pepper (chopped)
    • 2 oz. sliced Black Olives (drained)
    • 1/2 Onion (diced)
    • 2 tbsp Nutritional Yeast
    • 1 tbsp minced Garlic
    • 2 tsp Hoff Seasoning
    • 1 tsp Italian Seasoning

    Directions:
    1. Soak Beans in Water overnight
    2. Pre-heat oven to 400 degrees
    3. Drain & rinse Beans, add to high-speed with the rest of the “Egg” ingredients 
    4. Blend for 30 seconds or until smooth & well combined
    5. Dump Omelette ingredients out onto a large silicon baking dish, mix together, spread out evenly
    6. Pour “Egg” mixture over Omelette ingredients, spread evenly
    7. Bake for about 40 minutes
    8. Cut into large squares
    9. Season finished product with Black Salt

    Serves: 2 + leftovers

    Ingredients:

    • 16 oz Pasta of choice
    • Hoff’s Alfredo Sauce
    • 1 container Mushrooms (chopped)
    • 1 bunch Asparagus (chopped)
    • 1 container Cherry Tomatoes
    • 1 Zucchini (chopped) 
    • 1/2 cup Peas
    • 1 Red Onion (chopped)
    • 1 tsp. Basil
    • 1 tsp. Garlic Powder
    • 1 tsp. Onion Powder

    Directions:
    1. Pre-heat oven to 400 degrees 
    2. Prepare the Pasta according to package directions
    3. Meanwhile prepare the sauce
    4. Toss all Veggies with Seasonings on a parchment paper lined baking sheet
    5. Bake for 30-40 minutes
    6. Combine everything together & serve!

    Ingredients: 
    • 1/2 cup Instant Mashed Potato Flakes
    • 1/2 cup Nutritional Yeast
    • 15 oz Tomato Sauce
    • 2 tbsp. Cashew Powder (optional)
    • 1 cup Water or unsweetened Organic Soymilk
    • Juice from 1 Lemon 
    • 1 tbsp Sugar or Maple Syrup
    • 1 tsp. Hoff Seasoning
    • 1 tsp. Salt

    Directions: 
    1. Blend all ingredients together using a high speed blender, at the end, blend for a few seconds on low to remove any air bubbles
    2. Immediately transfer Sauce to storage container or use, Sauce will continue to thicken as it cools
    3. Clean blender immediately

    Yields: 4-6 servings
    meat-free, dairy-free, egg-free, oil-free, gluten-free, soy-free


    Ingredients: 

    • 24 oz Mashed Potatoes
    • 1 Gravy packet
    • 1 cup Water
    • 15 oz can Brown Lentils or 1 cup TVP (rehydrated)
    • 10 oz bag frozen organic Carrot, Peas, Corn minced
    • 1 carton Mushrooms, minced
    • 1/2 cup chopped Spinach
    • 1/2 cup chopped Sweet Onion
    • 1 tsp minced Garlic
    • 1 tsp Thyme
    • 1 tsp Rosemary
    • Season w/ Salt & Pepper


    Directions: 

    1. Preheat oven to 400 degrees
    2. In a medium Dutch oven over medium high heat, sautee Mushrooms, Onions & Garlic
    3. Add Lentils or TVP, Veggies, Gravy packet, Water & Seasonings
    4. Stir until Gravy thickens
    5. Top with Mashed Potatoes, score with fork
    6. Bake uncovered for 25 - 35 minutes

    KISS: Potatoes & Asparagus

       KISS: Keep It Super Simple! 

    I know there is typically another "S" to that saying, but we don't need that negativity in our lives.

    This is a brand new series in which I share super simple meal ideas; because we vegans tend to get so buried in complex recipes that we forget that a meal can simply consist of a starch/grain and a veggie and be perfectly satisfying.

    I pair each of these meals with a simple side salad and that's it! As a recovering bulk meal creator, I was quite skeptical that these meals would be filling enough, but just try it, you'll be amazed.

