Hoff's High Fiber Gluten-Free

Yields: About 12 muffins
dairy-free, egg-freeoil-free, gluten-free


Ingredients:

Dry Ingredients
  • 1 cup Oat Flour
  • 1/2 cup Whole Oat
  • 1 cup Brown/White Sugar
  • 1/4 cup ground Flax Seed
  • 1/4 cup Chia Seeds
  • 1 tbsp Cinnamon
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Sea Salt
Wet Ingredients
  • 3/4 cup Water
  • 1 cup Blueberries
  • 1 (15 oz) can Pumpkin
  • Juice from 1/2 Lemon

Directions:
  1. Preheat oven to 450 degrees
  2. In large food processor combine dry ingredients
  3. Add wet mixture (except Blueberries) to the dry mixture, combine for 30 seconds (not too much)
  4. Fold in Blueberries
  5. Pour batter silicon Muffin pan & bake for 5 minutes at 450; decrease to 375 degrees & bake for an additional 25-30 minutes
Hoff Thoughts: This dense muffin yields about 3 grams of fiber per muffin.
