Cake Mix Soda Cake

Cake Mix Soda Cake

Yields: 1 - 8x8 Cake
dairy-free, egg-freeoil-free, soy-free, gluten-free



Ingredients:

  • 1 box gluten-free Cake Mix
  • 12 oz Soda

Directions:
  1. Preheat oven to 350 degrees
  2. In a medium measuring cup, mix Cake mix with Soda, adding a little at a time to prevent Soda from spilling over
  3. Cake batter will be gummy at first, keep mixing until mixture is like pancake batter 
  4. Pour into 8x8 silicon baking dish
  5. Bake 40-45 minutes until Cake is set

Chocolate Chickpea Pudding

Chocolate Chickpea Pudding
Yields: 2 1/2 cups
dairy-free, egg-free, oil-free, soy-free, gluten-free



Ingredients:

  • 15 oz can Chickpeas (rinsed & drained)
  • 1 cup Plant-based Milk or Water
  • 1/2 cup Cacao
  • 1/4 cup Maple Syrup
  • 2 tbsp Almond Butter Powder
  • 1 tbsp Vanilla Powder
  • 1 tsp Sea Salt

Directions:

  1. Dump ingredients into high-speed blender in this order: dry ingredients in first, liquid in last
  2. Blend until smooth
  3. Place Pudding in fridge until chilled at least a hour

Hoff's Fruit Cobbler

Hoff's Fruit Cobbler

Servings: 2-4
dairy-free, egg-free, oil-free, soy-free, gluten-free



Cobbler Base Ingredients:

  • 2 cups frozen/fresh Fruit of choice
  • 1 tbsp Brown Sugar
  • 1 tbsp Corn Starch
  • 1/2 tsp Lemon Juice

Cobbler Topping:
  • 1 cup Old Fashioned Oats
  • 3/4 cup Water
  • 2 tbsp Brown Sugar
  • 1 tsp Almond Powder
  • 1 tsp Vanilla Powder
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
Directions:
  1. Preheat oven to 400 degrees
  2. Add Fruit to 9x9 baking dish, mix with Corn Starch, next stir-in Brown Sugar & Lemon Juice
  3. Blend Oats to form “flour”
  4. Add remaining Topping ingredients, blend for 30 seconds
  5. Evenly spread topping over Fruit
  6. Bake for 25 minutes uncovered

Hoff Thoughts: Some fruit ideas include: Cherries, Blackberries, Strawberries, Berry Mix, Pears, Peaches, Fresh Apples (add 1 tsp Cinnamon, cook for 40 minutes).

Hoff's Fruit Crumble

Hoff's Fruit Crumble

Servings: 2
dairy-free, egg-free, oil-free, soy-free, gluten-free



Crumble Base Ingredients:

  • 2 cups frozen Fruit of choice
  • 1 tbsp Maple Syrup
  • 1 tbsp Corn Starch

Crumble Topping:
  • 3/4 cup Old Fashioned Oats
  • 2 tbsp Brown Sugar
  • 2 tbsp Maple Syrup
  • 1 tsp Almond Powder
  • 1 tsp Vanilla Powder
  • 1/4 tsp Salt
Directions:
  1. Preheat oven to 400 degrees
  2. Add Fruit to 9x9 baking dish, mix with Corn Starch, next stir-in Maple Syrup
  3. In a separate bowl mix Topping ingredients together
  4. Equally spread topping over Fruit
  5. Bake for 20 minutes uncovered

Hoff Thoughts: Some fruit ideas include: Cherries, Blackberries, Strawberries, Berry Mix, Pears, Peaches, Apples (add 1 tsp Cinnamon, cook for 40 minutes).

Cake Mix Pumpkin Donuts


Cake Mix Pumpkin Donuts
Yields: 9 large donuts
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free


Ingredients:
  • 1 15 oz. box GF Cake Mix
  • 1 15 oz. can pureed Pumpkin
  • 1/2 cup Apple Sauce
  • 1 tsp. Pumpkin Spice
  • 1 tsp. Sea Salt
Optional Glaze
  • 1/2 cup Powdered Sugar
  • 1/4 cup Maple Syrup
  • pinch Sea Salt

Directions:
  1. Preheat oven to 350 degrees
  2. In a medium bowl, mix ingredients together
  3. In a liquid measuring cup, whisk glaze ingredients together, set aside
  4. Spoon dough into a non-stick donut pan (oiling the pan is not necessary)
  5. Bake 12 minutes
  6. Allow to cool completely for easy removal
  7. Dunk each donut into glaze
  8. Get your pumpkin on!

