Tacos & Steamed Veggies, Oh My!

I got some new toys recently to simply make my life easier.

The first is what I had considered an indulgent or gimmick type of purchase, but after using it, I now consider it a MUST HAVE for Taco Tuesday.

A Taco Holder.

This simple, unassuming gadget is absolutely necessary to have a successful taco night! Ok, ok, that’s a bit of a stretch, I mean, I’ve been eating tacos successfully for years without one, but it makes life so much easier! No more falling over tacos, no fillings spilling out, no wrestling to make your taco.  These holders make life so much easier and isn’t that what true happiness is about? I think a headache free taco dinner is worth $8.99, don't you?


The second toy was an unexpected find. After getting back into healthier eating, I was at a lose for how to steam my vegetables. Yes, I know how to steam them, but the thought of bringing a big pot of water to boil felt tedious and steaming in my Instant Pot, makes my veggies too mushy.

Then this baby came into my life, the Microwave collapsible steamer!



I am a sucker for a collapsible anything and it’s BPA free and it comes in my favorite color, black! The bowl, lid and even the strainer is rubber, so it’s super light weight and easy peasy to clean.

Just add a bit of water, lay your veggies out, place the lid, nuke for 3-5 minutes and you’re eating!

For $23.99, I might buy another just for travel!

Got Melon? You Need A Watermelon Slicer!!!

My latest kitchen obsession is this 15.7” Large Stainless Steel Melon Slicer, Cutter, Peeler, & Corer!!! It's big, it's sharp and it's earned a spot in my kitchen due to it's ability to reduce my melon prep to a few mere minutes.  

I was skeptical at first, but I have to say this baby delivers over and over and over!  To be honest, I started testing this last summer, just to make sure the plastic pieces didn't break and the blades didn't bend or rust and one year later, I am still a happy camper!


To start off with shop wisely; you're not going to force a gigantic Watermelon through this baby, but a reasonably sized, no bigger than a basketball Watermelon will slice just fine.  But that's not all, this works beautifully with Honeydew and Cantaloupe. I have yet to try pineapple, but I don't think you'll be disappointed.

Once, home, wash your little melon baby and then slice the ends off, so it sits flat on your cutting surface.  This not only aids in safety for you & the melon, but also assists the slicer in doing it's job.

Think leverage before slicing, you want to get your body weight above the melon and then press down as this glides through the melon with very little effort.  Once, sliced (this literally takes a second or two), you're either ready to eat (Watermelon) or ready to clean the guts out (seeds).  You can eat as wedges or quickly run a knife through for bite-sized pieces.


There are a lot of slicers out there like this, but I like this one for it's non-rusting stainless steel, it's grippy handles and budget friendly, under $20 price tag.

Sushi Bazooka Roller

I’ve been a sushi making fiend since I go my latest toy…the Sushi Bazooka Roller by Sushezi (get it, sush ezi...)!

Super simple to use, you can roll your own sushi in minutes! I got the hang of it the first time I used it. It produces the most perfect sushi roll, your friends will be amazed! I was a little nervous about the cutting, but that too is easy – you just need to let the sushi, wrapped in Nori (seaweed), sit for 15 minutes in the fridge. This allows the wrapper to absorb moisture from the rice and become pliable. Next, use a very sharp knife, I use a ceramic knife, and a glass of warm water – wet the knife before every cut, no need to wipe down. This will ensure perfectly cut sushi! Can you get away with no Nori sheet? Maybe, I’ve been too nervous to try, but the rolls are pretty compact, so they might hold up.

I will say that the #1 complaint on Amazon is about the hinges and it’s true; the hinges suck and can get you really frustrated. But with a little maneuvering you can make it work. The good thing about the crappy hinges - the device comes apart really easy for cleaning.

You will notice that the instructions tell you to oil the inside chamber to allow for easy release – like most things that call for oil, I ignore it and guess what, perfect sushi sans oil!

Now to make awesome sushi, you need awesome ingredients and that starts with the rice! Save yourself the hassle and buy sushi rice right from the start, there is a difference (it’s sticky). I make my rice using the Instant Pot, but you can use a rice cooker or traditional boiling method. I don’t know how either of those methods work, but here’s my recipe for the IP.

