Hoff's Red Lentil Pumpkin Dal

Yields: 5-6 servings
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free


Ingredients:

  • 2 cups Jasmine Rice (prepared)*
  • 1 cup Spinach*
  • 1 cup Almond Milk*
  • 1 cup Red Lentils
  • 1.5 cups Water
  • 1 15 oz. can Chickpeas (rinsed & drained)
  • 1 15 oz. can Pumpkin
  • 1 15 oz. can diced Tomatoes
  • 1 Sweet Onion (half moon slices)
  • Juice from 1 Lemon
  • 1 tbsp. minced Garlic
  • 1 tbsp. Garam Masala
  • 1 tbsp. Brown Sugar 
  • 1 tsp. Onion Powder
  • 1 tsp. Garlic Powder
  • Season with Sea Salt

 

Directions:

  1. Mix everything together in IP (except* prepared Rice, Milk, Spinach & Lemon Juice)
  2. Close & lock lid
  3. Set Pressure Valve to Sealing
  4. Select Manual setting on High Pressure & cook for 2 minutes
  5. Natural release pressure for 10 minutes
  6. Stir in Milk, Spinach & Lemon Juice
  7. Plate Rice, layer with Dal - enjoy!