Hoff's Apple Pie Oatmeal Bake 

Servings: 6
dairy-free, egg-free, oil-free, soy-free, gluten-free
   

Ingredients:

  • 3 cups Old Fashioned Oatmeal
  • 3 1/2 cups unsweetened plant-based Milk
  • 21 oz. can Apple Pie Filling
  • 1 organic Honey Crisp Apples (chopped)
  • 1/2 cup Brown Sugar
  • 2 tsp. Apple Pie Spice
  • 1 tsp. Sea Salt
Crisp Topping:
  • 1/2 Cup Old Fashioned Oatmeal
  • 2 tbsp. Brown Sugar
  • 1 tsp. Apple Pie Spice
Directions:
  1. Preheat over to 350 degrees
  2. Stir Oatmeal, Milk, chopped Apples, Apple Pie Filling, Brown Sugar, Salt and Spice together
  3. Transfer to a 9x9 glass baking dish
  4. Using a high speed blender, pulse Crisp Topping ingredients until coarsely chopped
  5. Layer on top of Oatmeal
  6. Bake for 30 minutes
  7. Serve with a drizzle of Maple Syrup if desired

Hoff’s Oatmeal Raisin Cookies

Hoff’s Oatmeal Raisin Cookies
Yields: 10 Cookies
dairy-free, egg-free, oil-free, soy-free, gluten-free
  

Ingredients:
  • 1 1/2 cups Old Fashioned Oats + 1/2 cup WO
  • 1/2 cup Apple Sauce
  • 1/2 cup Maple Syrup
  • 1/3 Brown Sugar
  • 1/3 cup Raisins
  • 1 tsp. Cinnamon
  • 1 tsp. Baking Powder
  • 1 tsp. Sea Salt 

Directions:
  1. Blend 1 1/2 cups Oats, Cinnamon, Baking Powder & Salt in a high speed blender until finely ground
  2. Pour dry ingredients to a mixing container and using a fork, stir in 1/2 cup of whole Oats, Sugar, Maple Syrup, Apple Sauce, & Raisins
  3. Scoop batter onto parchment lined cookie sheets or silicon mat
  4. Bake at 350 degrees for 15 minutes
  5. Remove from cookie sheet and allow to cool

Blueberry Muffin In A Mug

Serves: 1
dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients:

  • 1/3 cup Oat Fashioned Oats
  • 1/4 cup Blueberries
  • 2 tbsp. Apple Sauce
  • 2 tbsp. Maple Syrup
  • 1/2 tsp. Baking Powder
  • Splash of Vanilla Extract
  • Pinch of Sea Salt
Directions:
  1. Using a high powered blender, blend Oats, Baking Powder & Salt together until a flour-like consistency is reached
  2. Turn speed to low and add remaining ingredients until combined
  3. Microwave for 2-3 minutes
  4. Dig in!
Hoff Thoughts: If you double this recipe to make two mug muffins, each one must be microwaved separately.

Hoff's No Crust Sweet Potato Pie

Hoff's No Crust Sweet Potato Pie
Yields: 1 pie
dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients:
  • 2 - 15 oz. cans Sweet Potatoes
  • 1/2 cup Plant-based Milk
  • 4 oz. Apple Sauce (that's one of those snack packs)
  • 1/2 cup Brown Sugar
  • 1/4 cup Sugar
  • 2 tbsp. Arrowroot Powder
  • 1 tsp. Nutmeg
  • 1 tsp. Ginger
  • 1 tsp.Cinnamon
  • 1 tsp. Sea Salt

Directions:
  1. Preheat oven to 350 degrees
  2. Place all ingredients into a blender, blend until smooth & ingredients are combined (this won't take long)
  3. Pour into a glass/silicon pie dish
  4. Bake for 55-65 minutes or until set
  5. Serve cold or warm

Hoff Thoughts: You can substitute 2 large, baked Sweet Potatoes for the canned, but who has time for that?

