Hoff's Chickpea Cranberry Salad

Yields: enough for 6 wraps
meat-free, dairy-free, egg-free



Ingredients:
  • 6 Wraps
  • 2 - 15 oz. can Chickpeas (rinsed & drained)
  • 1/4 cup dried Cranberries
  • 1/4 cup chopped Sweet Onion
  • 3 tbsp plain Hummus
  • 2 tbsp Pickle Relish
  • 2 tbsp Mustard
  • 1 tbsp Lemon Juice
  • Salt & Pepper to taste

Directions:
  1. Using a food processor, pulse Chickpeas until desired texture is achieved
  2. Mix in remaining ingredients
  3. Allow to chill in the fridge before spreading onto toasted Bread or use as a Wrap filling
