Hoff’s Red Beans & Rice

Ingredients:
- 2 1/2 cups Veggie Broth
- 1 1/2 cups Jasmine Rice
- 15 oz can Kidney Beans (rinsed & drained)
- 1 cup Soy Crumbles
- 1 tsp Hoff Seasoning
- Pinch of Fennel Seeds
- Splash of Hot Sauce
- 1 Red Pepper (chopped)
- 1 Sweet Onion (chopped)
- 1 tsp Garlic (minced)
- 2 tbsp Nutritional Yeast
- 2 tsp Hoff’s Seasoning
- 2 tsp Smoked Paprika
- 1 tsp Thyme
Directions:
- Preheat oven to 375 degrees
- Rehydrate Soy Curls in just enough Water to cover, mix in Seasonings, let sit 15 minutes
- In a 9x13 casserole dish, dump all ingredients, mix to combine
- Cover & bake for 45 minutes
Hoff Thoughts: If making ahead of time, add Water at prep or right before baking - whichever your spirit whispers…mine can’t make up its mind.
