Hoff's Quinoa w/Roasted Veggies (IP/Air Fryer)

Hoff's Quinoa w/Roasted Veggies (IP/Oven)
Yields: 4-6 Servings
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free




Ingredients:

  • 1 1/2 cups Water
  • 1 cup Quinoa
  • 2 tsp. Better Than Bouillon® Seasoned Vegetable Base
  • 2 Portabella Mushroom Caps (chopped)
  • 1 bunch Asparagus (chopped)
  • 1 Red Pepper (sliced)
  • 15 oz. can Chickpeas (rinsed & drained)
  • 7 oz firm Tofu (cubed)
  • 1/2 Red Onion (chopped)
  • Sunflower or Pumpkin Seeds (optional)
Directions:
  1. Mix Water, Quinoa & Boullion together in IP
  2. Lock lid in place and make sure pressure release valve is closed
  3. Press "Manual" button & reduce time to 5 minutes
  4. When done, use manual release method for 10 minutes, then quick release
  5. Broil everything else at 450 degrees for 30 minutes
  6. Serve broiled items over Quinoa
  7. Finish with Hummus, Avocado/Guacamole or Lemon Tahini & Seeds
