Hoff's Mushroom Stroganoff III

Hoff's Mushroom Stroganoff III
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients:

  • 16 oz. GF Pasta
  • 16 oz. Mushrooms (large chop)
  • 4 cups Vegetable Broth
  • 2 tbsp. Braggs
  • 1 Sweet Onion (chopped)

Sauce Ingredients:

  • 12 oz. frozen Cauliflower (thawed or steamed)
  • 1 1/2 cups unsweetened plain Plant-Milk
  • Juice from 1/2 Lemon
  • 2 tbsp. Nutritional Yeast
  • 2 tsp. minced Garlic
  • 1 tsp. Miso (optional)
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder 
  • pinch of Nutmeg
  • Season with Sea Salt

Directions:
  1. In a large pot over medium-high heat, sautee Mushrooms & Onions in Aminos until caramelized
  2. Stir-in Pasta & Broth
  3. Bring to a boil, reduce to simmer, cover & cook for 17 minutes
  4. Meanwhile in a Vitamix, blend Sauce ingredients for 6 minutes
  5. Combine Sauce & Pasta, dig-in