Hoff’s Pie Filling Cookies

Hoff’s Pie Filling Cookies
Yields: about 1 1/2 dozen
dairy-free, egg-free, oil-free, soy-free, gluten-free


Ingredients:
  • 20 oz. can Crushed Pineapple in Juice
  • 2 1/2 cups Whole Oats
  • 1/2 cup Sugar
  • 1 tbsp. Baking Powder 
  • 1 tsp. Sea Salt

Directions:
  1. Preheat oven to 350 degrees
  2. Meanwhile, blend all dry ingredients, using a high speed blender, until a flour-like consistency is reached
  3. Stir in Pineapple to incorporate
  4. Drop spoonfuls onto a non-stick cookie sheet or parchment paper lined cookie sheet
  5. Optional: top each cookie with Oat flakes
  6. Bake for 20 minutes

Hoff Thoughts:  If fat is not a concern, mix in 1/2 cup Macadamia nut pieces along with the Pineapple.  I called these Fruit Cookies, because while experimenting, I found that just about any pie filling worked in place of the Pineapple -  Strawberry, Blueberry, etc.

Hoff's Sweet Potato Chocolate Pudding

Inspired by this Jaroudi Family recipe.


Hoff's Sweet Potato Chocolate Pudding
Serves: 4
dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients:
  • 2 Jersey/Japanese Sweet Potatoes
  • 1 cup Plant-based Milk
  • 1/3 cup Cacao Powder
  • 1/3 cup Maple Syrup
  • 1/2 tsp Sea Salt
Directions:
  1. Stab each Potato with a few holes and bake at 400 degrees for 1 hour
  2. Allow Potatoes to cool enough to handle, before peeling & placing into a blender or Vitamix
  3. Add remaining ingredients
  4. Blend until smooth
  5. Place Pudding in fridge until chilled
  6. Try not to eat all of it yourself in one sitting, even though you can, IT'S A POTATO!!!  :) 
Hoff Thoughts: Be sure to use a store bought Milk for this recipe, when I used my homemade Almond Butter Milk, the pudding did not set up as well.

Yields: About 2 cups
dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients:

  • 2 medium-large, ripe Avocados
  • 1/4 cup Plant Milk (I use Almond Milk)
  • 1/3 cup Cacao Powder
  • 1/3 cup Maple Syrup
  • 1/2 tsp Orange Oil (optional)
  • 1/2 tsp Sea Salt

Directions:
  1. Blend all ingredients together, until smooth
  2. Allow to chill in the fridge for at least 30 minutes before serving

Hoff's Orange Date Truffles

Hoff's Orange Date Truffles
Yields: 10ish Truffles
dairy-free, egg-free, oil-free, soy-free

Ingredients:
  • 10 Dates (pitted)
  • 2 tbsp. Cacao Powder
  • 1/4 tsp. Orange Oil
  • Pinch of Sea Salt

Directions:
  1. Throw all ingredients into a high speed blender
  2. Blend about 30 seconds until Dates are chopped into tiny pieces
  3. Spoon about a tbsp. of mix into you hand and roll into a ball, repeat until all mix is used
  4. Optional: roll each ball in additional Cacao Powder
  5. Allow to set up in the fridge
  6. Store in the fridge

Hoff Thoughts: If your Dates are dry, soak in water about 15 minutes and drain before using.

Hoff's No Crust Pumpkin Pie
Yields: 1 pie
dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients:
  • 15 oz. can 100% Pure Puree Pumpkin
  • 1/2 cup Rolled Oats
  • 1/2 cup Vanilla Almond Milk
  • 4 oz. Apple Sauce (that's one of those snack packs)
  • 1/2 cup Brown Sugar or 8 pitted Dates
  • 3 tsp. Pumpkin Pie Spice
  • 1 tsp. Vanilla Powder
  • 1 tsp. Salt

Directions:
  1. Preheat oven to 350 degrees
  2. Blend Oats in a food processor to make “flour”
  3. Add remaining ingredients, blend until smooth
  4. Pour into a glass/silicon pie dish
  5. Bake for 30 minutes or until set
  6. Allow to continue setting for at least 4 hours in the fridge
  7. Serve cold or warm

Hoff Thoughts: Kick this up a notch by sprinkling Brown Sugar on top of the Pie with 10 minutes to go on the cooking time.

