Hoff's Quinoa Nachos/Taco Salad II

Hoff's Quinoa Nachos/Taco Salad II
Yields: two hearty entrees
meat-free, dairy-free, egg-free, soy-free, gluten-free

Ingredients:

Nacho "Meat"
  • 1 cup Quinoa
  • 1 1/2 cups Veggie Broth
  • 1 tsp. Taco Seasoning
  • 1 tsp. Cumin
  • 1 tsp. smoked Paprika
  • 1 tsp. Garlic Powder
  • 1 tsp. Sea Salt
Cheese Sauce:
  • 1 14 oz. bag frozen Cauliflower (defrosted)
  • 1/2 cup unsweetened plain Plant Milk
  • 1/2 cup Salsa
  • 1/2 cup Nutritional Yeast
Nachos:
  • Organic Corn Chips/2 cups Romain Lettuce + 1/4 cup broken Chips
  • 1 Avocado (chopped/optional)
  • 2 tbsp. diced Onion
  • 1 15 oz. can Black Beans
  • 1 15 oz. can organic Corn (rinsed & drained)

Directions:
  1. Prepare Quinoa per the box directions, adding the rest of the ingredients, I prefer using the Instant Pot - throw all the ingredients in the IP, seal & lock lid, set Manual timer for 4 minutes, allow to Natural release for 10 minutes, then Quick release
  2. Meanwhile put Cheese Sauce ingredients into Vitamix & blend on high for 6 minutes
  3. Separately, mix together & heat up Black Beans & Tomatoes (drain before serving)
  4. When the Quinoa, Cheese & Beans are done, assemble your Nachos or Salad anyway you see fit

  1. Just found your website and love it! I am very new to this way of eating so I am collecting recipes all over the place. I don't own a Vitamix so when you say, mix for 6 minutes what is the alternative? Thank you!

  2. Good instincts, a regular blender would burn up if run that long. The only thing the Vitamix is doing is heating up the sauce, so just blend until combined and heat through on the stove on microwave.
