Hoff's Breakfast Sammy

Yields: 6 sandwiches
meat-free, dairy-free, egg-free


Ingredients:

  • 6 English Muffins
  • 14 oz firm Tofu
  • 6 Beyond Sausage Patties (optional)
  • Vegan Cheese (optional)
  • Avocado (sliced) or Guacamole or Strawberry Jam
Marinade Ingredients:
  • 2 tbsp Braggs
  • 2 tbsp Maple Syrup
  • 2 tbsp Nutritional Yeast
  • 1 tbsp Corn Starch
  • 2 tsp Hoff’s Seasoning or Everything But The Bagel Seasoning
  • 1 tsp Black Salt

Directions:
  1. Slice Tofu in half, turn on side, slice into 3rds, creating 6 equal pieces
  2. Mix Marinade in shallow 7x11 dish
  3. Press Tofu into Marinade, flip, coat other side
  4. Meanwhile, toast English Muffins with Cheese
  5. Air-fry Tofu & Sausage at 400 for 10 minutes
  6. Remove Sausage, flip Tofu
  7. Air-fry Tofu at 400 for another 10 minutes
  8. Assemble sandwich, enjoy!

Hoff's Baked Veggie Lo Mein

Hoff's Baked Veggie Lo Mein

Yields: 5-6 servings
meat-free, dairy-free, egg-freeoil-free, gluten-free



Noodles:
  • 12 oz Spaghetti Noodles or Rice Noodles

Ingredients:
  • 1 cup Soy Curls (rehydrated) or 7 oz Firm Tofu (cubed)
  • 1 head Broccoli (chopped) 
  • 1 cartoon Mushrooms (sliced) 
  • 1 cup Edamame 
  • 1 cup Shredded Cabbage
  • 1 Red Pepper (chopped) 
  • 1/2 Sweet Onion (chopped)

Sauce Ingredients:
  • 1/2 cup Bragg Liquid Aminos
  • 1/2 cup Water
  • 1 tbsp Mirin or Garlic Rice Vinegar
  • 1 tbsp Brown Sugar
  • 1 tbsp Corn Starch
  • 1 tsp minced Garlic

Directions:
  1. Whisk sauce ingredients together or shake together using a jar
  2. Stir Veggies & sauce together in a glass baking dish
  3. Bake at 400 degrees for 40 minutes
  4. Meanwhile prepare Pasta
  5. Once everything is cooked, combine everything together
  6. Finish with Lime Juice & Tahini

Hoff’s Mashed Potato Waffles

Hoff’s Mashed Potato Waffles

Yields: about 6 waffles
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free



Ingredients: 

    • 2 cups Mashed Potato Flakes
    • 1 1/2 cups Water
    • 1/2 Onion (corse chopped)
    • 1 tbsp minced Garlic
    • 1 tbsp Imitation Bacon Bits (yes they are vegan)
    • 1 tbsp Nutritional Yeast
    • 1 tbsp Everything But the Bagel


    Directions:

    1. Preheat Cuisinart Griddler with waffle plates
    2. Mix all ingredients together, forming a dry dough that just holds together
    3. Place two scoops of mixture per waffle, spread out
    4. Cook about 15 minutes until crispy
    5. Serve with favorite fry condiments: Ketchup, Mustard, Just Mayo, etc.

    Hoff's Instant Pot Stew (IP)

    Serves: 6-8
    meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free


    Ingredients: 
    • 3 cups Water
    • 1 cup Soy Curls
    • 1 carton Mushrooms (chopped)
    • 2 tbsp Better than Bouillon No Beef Broth
    • 2 tbsp Braggs Liquid Aminos
    • 2 tbsp Tomato Paste
    • 2 cups Baby Yellow Potatoes (chopped)
    • 2 Carrots (chopped)
    • 1/2 cup Organic frozen Corn
    • 15 oz can Green Beans (rinsed & drained)
    • 1 small Sweet Onion (chopped)
    • 2 tsp minced Garlic
    • 2 tbsp Corn Starch
    • 2 tbsp Brown Sugar
    • 1 tsp Thyme
    • 1 tsp Rosemary
    • 1 tsp Paprika
    • 1 tsp Garlic Powder 
    • 1 tsp Onion Powder

    Directions: 
    1. Stir Water & Beef Boulion, Braggs, Tomato Paste & all seasonings in IP, mix in Soy Curls, Mushrooms & Onions
    2. Top with Potatoes, then Carrots, then Green Beans & Corn
    3. Lock lid in place and make sure pressure release valve is closed 
    4. Press "Manual" button, reduce time to 15 minutes 
    5. When done, use quick release method
    6. Mix every thing together, enjoy!