Sushi Rice
Yields: 2 cups Rice, enough for 2 Rolls
My Masterpieces

Ingredients: 
  • 2 cups Water 
  • 1 ½ cups Sushi Rice 
  • 2 tbsp. Rice Vinegar 
  • 1 tbsp. Sugar 
  • ¼ tsp. Sea Salt

Directions: 
  1. Mix together Water & Rice
  2. Close & lock lid
  3. Set Pressure Valve to Sealing
  4. Select Rice setting
  5. Manual release pressure for 10 minutes, then Quick release
  6. Remove the inner pot from IP to help Rice cool quicker
  7. While Rice is still hot, stir in Vinegar, Sugar & Salt
  8. Set aside until cool to handle & prep fillings

Next comes all the ingredient combinations! I LOVE Sweet Potato Sushi, but I hate hassle, so I just get a can of Sweet Potatoes, drain it and stuff away. You can also try Shredded Carrot with Avocado, Asparagus with Avocado, Cucumber with Avocado, Mango with Avocado – sensing a theme here? Also try cooked Shitake Mushrooms, Cucumber with Shredded Carrot or straight up Avocado (mmmm)!

Why bother making your own sushi?

Well, for one it’s pretty freakin’ cool that you can do it so easily with this tool and two it tastes waaaaaay better than store bought. I wouldn’t say homemade sushi is going to put any Asian restaurants out of business, but for a quick snack or meal the Sushi Bazooka Roller is worth adding to your kitchen arsenal.

Do You Need A Sleep Mask?

Only movie stars and old people wear sleep masks right?

I mean, why do you want a mask on you face while you sleep?

Well, this is why...

You want to sleep in the dark - complete darkness.  Sure you turned off the lights - but there's still that glow from the street lights, clock radio, cell phone, TV and whatever other electrical device you feel needs to be in the bedroom with you.  (Um, maybe it's time to purge your inner sanctuary...)  Anyway, according to the National Sleep Foundation, "a dark bedroom contributes to a better sleep."

But why is this?

The brain needs to sense pure darkness in order to start the production of melatonin, the sleep chemical.  This greatly increases your chances of falling asleep.  You want quality sleep to keep your immune system at attention and lack of sleep can actually pack on the pounds.

But sleep masks are uncomfortable.

Not no more! Gone are the days of a smashed nose & flattened eyes thanks to that flat silk bondage device.  Now, you can get a mask with little nose piece and raised contoured eye sockets so
you don't even have to feel like you're wearing a mask!

I currently use the sleep mask by Drift To Sleep.  OK, I was partly drawn to the purple color, but it's much more comfortable and better at keeping out the light than the sleep masks of the dark ages.

Give it a try and see if you can improve your sleep - after all it's about quality, not quantity.

To sleep, perchance to wake up refreshed...

New Toy - The Portable Personal Crock Pot!

My philosophy is that like information, when a helpful tool presents itself, it's for a reason and if one ignores said tool, it will keep smacking you in the face until you wake up and do something about it.

So that brings me to my latest toy, the Crock-Pot® Lunch Crock® Food Warmer, Deluxe Edition!   

Why you ask?

Because I prefer my work lunches to be hot!  I'm not a big fan of the community microwave, so I needed a personal heating solution and this little pot hooks me up!  Note that this little guy is for heating only, not cooking.  That being said, the food gets hot - so hot that I need to shut it down 30 minutes prior to lunchtime so the food is cool enough for consumption.

I was concerned at the smallness of this device, a mere 24 oz. but that turned out to be more than enough to facilitate a filling meal.  To give you some perspective, I easily fit a 19 oz. Progresso can of soup, plus a cup of rice.

Aside from the fun colors (I went with purple), I appreciate the built in handle, easy on/off switch and the removable inner stainless steel container with airtight lid.  I also like the cordless design that allows you to leave the heating element at work and take the container home although I just take the inner container back and forth.  If you're concerned about smell, don't be, the double lid design prevents aromas from escaping until you're ready to eat.  The price is not bad either, $39.99, but check the site, because they run really good sales - right now it's $29.99!

The Cuisinart Griddler!

Santa was good to me once again!  This year the man in the big red suit left me a Cuisinart Griddler (what a cute name!) under my tree and I love it!

Move over George Foreman - this Griddler has multiple mad skills!

This baby is a contact grill, panini press, full grill, full griddle and can turn into a half grill/half griddle!  Talk about versatility.

I really like the modern, stainless steel finish and the BPA Free, non-stick, reversible plates. You can even buy an additional waffle plates.

You can also adjust the temperature settings from 200°F to 425°F; as you would an oven.  I like how the lights switch from red to green to indicate the Griddler is up to temperature.

The self-adjusting cover gives you flexibility in the thickness of food that is cooked.

But, what I love most of all is the fact that the plates easily pop out for cleaning (either hand wash or dishwasher).  No more fretting about getting the inner workings wet.

I will say I was disappointed in overall size of this machine.  While it's convenient for storage - this machine is best for a single or two person household; unless cooking in batches doesn't bother you.

Since Christmas, I have been a grilling/panini master!  So far, I have made veggie burgers, quesadillas and grilled "cheese!"

