Hoff's Pizza Sauce

Hoff's Pizza Sauce
Yields: Enough for 1 large pizza
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free


Ingredients:
  • 1 6oz. can Tomato Paste
  • 6 oz. Water (use Tomato Paste can)
  • 3 tbsp. Nutritional Yeast
  • 1 tbsp. Sugar
  • 1 tsp. Italian Seasoning
  • 1/2 tsp. Onion Powder
  • 1/2 tsp. Garlic Powder

Directions:
  1. In a small bowl, mix together all ingredients
  2. Let stand for a few minutes to thicken
  3. Slather onto pizza dough
  4. You know what to do next

Hoff Thoughts: I actually don't mix things like this in bowls, I use a standard 2 cup measuring glass, so it's easier to pour.

Hoff's Oatmeal Raisin Cookies

Hoff's Oatmeal Raisin Cookies
Yields: about 2 dozen
dairy-free, egg-free, oil-free, soy-free

Ingredients:
  • 2 cups Whole Wheat Pastry Flour
  • 2 cups Whole Oats
  • 1 cup Brown Sugar
  • 1 cup Raisins
  • 1 cup pitted Dates
  • 1 cup Apple Sauce
  • 3 tbsp. Chia Seeds
  • 3 tbsp. Water
  • 1 tbsp. Vanilla Extract
  • 1 tsp. Baking Soda
  • 1 tsp. Baking Powder
  • 1 tsp. Cinnamon
  • 1 tsp. Sea Salt

Directions:
  1. Mix Chia Seeds & Water and let sit for 5 minutes or until gelled
  2. Preheat oven to 350 degrees
  3. Using a Mini Food Processor, finely chop Dates
  4. Meanwhile in a medium bowl, whisk together Flour, Oats & Brown Sugar, Baking Soda, Baking Powder, Cinnamon & Salt
  5. In another bowl, mix together Raisins, Dates, Apple Sauce, Gelled Chia Seeds & Vanilla
  6. Mix the wet ingredients into the dry ingredients
  7. Drop spoonfuls onto a non-stick cookie sheet or parchment paper lined cookie sheet
  8. Bake for 10 minutes, using the back of a spatula flatten each cookie, bake for another 5 minutes

Hoff's Mint Chocolate Chip Ice Cream
Serves: 2
dairy-free, egg-free, oil-free, soy-free, gluten-free


Ingredients:

Directions:
  1. Combine all ingredients (except Chocolate) in a Vitamix
  2. Using the tamper, push the Bananas into the blades
  3. Blend until smooth about 10-15 seconds
  4. Drop Chocolate in & run a few seconds more to break up
  5. Serve immediately for soft serve or freeze for hard ice cream

Hoff's Taco Meat

Hoff's Taco Meat
Yields: About 3 cups
meat-free, dairy-free, egg-free, oil-free, gluten-free

Ingredients:
  • 8 oz. Tempeh
  • 1 15 oz. can Black Beans (rinsed & drained)
  • 1 medium Sweet Onion (chopped)
  • 1 cup Tomato Sauce
  • 1 tbsp. Liquid Smoke
  • 4 tsp. Chili Powder
  • 2 tsp. Cumin
  • 1 tsp. Paprika
  • 1 tsp. Onion Powder
  • 1 tsp. Garlic Powder
  • 1 1/2 tsp. Sea Salt

Directions:
  1. Rough chop Tempeh
  2. Using a mini food processor, blend Tempeh until it resembles ground crumbles
  3. Meanwhile, in a non-stick skillet over medium-high heat, brown Onions
  4. Add Tempeh to slightly brown
  5. Add Black Beans, Tomato Sauce & Seasonings
  6. Heat through & stuff yours Tacos!!!

Hoff Thoughts: Ya can't have tacos without Guacamole or Taco Shells!!!

Hoff's Falafel

Hoff's Falafel
Yields: 8 small patties
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients: 
  • 1 15 oz. can Chickpeas (rinsed & drained)
  • 1 tbsp. Chickpea Flour
  • 1 tbsp.Chickpea Liquid
  • 1 tbsp. dried Parsley
  • 1 tsp. Cumin
  • 1 tsp. Onion Powder
  • 1 tsp. Garlic Powder
  • 1 tsp. Sea Salt

Directions:
  1. Preheat oven to 400 degrees
  2. Using a Food Processor or Vitamix, blend Chickpeas, Flour & Seasonings until smooth
  3. Add Chickpea Liquid and blend again (this acts as a binder)
  4. Form into 8 small patties
  5. Place on a non-stick baking sheet
  6. Bake for 10 minutes, flip and bake for an additional 10 minutes



Hoff Thoughts: You can also brown these in a non-stick frying pan.  Or, roll into balls and use your airfryer!

Raw Blueberry Jam

Raw Blueberry Jam
Yields: 1 1/2 cups
dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients:
  • 2 cups Fresh or Thawed Blueberries
  • 2 tbsp. Honey or Maple Syrup
  • 2 tbsp. Chia Seeds
Directions:
  1. Place all ingredients in a Vitamix or food processor
  2. Blend until well combined
  3. Transfer to container, such as a pint canning jar
  4. Refrigerate overnight before using

Hoff Thoughts: The Chia Seeds will act as the pectin of a traditional jam recipe, to create the jam-like consistency.  The shelf-life on this one is sparse - don't keep past 2 weeks unless you're a gambling soul.
