Hoff's Baked Pineapple Chkn

Yields: 5-6 servings
meat-free, dairy-free, egg-freeoil-free, gluten-free



Rice:
  • 1 1/2 cups Jasmine Rice
  • 2 1/2 cups Water

Ingredients:
  • 1 cup Soy Curls (rehydrated) or 14 oz firm Tofu (cubed)
  • 1 Red Pepper (chopped) 
  • 1/2 Sweet Onion (chopped)

Sauce Ingredients:
  • 20 oz can Pineapple chunks in 100% Juice
  • 1/2 cup Bragg Liquid Aminos
  • 1/4 cup Water
  • 2 tbsp Brown Sugar
  • 2 tbsp Corn Starch
  • 1 tsp minced Ginger
  • 1 tsp minced Garlic

Directions:
  1. Dump Pineapple w/Juice & Sauce Ingredients into 9x13 baking dish, stir
  2. Add Soy Curls/Tofu, Peppers & Onions together, stir to combine
  3. Bake uncovered at 400 degrees for 20 minutes
  4. Meanwhile prepare Rice
  5. Once everything is cooked, spoon Rice into a bowl, top with Veggies & any additional sauce such as Tahini if desired
  6. OR 
  7. Dump Pineapple w/Juice, Sauce Ingredients, plus 2 cups Water into 9x13 baking dish, stir, add remaining ingredients, stir to combine
  8. Bake, covered at 400 degrees for 45 minutes, check Rice for doneness
