Hoff's Rice & Beans (Instant Pot)

Hoff's Rice & Beans (Instant Pot) 

Yields: 3-4 Servings
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients:

  • 1 1/2 cups Jasmine Rice 
  • 2 1/2 cups Water
  • 1 15 oz. can Black Beans (rinsed & drained)
  • 1 tsp. Taco Seasoning
  • 1 tsp. Lime Juice

Directions:
  1. Mix Rice, Water & Taco Seasoning in the IP 
  2. Top with Black Beans & do not mix together (very important!)
  3. Press “Manual” button & reduce time to 3 minutes
  4. When done, use quick release
  5. Stir in Lime Juice

Hoff Thoughts: Topping Ideas: Avocado or Guacamole, Mango Salsa, Mango, Cole Slaw salad mix, Air-fried Corn, Air-fried Peppers & Onions, Black Olives, Cilantro

Ingredients:

Directions:
  1. Spread Chickpeas in single layer onto a parchment paper lined baking sheet
  2. Sprinkle with Seasonings
  3. Air-fry for 30 minutes, stir, 5 more minutes; watch for burning
  4. Store in container with air-flow, at room temperature; good for a few days

Hoff's Breakfast Sammy

Yields: 6 sandwiches
meat-free, dairy-free, egg-free


Ingredients:

  • 6 English Muffins
  • 14 oz firm Tofu
  • 6 Beyond Sausage Patties (optional)
  • Vegan Cheese (optional)
  • Avocado (sliced) or Guacamole
Marinade Ingredients:
  • 2 tbsp Braggs
  • 2 tbsp Maple Syrup
  • 2 tbsp Nutritional Yeast
  • 1 tbsp Corn Starch
  • 2 tsp Hoff’s Seasoning or Everything But The Bagel Seasoning
  • 1 tsp Black Salt

Directions:
  1. Slice Tofu in half, turn on side, slice into 3rds, creating 6 equal pieces
  2. Mix Marinade in shallow 7x11 dish
  3. Press Tofu into Marinade, flip, coat other side
  4. Meanwhile, toast English Muffins with Cheese
  5. Air-fry Tofu & Sausage at 400 for 10 minutes
  6. Remove Sausage, flip Tofu
  7. Air-fry Tofu at 400 for another 10 minutes
  8. Assemble sandwich, enjoy!

Hoff's Baked Veggie Lo Mein

Yields: 5-6 servings

Noodles:
  • 12 oz Spaghetti Noodles or Rice Noodles

Ingredients:
  • 1 cup Soy Curls (rehydrated) or 7 oz Firm Tofu (cubed)
  • 1 head Broccoli (chopped) 
  • 1 cartoon Mushrooms (sliced) 
  • 1 cup Edamame 
  • 1 cup Shredded Cabbage
  • 1 Red Pepper (chopped) 
  • 1/2 Sweet Onion (chopped)

Sauce Ingredients:
  • 1/2 cup Bragg Liquid Aminos
  • 1/2 cup Water
  • 1 tbsp Mirin or Garlic Rice Vinegar
  • 1 tbsp Brown Sugar
  • 1 tbsp Corn Starch
  • 1 tsp minced Garlic

Directions:
  1. Whisk sauce ingredients together or shake together using a jar
  2. Stir Veggies & sauce together in a glass baking dish
  3. Bake at 400 degrees for 40 minutes
  4. Meanwhile prepare Pasta
  5. Once everything is cooked, combine everything together
  6. Finish with Lime Juice & Tahini

Yields: about 6 waffles

Ingredients: 

    • 2 cups Mashed Potato Flakes
    • 1 1/2 cups Water
    • 1/2 Onion (corse chopped)
    • 1 tbsp minced Garlic
    • 1 tbsp Imitation Bacon Bits (yes they are vegan)
    • 1 tbsp Nutritional Yeast
    • 1 tbsp Everything But the Bagel


    Directions:

    1. Preheat Cuisinart Griddler with waffle plates
    2. Mix all ingredients together, forming a dry dough that just holds together
    3. Place two scoops of mixture per waffle, spread out
    4. Cook about 15 minutes until crispy
    5. Serve with favorite fry condiments: Ketchup, Mustard, Just Mayo, etc.

