Hoff's Instant Pot Stew (IP)
Serves: 6-8meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free
Ingredients:
- 3 cups Water
- 1 cup Soy Curls
- 1 carton Mushrooms (chopped)
- 2 tbsp Better than Bouillon No Beef Broth
- 2 tbsp Braggs Liquid Aminos
- 2 tbsp Tomato Paste
- 2 cups Baby Yellow Potatoes (chopped)
- 2 Carrots (chopped)
- 1/2 cup Organic frozen Corn
- 15 oz can Green Beans (rinsed & drained)
- 1 small Sweet Onion (chopped)
- 2 tsp minced Garlic
- 2 tbsp Corn Starch
- 2 tbsp Brown Sugar
- 1 tsp Thyme
- 1 tsp Rosemary
- 1 tsp Paprika
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
Directions:
- Stir Water & Beef Boulion, Braggs, Tomato Paste & all seasonings in IP, mix in Soy Curls, Mushrooms & Onions
- Top with Potatoes, then Carrots, then Green Beans & Corn
- Lock lid in place and make sure pressure release valve is closed
- Press "Manual" button, reduce time to 15 minutes
- When done, use quick release method
- Mix every thing together, enjoy!
