Hoff's Fruit Cobbler
Servings: 2-4
dairy-free, egg-free, oil-free, soy-free, gluten-free
Cobbler Base Ingredients:
- 2 cups frozen/fresh Fruit of choice
- 1 tbsp Brown Sugar
- 1 tbsp Corn Starch
- 1/2 tsp Lemon Juice
Cobbler Topping:
- 1 cup Old Fashioned Oats
- 3/4 cup Water
- 2 tbsp Brown Sugar
- 1 tsp Almond Powder
- 1 tsp Vanilla Powder
- 1/2 tsp Baking Powder
- 1/4 tsp Salt
Directions:
- Preheat oven to 400 degrees
- Add Fruit to 9x9 baking dish, mix with Corn Starch, next stir-in Brown Sugar & Lemon Juice
- Blend Oats to form “flour”
- Add remaining Topping ingredients, blend for 30 seconds
- Evenly spread topping over Fruit
- Bake for 25 minutes uncovered
Hoff Thoughts: Some fruit ideas include: Cherries, Blackberries, Strawberries, Berry Mix, Pears, Peaches, Fresh Apples (add 1 tsp Cinnamon, cook for 40 minutes).
