Hoff’s Spring Rolls w/Dipping Sauce

Hoff’s Spring Rolls

meat-free, dairy-free, egg-free, oil-free, gluten-free

Yields: about 6 Rolls

Roll Ingredients:

  • Rice Paper Wrappers
  • 10-12 oz. package of Rice Noodles
  • Greens (of choice, shredded)
  • Cucumber (shredded)
  • Carrots (shredded)
  • Edamame (optional)
  • Avocado (optional)

Dipping Sauce Ingredients:

  • 1/4 cup Almond Butter Powder
  • 2 tbsp. Braggs
  • 1 tbsp. Rice Vinegar
  • 1 tbsp. Maple Syrup
  • 1 tbsp. Lime Juice
  • 1 tsp. Ginger
  • Water


  1. Prepare Noodles according to the box directions, set aside to cool (must be cool before wrapping or Rice Paper will break apart)
  2. Soak Rice Paper in Water for about 20 seconds
  3. Assemble Rolls, set aside (careful not to let them touch each other)
  4. Whisk Sauce ingredients together (except Water) in a bowl or measuring cup
  5. Add small amounts of Water until desired consistency is reached
