Hoff’s Rice Noodle Soup IP

Yields: 6 servings
meat-free, dairy-free, egg-free, oil-free, gluten-free


Ingredients:
  • 4 cups Veggie Broth
  • 4 cups Water
  • 1 bunch Rice Noodles
  • 1 cup Brown Rice or Quinoa
  • 12 oz. frozen Broccoli Florets
  • 15 oz. can Lentils (rinsed & drained) or 1 cup Edamame
  • 1 cup Cabbage (chopped)
  • 1 Zucchini (shredded)
  • 1 cup Mushrooms (shredded)
  • 1/2 cup Onions (chopped)
  • 1 sheet Seaweed (in pieces)
  • 1 tbsp. Minced Garlic
  • 1/2 cup Braggs
  • 4 tbsp. Sweet & Sour Sauce
  • 3 tbsp. Brown Sugar
  • 1 tbsp. Tamarind Paste
  • 2 tsp. powdered Ginger

Directions:
  1. Add all ingredients to the IP except Rice Noodle & Broccoli
  2. Lock lid in place and make sure pressure release valve is closed
  3. Press "Manual" button & reduce time to 22 minutes
  4. When done, use manual release method
  5. Add Rice Noodles & Broccoli to soup; wait a few minutes until Rice Noodles are cooked before serving
