Portabella Hummus Caps

This recipe can be used as an appetizer (cut into bite size pieces & served with toothpicks), snack or mini meal - whatever you're in the mood for!  I actually like taking one cap to work for lunch - very filling!

Ingredients:
  • 2 Portabella Mushroom Caps
  • Hoff's Red Pepper Hummus (or whatever hummus you have)
  • Onions (chopped)
  • Sprouts
  • BBQ Sauce
  • Mustard (optional)
Directions:
  1. Prepare the Mushroom caps by removing the stem and gills, this can be done with a spoon & rinse
  2. Slather on a layer of BBQ Sauce on the inside of the cap
  3. Mound a generous amount of Hummus
  4. Layer on Onions & Sprouts
  5. Swirl on some Mustard
  6. That's it!
My2Cents: I'm not very into raw food - aside from wraps and smoothies, I don't eat as many raw foods as I should.  So, it's rather cool that every time I eat this "sandwich" how "alive" it feels - so fresh, so full of energy.  Kinda hard to explain, you'll just have to experience it for yourself!
