Hoff's Tacos/Burrito/Salad Filling (IP)



Hoff's Tacos/Burrito/Salad Filling (IP)
Yields: about 4 cups
meat-free, dairy-free, egg-free, oil-free, gluten-free, soy-free


Ingredients:
  • 1/2 cup Jasmine White Rice
  • 1/2 cup Water
  • 10.6 oz Upton’s Chili Lime Carnitas Jackfruit
  • 15 oz can Black Beans (w/liquid)
  • 1/4 cup frozen Organic Corn
  • 1/4 cup Salsa
  • 3 tbsp. Sugar (optional)

    Directions:
    1. Mix everything together in IP
    2. Close & lock lid
    3. Set Pressure Valve to Sealing
    4. Select Steam setting on High Pressure & cook for 3 minutes
    5. Natural release pressure
    6. Great for Tacos, Burritos & more...

    Hoff Thoughts: The Jackfruit mix is too spicy for me, hence the sugar, but if you don’t mind a kick, leave it out.

    Hoff’s Stuffed Mushrooms



    Hoff's Stuffed Mushrooms
    Yields: about 10 Mushrooms

    meat-free, dairy-free, egg-free, gluten-free, oil-free

    Ingredients:
    • 1 cartoon Button Mushrooms (stems removed)
    • 2 tbsp. GF Bread Crumbs
    • 2 tbsp. Nutritional Yeast
    • 2 tbsp. Braggs
    • 1 tsp. Italian Seasonings
    • 1/2 tsp. Onion
    • 1/2 tsp. Garlic

     Directions:
    1. Preheat oven to 350 degrees
    2. Mix everything but the Mushrooms together in a small bowl
    3. Using a spoon, gently fill each Mushroom
    4. Space apart Mushrooms on a silicon lined baking sheet
    5. Spray Mushrooms with additional Braggs
    6. Bake for 15-20 minutes
    7. Watch that the topping does not burn
    8. Enjoy!

    Rice Paper Bacon!

    Rice Paper Bacon!

    Yields: 12 pieces
    meat-free, dairy-free, egg-free, gluten-free, oil-free

    Ingredients:
    • 4 sheets Rice Paper
    Marinade:
    • 2 tbsp. Braggs
    • 1 tbsp. Maple Syrup
    • 2 tsp. Liquid Smoke
    • 1 tsp. Honey
    • 1/2 tsp. Paprika
    • 1/2 tsp. Garlic
    • Pepper

     Directions:
    1. Whisk marinade ingredients together in a medium bowel, you want enough room to work with the Bacon, set aside
    2. Place warm water in a shallow dish, like a pie dish
    3. Soak two Rice Paper sheets together for about 10 seconds
    4. Place on cutting board and using a large knife, cut one slice about the size of Bacon 
    5. Immediately transfer Bacon to marinade and coat both sides
    6. Lay Bacon on silicon lined baking sheet
    7. Continue step 4 - 6 until all Bacon is prepared
    8. Sprinkle left over marinade over Bacon
    9. Bake at 400 degrees for 7 minutes
    10. DO NOT walk away, Bacon will go from crisp to burnt very quickly
    11. Bacon will continue to cook on baking sheet until removed
    12. Good hot & cold

    Hoff’s General Tso Sauce

    Yields: 1 1/4 cup
    dairy-free, egg-free, oil-free, gluten-free

    Ingredients:
    • 1/2 cup Water
    • 1/2 cup Braggs
    • 1/4 cup  Maple Syrup
    • 2 tbsp. Old Fashioned Oats
    • 2 tbsp. Rice Vinegar
    • 1 tbsp. Tomato Paste
    • 1 tbsp. Molasses
    • 1 tbsp. minced Garlic
    • 1 tsp. Ginger
    Directions:
    1. Blend all ingredients using a high speed blender for 6 minutes
    2. Serve over veggies, rice, etc.

    Hoff’s Tomato & Rice Soup
    Serves: 4
    meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free 

    Ingredients:

    • 4 cups Veggie Broth
    • 1 14.5 oz can Diced Tomatoes
    • 1 15 oz can Tomato Purée
    • 1 cup prepared Rice
    • 2 tbsp. Old Fashioned Oats
    • 1 tsp. Sugar
    • 1 tsp. Smoked Paprika 
    • 1 tsp. Onion Powder
    • 1 tsp. Garlic Powder

    Directions:
    1. Place all ingredients (except Rice) in a Vitamix & blend on high for 6 minutes
    2. Stir in Rice
    3. Serve!

    Hoff’s Quinoa & Black Bean Sweet Potato (IP/Oven)

    Hoff’s Quinoa & Black Bean Sweet Potato
    Serves: 2
    dairy-free, egg-free, oil-free, gluten-free, soy-free

    Ingredients:
    • 2 large Sweet Potatoes
    • 1/2 cup Quinoa
    • 1/2 cup Water
    • 1 15 oz. can Black Beans (w/liquid)
    • Diced Red Onion
    • 1 tsp. Paprika
    • 1 tsp. Cumin
    • 1 tsp. Onion Powder
    • 1 tsp. Garlic Powder
    • Sea Salt
     Directions:
    1. Preheat oven to 400 degrees
    2. Wash and pierce each Potato a few times
    3. Place Potatoes directly on oven rack & bake for 1 hour to 1 1/2 hours (the bigger the Potato, the longer the cook time)
    4. Meanwhile, in an Instant Pot combine Quinoa, Water, Black Beans & Seasonings
    5. Close & lock lid
    6. Set Pressure Valve to Sealing
    7. Select Manual setting on High Pressure & cook for 4 minutes
    8. Natural release pressure for 10 minutes, then Quick
    9. Cut each Potato in half, season with Sea Salt
    10. Divide Black Bean mixture between each Potato & top with Red Onion
    11. Enjoy!
