Hoff's Hummus Pasta

Yields: 5-6 servings
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free*



Ingredients:
  • 12 oz. Pasta of choice
  • 1/2 cup Pasta Water (reserved)
  • 1 Zucchini (shredded)
  • 15 oz can Navy Beans (rinsed & drained)
  • 10 oz Hummus of choice*
  • 2 tbsp Lemon Juice

Directions:
  1. Cook Pasta according to directions, with 5 minutes left add Zucchini
  2. Drain Pasta over Beans
  3. Mix Hummus with Pasta Water to desired consistency
  4. Mix everything together
  5. Plate & eat!