    Ingredients: 
    • 3 cups Water
    • 1 cup Soy Curls
    • 1 carton Mushrooms (chopped)
    • 2 tbsp Better than Bouillon No Beef Broth
    • 2 tbsp Braggs Liquid Aminos
    • 2 tbsp Tomato Paste
    • 2 cups Baby Yellow Potatoes (chopped)
    • 2 Carrots (chopped)
    • 1/2 cup Organic frozen Corn
    • 15 oz can Green Beans (rinsed & drained)
    • 1 small Sweet Onion (chopped)
    • 2 tsp minced Garlic
    • 2 tbsp Corn Starch
    • 2 tbsp Brown Sugar
    • 1 tsp Thyme
    • 1 tsp Rosemary
    • 1 tsp Paprika
    • 1 tsp Garlic Powder 
    • 1 tsp Onion Powder

    Directions: 
    1. Stir Water & Beef Boulion, Braggs, Tomato Paste & all seasonings in IP, mix in Soy Curls, Mushrooms & Onions
    2. Top with Potatoes, then Carrots, then Green Beans & Corn
    3. Lock lid in place and make sure pressure release valve is closed 
    4. Press "Manual" button, reduce time to 15 minutes 
    5. When done, use quick release method
    6. Mix every thing together, enjoy!

    Ingredients:
    • 2 bundles Ramen Noodles
    • 4 cups Vegetable Broth
    • 7 oz block firm Tofu (cut into small squares) 
    • 1 cup Cabbage (slaw mix)
    • 1/2 cup organic Edamame
    • 1/2 cup organic Corn
    • 1/2 sheet of Roasted Seaweed (torn/cut into pieces) 
    • 1-2 tbsp Bragg's Liquid Amino Acid (or soy sauce) to taste
    • 1 tbsp Almond Butter
    • 1 tbsp Miso
    • 1 tsp Umami Seasoning
    • 1 tsp minced Ginger
    • 1 tsp minced Garlic
    • Juice from 1 Lime

    Directions:
    1. Combine all ingredients (minus Noodles) in a pot and bring to a boil
    2. Add Noodles and cook according to package time
    3. Finish with Lime Juice
    4. Enjoy!

    Ingredients:

    • 3 cups Veggie Broth
    • 1 1/2 cups Jasmine Rice
    • 2 - 12 oz. bags frozen Broccoli
    • 1 cup Soy Curls

    Sauce

    • 15 oz. can Chickpeas (rinsed & drained)
    • 1 cup Water
    • 1/2 cup Instant Mashed Potatoes flakes
    • 1/2 cup Nutritional Yeast
    • 1 tsp Lemon Juice
    • 1 tsp Hoff Seasoning

    Directions:

    1. Preheat oven to 400 degrees
    2. Blend Sauce ingredients in a Vitamix/high power blender until smooth
    3. Add Sauce & remaining ingredients to a 9 x 13 baking dish (I prefer glass), mix until combined
    4. Bake covered for 30 minutes

    Ingredients:
    • 6 Wraps
    • 2 - 15 oz. can Chickpeas (rinsed & drained)
    • 1/4 cup dried Cranberries
    • 1/4 cup chopped Sweet Onion
    • 3 tbsp plain Hummus
    • 2 tbsp Pickle Relish
    • 2 tbsp Mustard
    • 1 tbsp Lemon Juice
    • Salt & Pepper to taste

    Directions:
    1. Using a food processor, pulse Chickpeas until desired texture is achieved
    2. Mix in remaining ingredients
    3. Allow to chill in the fridge before spreading onto toasted Bread or use as a Wrap filling

    24 hour prep time
    Yields: 3 cups

    Ingredients:
    • 3 cups Apple Cider

    Directions:
    1. Pour Juice into Ninja Creami Deluxe Container, up to Max Fill line
    2. Place in freezer for 24 hours without the lid*
    3. When ready to enjoy, process using the Ninja Creami Deluxe Italian Ice setting, re-spin if necessary, adding more liquid if needed

    Hoff Thoughts: *Freezing without the lid or any covering helps to prevent the “volcano” mound from forming. Should a mound form simply scrape with the back of a spoon & smooth over shavings until a level base is formed, this prevents the blade from cutting into the container.

