Hoff's Chickpea Cranberry Salad
Yields: enough for 6 wrapsmeat-free, dairy-free, egg-free
Ingredients:
- 6 Wraps
- 2 - 15 oz. can Chickpeas (rinsed & drained)
- 1/4 cup dried Cranberries
- 1/4 cup chopped Sweet Onion
- 3 tbsp plain Hummus
- 2 tbsp Pickle Relish
- 2 tbsp Mustard
- 1 tbsp Lemon Juice
- Salt & Pepper to taste
Directions:
- Using a food processor, pulse Chickpeas until desired texture is achieved
- Mix in remaining ingredients
- Allow to chill in the fridge before spreading onto toasted Bread or use as a Wrap filling
