Hoff's Easy Quesadillas

Hoff's Easy Quesadillas
Servings: 12 Quesadillas
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free

  • 16 oz. can fat-free vegetarian Re-fried Beans
  • 24 Corn Tortillas
  • Nutritional Yeast
  1. Spread Beans onto Corn Tortilla
  2. Sprinkle with Nutritional Yeast
  3. Place another Corn Tortilla on top
  4. Heat through using a non-stick pan over medium-high heat, flipping once one side is browned
  5. Serve with Salsa

Hoff Thoughts: Personally, I use a Cuisinart Griddler for this, it's quicker and I love the little grill marks.  I also don't consumer 12 of these at a time, it's a bit much; but that's how much one can of Beans provides.  I'd say 4-6 Quesadillas per person gets the job done for one sitting and refrigerate the rest of the Beans for another meal.

    Hoff's Alfredo Sauce

    Hoff's Alfredo Sauce
    Yields: About 3 Cups
    meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free

    • 2 cups Cauliflower Rice
    • 1 cup Water/Plant-based Milk
    • Juice from 1/2 Lemon
    • 1 clove of Garlic
    • 2 tbsp. Hemp Seeds
    • 2 tbsp. GF Flour
    • 1 tsp. Onion Powder
    • 1 tsp. Sea Salt
    • Pinch of Nutmeg
    • Pepper to taste

    1. Using a Vitamix, blend all ingredients together
    2. Serve over pasta, veggies, etc. and heat through until Sauce thickens (about 3 minutes)

    Hoff's Baked Bean Soup

    Hoff's Baked Bean Soup
    Serves: 2
    meat-free, dairy-free, oil-free, soy-free

    • 4 cups Veggie Broth
    • 1 16oz. can vegetarian Baked Beans
    • 1 15oz. can diced Potatoes
    • 3 tbsp. Ketchup 
    • 1 tbsp. Vegan Worcestershire Sauce

    1. Dump all ingredients into a medium pot
    2. Heat through over medium-high heat
    3. Serve!

    Hoff's Chipotle Burrito Bowl (IP)

    Hoff's Chipotle Burrito Bowl (IP)
    Servings: 2
    meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free

    • 1 1/2 cups Water
    • 1 cup Jasmine Rice
    • 1 14 oz. bag frozen Latino Blend (Corn, Black Beans, Onion, Red & Green Pepper)
    • 1 15 oz. can Fire Roasted Tomatoes
    • Juice from 1 Lime
    • 1 tsp. Taco Seasoning

    1. Stir all ingredients together in the IP
    2. Close & lock lid
    3. Set Pressure Valve to Sealing
    4. Select Manual setting & reduce timer to 3 minutes
    5. Natural Release pressure for 5 minutes, then Quick Release
    6. Fluff Rice with a fork
    7. Add Lime Juice and stir to combine
