Hoff's Baked Veggie Lo Mein

Yields: 5-6 servings
meat-free, dairy-free, egg-freeoil-free, gluten-free



Noodles:
  • 12 oz Spaghetti Noodles or Rice Noodles

Ingredients:
  • 1 cup Soy Curls (rehydrated) or 7 oz Firm Tofu (cubed)
  • 1 head Broccoli (chopped) 
  • 1 cartoon Mushrooms (sliced) 
  • 1 cup Edamame 
  • 1 cup Shredded Cabbage
  • 1 Red Pepper (chopped) 
  • 1/2 Sweet Onion (chopped)

Sauce Ingredients:
  • 1/2 cup Bragg Liquid Aminos
  • 1/2 cup Water
  • 1 tbsp Mirin or Garlic Rice Vinegar
  • 1 tbsp Brown Sugar
  • 1 tbsp Corn Starch
  • 1 tsp minced Garlic

Directions:
  1. Whisk sauce ingredients together or shake together using a jar
  2. Stir Veggies & sauce together in a glass baking dish
  3. Bake at 400 degrees for 40 minutes
  4. Meanwhile prepare Pasta
  5. Once everything is cooked, combine everything together
  6. Finish with Lime Juice & Tahini
