Hoff's Hummus Pasta
Yields: 5-6 servingsmeat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free*
Ingredients:
- 12 oz. Pasta of choice
- 1/2 cup Pasta Water (reserved)
- 1 Zucchini (shredded)
- 15 oz can Navy Beans (rinsed & drained)
- 10 oz Hummus of choice*
- 2 tbsp Lemon Juice
Directions:
- Cook Pasta according to directions, with 5 minutes left add Zucchini
- Drain Pasta over Beans
- Mix Hummus with Pasta Water to desired consistency
- Mix everything together
- Plate & eat!