I plan to test out my Summer Lovin' Grilled Veggies and Reuben recipes, as well as trying my hand at grilled fruit.

The Airfryer...My Latest Toy

http://www.usa.philips.com/c-m-ho/cookingWhile I no longer consume oil, it doesn't mean that I don't miss fried food.  Sure, one can accomplish a decent "fried" affect using the oven, but that is so last season.

I present you with the Airfryer.

The advertisement for this little gem states that it can fry, bake, grill and roast food using a tablespoon or less of oil.  However, after learning that many in the whole-food, plant-based, oil-free community are successfully using this machine using no oil at all, I had to give it a go myself.

I picked up the Philips Airfryer on Amazon for just under $200

So far, I have had success making fries, curly fries and onion rings (recipes to come).  It also does an excellent job on frozen food that typically call for frying - things like tater tots and vegetable rolls.  I wouldn't say the results exactly mirror those of traditional frying, but it's pretty close.

I appreciate the adjustable temperature (up to 390 degrees) and timing controls (up to 30 minutes).  It takes a mere three minutes to heat up and you can simply add those minutes to your cooking time.  It also cooks at a fraction of the oven time, a mere 10 minutes for curly fries, 15-20 minutes for traditional fries.  The basket is rather large (1.8 lb. capacity) and can easily hold enough servings for two people.  It's non-stick surface and removable fryer basket makes clean-up effortless, both of which are dishwasher safe.

I have found that the key to frying is not packing too much into the basket as well as tossing the food during cooking.

This would make a most excellent stocking stuffer for the oil-free lover in your life.

Clean That Juicer!

Do you clean your juicer?

Sure, after each use you take it all apart for washing, but have you cleaned the actually juicer?

Don't stress, it's easy and takes a few seconds.

With your machine ready to go, combine 3 cups of Water with 1 cup of White Vinegar.  Set machine to low and slowly pour the mixture down the chute.  Be careful, the water could shoot back up.  Turn off the machine, empty the pitcher and repeat again with Water only.

That's it!

This doesn't need to be done with each use, but it wouldn't hurt either.

P.S. This trick works well for your coffee pot too!  Just run the same Water/White Vinegar concoction through one cycle and chase with pure Water for another cycle.

Mr. Manatea...My New Friend

After diving deep into the tainted tea world, I began exploring organic teas and came across Numi Organic Tea and decided to give their Orange Spice loose leaf white tea a spin.  Eager to try, I dug out a tea infuser that had been stashed in my kitchen drawer for many, many years and stuffed it full of tea.

Mellowing into Zen state, I inhaled the heavenly aroma of the orange peel, schizandra berries and lemongrass before taking my fist sip of pure organic goodness and...

YUCK!

My tea tasted like metal - blah!  I knew immediately that the culprit was not the tea, but rather the stainless steel infuser that is typically used to brew loose leaf teas.

This was unacceptable!

I hit the internet in search of a better solution and found my new bestie...Mr Manatea.

Why I love him:
  • He's made from BPA-free, food-safe silicone
  • His tiny holes are small enough to keep the tea from escaping but big enough to let the flavor out
  • His little flippers allow him to perch on the side of the cup while brewing (he's so cute)
  • He makes me feel like I am vacationing in Florida
  • He holds A LOT of tea, for a stronger brew
  • His mighty tail doubles as a spoon
  • He's very easy to clean - his head pops off!
  • He doesn't taint my perfect tea with any additional flavoring
  • He chats with me (just kidding...or am I?)

Am I Replacing My Vitamix With NutriBullet?

Um, no way.  But I have just added the NutriBullet Pro 900 to my vegan bag of tricks.

You may be wondering why a diehard Vitamix chick would do such a thing.

My reasoning is twofold.

One, I wanted a travel solution.

We can all agree that traveling vegan can be challenging.  I try to make it easier by getting a hotel with an in-room mini fridge and then hitting a local grocer or farmer's market for fresh produce.  Due to its small stature, the NutriBullet can easily fit into a suitcase and create magical smoothies on-the-go!  The super, easy clean-up can be taken care of via the bathroom sink.  Bonus, the blending containers double as travel mugs.

Two, smaller is sometimes better.

The Vitamix can truly do anything, but when it comes to smaller quantities, the NutriBullet is a better solution.  Specifically for sauces, dips and dressings - think a cup or less in volume.  The smaller size is also perfect for grinding flax seed, herbs and whole spices.

I like the NutriBullet because it grinds nut & seeds just like the Vitamix.  It's just as easy to clean and due to its size, can be stored away in a cabinet in seconds. I went with the Pro 900 series, because I wanted the 900 watts, so that power difference from the the Vitamix's 1380 watts of power wasn't too noticeable.

Better than a Vitamix?

