Hoff’s AF Baked Potato w/Mushroom & Carmalized Onions
Servings: 2meat-free, dairy-free, egg-free, oil-free, gluten-free, soy-free
Carmalized Onions & Mushrooms
- 1 Sweet Onion (half moon slices)
- 1 carton Mushrooms (sliced)
- 1 tsp Sugar
- 1 tsp Salt
Potatoes
- 2 Baking Potatoes
Pick One:
Sour Cream
- 1/2 cup Cashews
- 1/4 cup Water
- 1 tbsp Lemon Juice
- 1 tbsp Roasted Garlic Rice Vinegar
- 1/4 tsp Salt
Ranch Dressing
- 1/2 cup Cashews
- 1/4 cup Water
- 1 tbsp Lemon Juice
- 1/4 tsp Onion Powder
- 1/4 tsp Garlic Powder
- 1/4 tsp Dill (mix-in)
- 1/4 tsp Salt
Carmalized Onions & Mushrooms
- Turn on Saute setting, to heat up IP
- Add Onions, Mushrooms, Sugar & Salt; mix together
- Saute until Onions & Mushrooms release their water
- Turn off Saute setting
- Lock lid in place and make sure pressure release valve is closed
- Press "Manual" button & reduce time to 20 minutes
- When done, use quick release
- If too much water is left, turn on Saute setting until desired amount is left
Potatoes
- Meanwhile, poke each Potato with holes & microwave for 5 minutes
- Cut each Potato open & air fry at 400 degrees for 15 minutes
Sour Cream
- Meanwhile dump all Sour Cream ingredients into a high speed blender, blend until smooth
- Once all components are done assemble Potatoes & enjoy
Ranch Dressing
- Meanwhile dump all Ranch Dressing (hold Dill) ingredients into a high speed blender, blend until smooth
- Mix-in Dill
Meal
- Once all components are done, assemble Potatoes with desired toppings & enjoy
Hoff Thoughts: Want to prep in advance? Slice Onions & Mushrooms a few days before use. Microwave Potatoes & store in refrigerator until meal time. Sour Cream or Ranch Dressing can also be made at the same time & stored in the refrigerator for up to two weeks.