Ingredients:
  • 2 Ripe Bananas
  • 1 1/2 cup Rolled Oats
  • 3/4 cup Apricot Preserves
  • 1/2 cup Raisins
  • 1 tsp. Vanilla Extract
  • 1/2. tsp. Sea Salt

Directions:
  1. Preheat oven to 375 degrees
  2. Mash Bananas & Vanilla together
  3. Stir in remaining ingredients until combined
  4. Press mixture in 8x8 glass or silicon pan
  5. Bake 25 minutes
  6. Cool for 20 minutes before cutting

Ingredients:
  • 2 cups Old Fashioned Oats
  • 1/2 cup Apple Sauce
  • 1/2 cup Maple Syrup
  • 1/3 cup Vegan Chocolate Chips
  • 1/3 cup Raisins/Cranberries
  • 1 tsp Baking Powder
  • 1 tsp Sea Salt

Directions:
  1. Blend Oats, Baking Powder & Salt in a high speed blender until finely ground
  2. Pour dry ingredients to a mixing container and using a fork, stir in Maple Syrup, Apple Sauce, Chocolate Chips & Raisins/Cranberries
  3. Scoop batter onto parchment lined cookie sheets or silicon mat
  4. Bake at 350 degrees for 15 minutes
  5. Remove from cookie sheet and allow to cool

 Hoff Thoughts: Use Almond Flour instead, for a more decadent, but higher fat, cookie.

Fruit Ice Cream

Fruit Ice Cream
Serves: 4
dairy-free, egg-free, oil-free, soy-free


Ingredients:
  • 2 cups frozen Fruit
  • 2 frozen Bananas
  • 1/2 cup plant-based Milk
  • 1/2 tsp. Vanilla Extract
  • Pinch of Sea Salt

Directions:
  1. Dump all ingredients into a Vitamix
  2. Using the tamper, push the ingredients into the blades
  3. Blend until smooth about 30 seconds
  4. Serve immediately for soft serve or freeze for hard serve

 Hoff Thoughts: any frozen fruit will do, use your favorite - try black cherries, mango or peach!

Chocolate Chip Cookie Pie

Chocolate Chip Cookie Pie
Yields: 1 Pie
dairy-free, gluten-free, oil-free, soy-free, gluten-free


Ingredients:
  • 1 15oz. can Chickpeas (with liquid)
  • 2/3 cup King Arthur Gluten-free Flour
  • 1/3 cup Almond Butter
  • 1/4 cup Maple Syrup
  • 2 tbsp. Almond Milk
  • 1 tsp. Vanilla Extract
  • 1 tsp. Baking Powder
  • 1 tsp. Sea Salt
  • 1/2 cup Vegan Chocolate Chips

Directions:
  1. Preheat oven to 350 degrees
  2. Blend all ingredients in a high speed blender, except Chocolate Chips
  3. Once blended, turn to low, add Chocolate Chips and blend a few seconds to incorporate 
  4. Pour batter into glass/silicone pie dish
  5. Bake for 25 minutes or until pie is set and lightly browned

Hoff's Pumpkin Pudding II
Yields: About 3 cups
dairy-free, egg-free, oil-free, soy-free, gluten-free


Ingredients:
  • 1 15 oz. can 100% Pure Pumpkin
  • 1 cup soaked Cashews 
  • 1/2 cup Maple Syrup
  • 1/2 cup plant-based Milk (I use Almond or Cashew Milk)
  • 1 tbsp. Vanilla
  • 1 tsp. Pumpkin Spice
  • 1/2 tsp. Sea Salt

Directions:
  1. Blend all ingredients together using a high speed blender
  2. Allow to chill in frig
  3. Get your pumpkin on!

Chocolate Mousse

Chocolate Mousse
Servings: 4
dairy-free, egg-free, oil-free, gluten-free

Ingredients:
  • 28 oz. Organic Silken Tofu
  • 1 12 oz. bag Vegan Chocolate Chips
  • 1 tsp. Vanilla
  • Pinch of Sea Salt
Directions:
  1. Preheat oven or toaster oven to 350 degrees
  2. Spread Chocolate Chips onto a small baking pan & place in oven for about 3-4 minutes or until melted
  3. Using a high speed blender, blend Tofu, Melted Chocolate Chips, Vanilla & Salt until smooth
  4. Pour mixture into individual serving bowls/cups (I use pretty, cobalt wine glasses)
  5. Allow a minimum of 20 minutes to set-up in the fridge
  6. Serve chilled

Hoff Thoughts: So good, no one will know it's vegan!
