Hoff's Roasted Veggie Wrap II
Yields: 4 servingsmeat-free, dairy-free, egg-free, oil-free, gluten-free, soy-free
Ingredients:
- 4 Gluten-free Wraps
- 1 cup Baby Spinach or Cole Slaw mix
- 1 Zucchini (sliced)
- 4 Portobello Mushrooms (thinly sliced)
- 2 Roma Tomatoes (sliced)
- 1 Avocado (optional)
- 1 Red Pepper (sliced)
- 1 small Onion (sliced)
- Hummus
- Salt & Lemon Pepper to taste
Directions:
- Air-fry Veggies (except Spinach & Avocado) at 400 degrees for 20 minutes
- Spread Hummus onto one side of Wrap and layer with Veggies, Avocado & Spinach, season with Salt & Lemon Pepper
- Roll into a "burrito" & enjoy!
Hoff Thoughts: Crisp these up by placing in a 450 degree oven for 14 minutes.