    Ingredients:
    • 2 cups Veggie Broth
    • 1 cup Jasmine Rice
    • 1/2 cup Quinoa
    • 7 oz Firm Tofu (cubed) or 1 cup Soy Curls (rehydrated)
    • 10 oz bag frozen Butternut Squash or Sweet Potatoes (defrosted)
    • 10 oz bag frozen Broccoli or Brussels Sprouts
    • 15 oz. can Chickpeas (rinsed & drained)
    • 1/2 Red Onion (chopped)
    • 2 tbsp dried Cranberries (reserved)
    • 2 tbsp chopped Walnuts (reserved)

    Directions:
    1. Preheat oven to 400 degrees
    2. Mix Broth, Rice & Quinoa together in IP
    3. Lock lid in place and make sure pressure release valve is closed
    4. Press "Manual" button & reduce time to 3 minutes
    5. When done, use manual release method for 10 minutes, then quick release
    6. In a 9x13 baking dish add remaining ingredients
    7. Bake uncovered for 60 minutes
    8. Serve roasted bits over Rice/Quinoa
    9. Finish with Cranberries & Pumpkin Seeds
    10. Serve with Tahini or Hummus

    Yields: 6-8 servings
    meat-free, dairy-free, egg-free



    Ingredients:
    • 6 cups Veggie Broth
    • 2-3 Peppers (chopped)
    • 1 cup Soy Crumbles or 15 oz can Lentils
    • 1 cup Jasmine Rice
    • 1 jar Spaghetti Sauce
    • 1 medium Onion (chopped)
    • 2 Garlic Cloves (minced)
    • 2 tbsp Almond Butter Powder
    • 2 tbsp Italian Seasoning
    • 2 tbsp Nutritional Yeast
    • 1 tbsp White Sugar 
    • 1 tbsp Hoff Seasoning
    • Salt to taste

    Directions:
    1. Dump everything into a large pot, stir, bring to boil
    2. Rice should be done in 15 minutes
    3. Time to eat!

    Hoff Thoughts: Or throw into an Instant Pot & cook for 3 minutes.

    Ingredients:

    • 16 oz. Gluten-free Pasta
    • 1/2 cup TVP
    • Hoff’s Cheese Sauce
    • 1 15 oz. can Black Beans (rinsed & drained)
    • 1 15 oz. can Organic Corn (rinsed & drained)
    • 2 tbsp. Taco Seasoning
    • 1 tsp. Salt

    1. Prepare Pasta according to package directions, adding Black Beans & Corn with Pasta once water is boiling
    2. Rehydrate TVP with 1 tbsp. Taco Seasoning, microwave 2 minutes
    3. Prepare Hoff’s Cheese Sauce swapping Seasonings for 1 tbsp. Taco Seasoning & Salt
    4. Once everything is ready, stir together & serve

    Mix-in:
    • 1 tsp dried Dill

    1. Blend all ingredients together

    Easier Basic DIY Yogurt (IP)

    Yields: 2-3 cups
    dairy-free, egg-free, gluten-free, oil-free



    Ingredients:


    Directions (Instant Pot):
    1. Blend Tofu, Water & Probiotics or Yogurt Starter OR whisk Soy Milk & Probiotics or Yogurt Starter
    2. Pour directly into Instant Pot
    3. Cover with lid
    4. Select Yogurt setting & change time to 8 (mild) or 12 (tart) hours
    5. Transfer Yogurt to another container or cool & strain for a thicker consistency & to retrieve Whey for next batch
    6. Serve desired amount with jam, fruit, nuts, etc. or use to make a sauce

    Hoff Thoughts: 
    • Sterilize IP liner by placing in 400 degree oven for 15 minutes
    • Soy Milk should be room temperature or no hotter than 110 degrees, if using
    • Your IP will never come up to pressure, the timer will start at zero & go up until the time set; that’s how you know it’s working
    • Freeze some of the “Whey” to start your next batch of Yogurt (up to 2-3 times) instead of using Probiotics or starter
    • Yogurt good up to two weeks
    • Store Probiotics or Yogurt Starter in refrigerator
    • Yogurt Starter can make up to 2 quarts or 8 cups of Milk into Yogurt

    24 hour prep time
    Yields: 4 Pints

    Ingredients:
    • 2 - 15 oz can Black Beans (rinsed & drained)
    • 4 cups Plant-based Milk
    • 10 Dates
    • 8 tbsp Cacao Powder
    • 1 tsp Sea Salt

    Directions:
    1. Add all ingredients to a high-speed blender like a Vitamix
    2. Blend until smooth about 30 seconds
    3. Divide mixture into four Ninja Creami Containers
    4. Place in freezer for 24 hours without the lid*
    5. When ready to enjoy, process using a Ninja Creami Deluxe Lite Ice Cream setting, Re-Spin if necessary, adding milk if needed
    6. Eat it all or place leftovers back into freezer till next time

    Ingredients:
    • 16 oz gluten-free Pasta
    • 1/2 cup TVP crumbles
    • 1 tsp Taco Seasoning
    • 1 cup Unflavored Milk Alternative or Water
    • 1/2 cup Nutritional Yeast
    • 1/2 cup Instant Mashed Potato Flakes
    • 1 tsp Lemon Juice
    • 2 tsp Taco Seasoning
    • 1 tsp Salt

    Directions:
    1. Rehydrate TVP with water & 1 tsp Taco Seasoning
    2. Cook Pasta according to directions
    3. Meanwhile in a high speed blender, blend remaining ingredients until hot about 3 minutes
    4. Drain Pasta, return to pot, mix in "Cheese Sauce" & TVP crumbles
    5. Enjoy!

