Hoff’s Lemon Pasta
meat-free, dairy-free, egg-free, oil-free, gluten-free, soy-free
Ingredients: 
- 16oz gluten-free Pasta
 - 1 cup Pasta Water (reserved)
 - 1 Zucchini (shredded)
 - 2.25 oz can sliced Black Olives (rinsed & drained)
 - 1/2 cup Nutritional Yeast
 - Juice from 1 Lemon
 - 1 tbsp minced Garlic
 - Season w/Salt & Pepper
 - Imitation Bacon Bits
 
- Prepare Pasta according to package directions
 - Add Zucchini with 5 minutes remaining
 - Drain Pasta & return to pot
 - Mix in remaining ingredients
 - Finish with Bacon Bits
 
Hoff Thoughts: Add cooked veggies to Pasta: Asparagus, Broccoli, Basil, Peas or Green Beans or really kick this up a notch with Daring Lemon Chicken.
