Hoff's Quinoa w/Roasted Veggies (IP/Oven)
Yields: 4-6 Servings
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free
Ingredients:
- 1 1/2 cups Water
- 1 cup Quinoa
- 2 tsp. Better Than Bouillon® Seasoned Vegetable Base
- 2 Portabella Mushroom Caps (chopped)
- 1 bunch Asparagus (chopped)
- 1 Red Pepper (sliced)
- 15 oz. can Chickpeas (rinsed & drained)
- 7 oz firm Tofu (cubed)
- 1/2 Red Onion (chopped)
- Sunflower or Pumpkin Seeds (optional)
- Mix Water, Quinoa & Boullion together in IP
- Lock lid in place and make sure pressure release valve is closed
- Press "Manual" button & reduce time to 5 minutes
- When done, use manual release method for 10 minutes, then quick release
- Broil everything else at 450 degrees for 30 minutes
- Serve broiled items over Quinoa
- Finish with Hummus, Avocado/Guacamole or Lemon Tahini & Seeds
