Hoff's Awesome Chocolate Ice Cream!

This recipe is AWESOME because it's so healthy & a total fake out! Don't tell, but each serving is an entire serving of fruit, because frozen bananas are the base of this recipe.  Added bonus, this comes together in under a minute!  I have not been able to stop making this "ice cream" - totally addicted!


Hoff's Awesome Chocolate Ice Cream!
Serves: 2
dairy-free, egg-free, oil-free, soy-free


Ingredients:

Directions:
  1. Combine all ingredients in a Vitamix
  2. Using the tamper, push the bananas into the blades
  3. Blend until smooth about 10-15 seconds
  4. Serve immediately for soft serve or freeze for hard serve

Blend-in Ideas (add at the very last few seconds of blending):
  • 1/2 cup Mint Leaves
  • 1/2 cup Frozen Fruit
  • 1/4 cup Junior Mints
  • 1 tbsp Chocolate Chips

My2Cents: I am AMAZED how well the frozen bananas mimic the creamy consistency of regular ice cream!  I HATE bananas, but if you pretend just a little, you can block out the banana taste and embrace the chocolate!  This may work in a regular blender, but I don't have any experience with them, so I can't say for sure - try it!  As I only use mint for this recipe, I freeze the mint in a ziplock freezer bag - works like a charm!  This dessert is so decadent, you won't even realize you just consumed a serving of fruit -crazy good!
