Hoff's Black Bean, Sweet Potato Bowl

Hoff's Black Bean, Sweet Potato Bowl
Serves: 2
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free

  • 2 cups Brown Rice (prepared)
  • 1 16 oz. can Sweet Potatoes in Pineapple Juice
  • 1 15.5 oz. can Black Beans (rinsed & drained)
  • 1/4 cup Cashews (chopped)
  • 1 Lime 
  • Splash of Liquid Smoke (optional)
  • 1 tsp. Cumin
  • 1/2 tsp. Sea Salt

  1. Warm Rice, Sweet Potatoes and Black Beans together
  2. Add Liquid Smoke, Sea Salt, Cumin and juice from Lime
  3. Divide mixture into two bowls
  4. Sprinkle Cashews on top of each

Hoff Thoughts: Add seasonings at the end of cooking, so their flavor is greater and less seasoning is needed.