    Ingredients:

    • Wrap
    • Cucumber Slices
    • Shredded Carrots
    • Spinach
    • Red Pepper Slices
    • Sliced Red Onion 
    • Pickle Slices
    • Sliced Black Olives
    • Hummus

     Directions:
    1. Spread Hummus onto one side of Wrap
    2. Pile remaining ingredients in center of Wrap
    3. Fold Wrap, roll in parchment paper & tape to hold 

    Hoff Thoughts: Recently I was called to fulfill my civic duty. This presented a challenge - lunch. These wraps solved all of my concerns:
    1. No refrigeration
    2. No microwave
    3. Easy to carry
    4. Filling
    The only downside is that this wrap is best made the same day; making the night before results in a soggy wrap.

    Ingredients:

    • 1 1/2 cups Jasmine Rice
    • 2 cups Water
    • 7 oz firm Tofu (cubed)
      • 1 tbsp Maple Syrup
      • 1 tbsp Braggs
    • 1 bunch Asparagus (chopped)
    • 1 Carrot (shredded)
    • 1 Cucumber (shredded)
    • 1/2 cup frozen Shelled Edamame
    • Sesame Seeds or Everything But The Bagel Seasoning
    • Braggs to taste

    Directions:
    1. Marinate Tofu in Braggs & Maple Syrup for at least 15 minutes or overnight
    2. Stir Rice & Water in Instant Pot & cook on Manual for 3 minutes, Natural Release
    3. Meanwhile, Airfryer Tofu & Asparagus at 400 degrees for 15 minutes
    4. At the same defrost the Edamame in bowl of hot water
    5. Assemble bowls
    6. Season with Braggs, finish with Sesame Seeds

    Ingredients:

    • 1 box gluten-free Cake Mix
    • 12 oz Soda

    Directions:
    1. Preheat oven to 350 degrees
    2. In a medium measuring cup, mix Cake mix with Soda, adding a little at a time to prevent Soda from spilling over
    3. Cake batter will be gummy at first, keep mixing until mixture is like pancake batter 
    4. Pour into 8x8 silicon baking dish
    5. Bake 40-45 minutes until Cake is set

    Yields: 4 Large Pitas

    Ingredients:
    • 6 Pitas
    • Shredded Lettuce
    • Baby Cucumber (cut into spears)
    • Cherry Tomatoes (halved)
    • Avocado or Guacamole
    • Red Onion (sliced)
    • Black Olives
    • Pickle Relish/Pickle Chips
    • Imitation Bacon Bits
    • Plain Hummus or Vegan Ranch Dressing
    • Mustard

     Directions:
    1. Toast Pitas for 4 minutes to make malleable
    2. Cut each Pita in half
    3. Use a knife to spread Hummus/Guacamole inside Pita
    4. Stuff with remaining ingredients

    Hoff Thoughts: I find it easier to mix all the ingredients in a bowl & then spoon into each Pita or cut the Pita into pieces, add to the bowl & serve as a salad.

    Ingredients:

    • 1 1/2 cups Water
    • 1 cup Quinoa
    • 2 tsp. Better Than Bouillon® Seasoned Vegetable Base
    • 1 box Cremini Mushrooms (chopped)
    • 1 Zucchini (sliced)
    • 1 bunch Asparagus (chopped)
    • 1 Red Pepper (chopped)
    • 15 oz. can Chickpeas (rinsed & drained)
    • 7 oz firm Tofu (cubed)
    • 1/2 Red Onion (chopped)
    • Sunflower or Pumpkin Seeds (optional)
    Directions:
    1. Mix Water, Quinoa & Boullion together in IP
    2. Lock lid in place and make sure pressure release valve is closed
    3. Press "Manual" button & reduce time to 5 minutes
    4. When done, use manual release method for 10 minutes, then quick release
    5. Broil everything else at 450 degrees for 30 minutes
    6. Serve broiled items over Quinoa
    7. Finish with Hummus, Avocado/Guacamole or Lemon Tahini & Seeds

    • 1 cup Plant-based Milk or Water

    Directions:
