Hoff's Swiss Chard Pasta

Hoff's Swiss Chard Pasta
Yields: 4 servings
meat-free, dairy-free, egg-free, oil-free, soy-free

Ingredients:
  • 16 oz. Whole Wheat Pasta
  • 1/2 cup cooked Pasta Water reserved
  • 2 bunches Swiss Chard (chopped & stems removed)
  • 1 15 oz. can White Beans (rinsed & drained)
  • 3.8 oz. sliced Black Olives (rinsed & drained)
  • 1 Onion (half moon slices)
  • 4 cloves Garlic (diced)
  • 4 tbsp. Nutritional Yeast
  • 1 tsp. Sea Salt
  • 1/2 tsp. Onion Powder
  • 1/2 tsp. Garlic Powder

Directions:
  1. Cook Pasta according to directions
  2. Meanwhile, in a non-stick pan over medium-high heat, satuee Onions
  3. Add Garlic for a few seconds before adding Swiss Chard & reserved cooking Water
  4. Allow to wilt down, about 10 minutes
  5. Stir in White Beans & Black Olives
  6. Mix in Pasta, Nutritional Yeast and Seasonings - serve!
