Hoff's Spring Pasta



Hoff's Spring Pasta
Yields: 5-6 servings
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free*

Ingredients:
  • 16 oz. Pasta of choice*
  • 1/2 cup Pasta Water (reserved, if needed)
  • 1 carton sliced Mushrooms
  • 1 bunch Asparagus (chopped)
  • 1 Onion (sliced)
  • Juice from 1/2 Lemon
  • 1/3 cup Nutritional Yeast
  • 1 tsp. minced Garlic
  • 1 tsp. Broth Stock Powder
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder 
  • Salt & Pepper to taste

Directions:
  1. Cook Pasta according to directions
  2. Meanwhile sauté Onions until they begin to sweat
  3. Add minced Garlic, stirring for 30 seconds
  4. Add Mushrooms & Asparagus, stirring periodically until cooked
  5. Add to cooked Pasta, along with remaining ingredients 
  6. If too dry, stir in reserved Pasta Water
  7. Plate & eat!