Now, don't think that the NutriBullet can replace a Vitamix.  That's like comparing a Corolla to a Mustang.

At a maximum capacity of 24 oz. the NutriBullet falls short to Vitamix's 64 oz. capacity.  Additionally, the NutriBullet can only run at 1 minute intervals, 3 intervals max before the motor needs a timeout to avoid burnout.  A far cry from the 6 minute max with Vitamix - that means no making soup and no walking away while blending.

Currently, the NutriBullet Pro 900 is running around $130 bucks and can be found on Amazon.  Although, check the big box stores for on-going sales.

For small, quick jobs or vegan travel, I'm all about the NutriBullet.

I Got A New Toy: The Instant Pot!!!

I have a new crush!  This time it's on my brand new Instant Pot!!!

Like all new relationships, I was pretty nervous at first.  Frankly, pressure cookers scare the hell out of me.  Like they just explode for no reason right?  Not so much, new pressure cookers are quite safe these days. Especially the Instant Pot which is pretty dummy proof, even for a newbie & sports 10 safety features just to ease one's mind.

So, what is an Instant Pot?  Well, it's like a pressure cooker on steroids. This is not your grandma's relic from the dark ages, this baby's got skills!

Check this out.

The new 2014 3rd Generation model is 7 cookers in 1!  It has a Bean/Chili setting, Rice setting, Yogurt setting, Soup Setting, Grain setting, Meat/Stew and Poultry setting (if you're into that sort of thing).  It can also be used as a Slow Cooker, to Steam or to Sauté/Brown.  So basically this one machine just replaced your bean cooker, rice cooker, steamer, crock pot and frying pan.  That's a lot of cabinet space.  The Keep Warm setting, well keeps things warm.  There's even a Timer that allows you to preset the cooker to start and stop so a hot meal is waiting for you once you arrive home.  Basically, you can cook an entire meal in one pot; I love that!

But what sealed the deal for me was the stainless steel pot - no non-stick chemicals!

Make grocery shopping easier by downloading the new "Is it Vegan" app to your iPhone or Android.  The free version or paid version ($4.99) app works by scanning the bar code of the suspect product.  It then analyzes the ingredients and within a few seconds you know if it is safe to proceed or not. 

I downloaded the free version myself and it is pretty cool!

The Best Sleep App!


A while ago a friend of mine (Hey Bob!) turned me onto the Brain Wave - 30 Advanced Binaural Brainwave App and I LOVE IT!

OK, I can't definitively say this is the best sleep app because I've only tried this one app.  But when you try something and it changes your life, you don't have to keep searching!

TMI time!  I have a condition that causes me to urinate every hour - yeah, every freakin' hour!  It used to be every 30 minutes, but acupuncture has helped me extend that window.  Needless to say, that eliminates any shot of quality night sleep.

The very first night I tried this app, I only woke up once!!!  You have no idea how amazing that felt.  Having used this app nightly for a few months, I now routinely wake up about two times a night, compared to my traditional four to six trips to le lieu, I am ecstatic!   I now travel with this app and won't sleep a night without it.


Let me tell you a little about it...

It's a steal at only $3.99!!!


You get this app through iTunes, so it's an Apple-based product, sorry Android users.

It's completely customizable!  Change how long it runs (10 min, 20 min, 30 min, 40 min, 1 hour, 2 hours, 3 hours, 4 hours, 8 hours), the background sound (I love the Ocean Waves & Forest), the level of sound (brainwave vs. background), the type of program (Deep Sleep, Dream, Meditation, etc.).  There's even an alarm to peacefully wake you from your slumber.

Because of the Binaural Tones (brainwaves), you're supposed to use headphones.  I tried for a few nights and they drove me crazy!  Instead, I got a travel speaker from Amazon for my iPad and that seems to work just as well.  The iPad speaker itself didn't quite cut it.

I'd like to pretend that I know how this works, but let's get real.  Here's what the makers have to say.

Non-stick Donut Pan!!!

Donut or doughnut?  I don't know...anyway...

Since becoming a whole-food, plant-based, oil-free vegan (really need to come up with a witty abbreviation for that), donuts have not crossed my lips and I really, really miss them!!!

So, when I came across the Wilton Non-stick, Donut Pan, I had to have it!  I knew with this pan that I could bake donuts without the oil.

Luckily, Santa brought me one for Christmas and I've been crafting recipes ever since!

I can't tell you enough how simple, quick and healthy it is to bake you own oil-free, vegan donuts! Don't expect Krispy Kreme, but you will get a respectable cake-like donut, tasty enough to satisfy even the most die-hard donut connoisseur.

Pay attention; for the flavored donuts, all I did was start with the Basic Donut recipe as a foundation and switch out the key flavors - you can do the same thing.  What's your inner donut?
