Hoff's Black Bean Wrap

Hoff's Black Bean Wrap
Serves: 1
meat-free, dairy-free, egg-free, oil-free, soy-free

  • 1 Whole Wheat Wrap
  • Hummus
  • Red Onion (sliced or diced)
  • Black Beans
  • Corn
  • Greens (romaine, spring mix, spinach, etc.)
  • Fresh Cilantro
  • Mustard or Salsa

  1. Spread Hummus on Wrap
  2. Layer on Black Beans, Corn, Onion, Cilantro & Greens
  3. Add Mustard or Salsa to flavor
  4. Roll & Eat!

My2Cents: I combine one can of Black Beans & one can of Corn and store in the fridge for up to a week to have ready for these wraps.  Think of the Hummus as glue for the Black Beans & Corn to prevent their escape during rolling.  The Cilantro adds a little kick & a little extra greens to this wrap!  Um yeah, if you taste "soap," you don't like Cilantro - skip it!