    Ingredients:

    • Baby/Bite-size Yukon Potatoes
    • Asparagus
    • Ranch Dressing
    • Salt

    While meal prepping for the week, I use my InstantPot to steam the Potatoes for 1 minute, then place in the fridge until ready to eat late in the week.  When it's dinner time, I slice in half and air-fry, along with the Asparagus at 400 degrees for 15-20 minutes.  Top Potatoes with Ranch dressing, Asparagus with Salt.

    That's it! Plate & eat!

    Ingredients:
    • 1 cup Cilantro Lime Rice
    • Portabella Mushrooms (sliced)
    • Peppers (sliced)
    • 1 Onion (sliced)
    • Salsa 
    • Juice from 1 Lime
    • 1 Taco Seasoning packet

    Directions:
    1. Slice vegetables into long stripes
    2. Marinate vegetables at least one hour in the Taco Seasoning
    3. Spread vegetables out on silicon lined baking sheet, roast for about 30 minutes
    4. Make bowl using favorite toppings

    DIY “Just Egg” II


    Yields: 2 1/2 cups

    meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free


    Ingredients:
    • 1 cup dried Split Mung Beans/Flour
    • 1 1/3 cup Water
    • 2 tbsp. Nutritional Yeast
    • 1 tsp. Hoff’s Seasoning
    • 1 tsp. dried Onion Flake
    • 1/2 tsp. Turmeric
    • 1/2 tsp. Black Salt
    • Black Salt to taste

    Directions:
    1. Using a high speed blender, blend Beans into Flour or just start with Mung Bean Flour
    2. Add rest of ingredients 
    3. Blend for 30 seconds or until smooth & well combined
    4. To make an “omelette” pour into silicon baking pan
    5. Bake at 400 degrees for 10 minutes
    6. Remove & cut into desired pieces
    7. Season finished product with Black Salt

    Yields: 4 servings

    Ingredients:
    • 4 cups Veggie Broth
    • 1 bag chopped Kale/Spinach
    • 2 bags frozen Sweet Potatoes
    • 1 can Chickpeas (rinsed & drained)
    • 1 can Tomato Sauce
    • 1 can diced Tomatoes (seasoned)
    • 1 tbsp. Tomato Paste
    • 1 small - medium Sweet Onion (chopped)
    • 3 tbsp. Almond Butter Powder
    • 2 tsp. minced Garlic
    • 1 tbsp. Nutritional Yeast
    • 1 tsp. crushed Red Pepper
    • 1 tsp. minced Ginger
    • 1 tsp. Cumin
    • 1 tsp. Cinnamon 
    • 1 tsp. fine Sea Salt

    Directions:
    1. Dump everything into a large stock pot, bring to a boil
    2. Cook till desired consistency achieved, minimum 10 minutes
    3. Serve over Rice or other grain if desired

    Ingredients:

    I like to steam-prep my Potatoes using the InstantPot for 1-2 minutes at the beginning of the week and then storing in the fridge for latter in the week. 

    I slice the Potatoes in half & finish cooking in the Airfryer at 400 degrees for 20 minutes. Serve with Hummus.

    Meanwhile lightly steam Cauliflower in the microwave for 2-10 minutes, timing depends on the size, until tender. Finish by roasting in the oven at 400 degrees for 20-25 minutes.   Add about an inch of Water to the baking dish prior to steaming.

    Make the Cheese Sauce.

    That's it! Plate & eat!

    Ingredients:
    • 1 serving Hoff Vegan Cheese Sauce
    • 16 oz. GF Pasta
    • 4 cups Water 
    • 1 packet Taco Seasoning
    • 1 Red Pepper (chopped)
    • 1 can Black Beans (rinsed & drained)
    • 1 can Black Olives (sliced)
    • 1/2 Sweet Onion (chopped)

    Directions:
    1. Pre-heat oven to 400 degrees
    2. In a medium glass baking dish, stir all ingredients together
    3. Cover & bake 45 minutes
