Hoff's Baked Veggie Lo Mein
Yields: 5-6 servings
meat-free, dairy-free, egg-free, oil-free, gluten-free
Noodles:
- 12 oz Spaghetti Noodles or Rice Noodles
Ingredients:
Sauce Ingredients:
Directions:
- 1 cup Soy Curls (rehydrated) or 7 oz Firm Tofu (cubed)
- 1 head Broccoli (chopped)
- 1 cartoon Mushrooms (sliced)
- 1 cup Edamame
- 1 cup Shredded Cabbage
- 1 Red Pepper (chopped)
- 1/2 Sweet Onion (chopped)
Sauce Ingredients:
- 1/2 cup Bragg Liquid Aminos
- 1/2 cup Water
- 1 tbsp Mirin or Garlic Rice Vinegar
- 1 tbsp Brown Sugar
- 1 tbsp Corn Starch
- 1 tsp minced Garlic
Directions:
- Whisk sauce ingredients together or shake together using a jar
- Stir Veggies & sauce together in a glass baking dish
- Bake at 400 degrees for 40 minutes
- Meanwhile prepare Pasta
- Once everything is cooked, combine everything together
- Finish with Lime Juice & Tahini
