Hoff's Chkn Salad
Yields: 2 generous saladsmeat-free, dairy-free, egg-free, soy-free
Ingredients:
- 1 cup Soy Curls
- 2 tsp Poultry Seasoning
- 1/2 tsp Salt
- 1/2 cup Chickpeas
- Shredded Lettuce/Greens
- Baby Cucumbers (sliced)
- 1 Carrot (shredded)
- Cherry Tomatoes (halved)
- Avocado (sliced)
- Black Olives
- Red Onion (chopped)
- Dried Cranberries or Grapes (sliced)
- Sunflower/Pumpkin Seeds
Dressing:
- Mustard
- Maple Syrup
Or
Directions:
- Rehydrate Soy Curls in just enough Water to cover & Poultry Seasoning & Salt for at least 15 minutes
- Drain & air-fry Soy Curls & Chickpeas at 400 degrees for 15 minutes
- Mix equal parts Mustard & Maple Syrup to create a dressing or use Chickpea dressing
- Divide Lettuce between two bowls, mix each with some dressing to coat
- Assemble salads with desired amount of ingredients
- Finish with remaining dressing
