Sweet Korean Red Lentils (IP)
Yields: 2 Servings
meat-free, dairy-free, egg-free, oil-free, gluten-free, soy-free*

Ingredients:

  • 1 1/2 cups Water 
  • 1 cup Spinach (optional green add!)
  • 1 cup Red Lentils
  • 1/2 Sweet Onion (chopped)
  • 1/4 cup Braggs/Coconut Aminos*
  • 2 tbsp. Coconut Sugar
  • 2 Garlic Cloves (minced)
  • 2 tsp. Ginger (minced)
Directions:
  1. Mix everything together in the IP
  2. Lock lid in place and make sure pressure release valve is closed
  3. Press "Manual" button & reduce time to 15 minutes
  4. When done, use manual release method for 10 minutes, then quick release
  5. Mix in fresh Spinach until wilted down
  6. Serve over Rice
