Hoff's Vegan Hot Chocolate Concentrate

Hoff's Vegan Hot Chocolate Concentrate

Yields: 4-6 cups
dairy-free, oil-free, soy-free, gluten-free



Ingredients:
  • 4 (more concentrated) - 6 cups Plant-based Milk
  • 1/2 cup Cacoa Powder
  • 8 Dates
  • 1 tbsp Tapioca Starch
  • 1 tbsp Vanilla Powder
  • 2 tsp Salt

Directions:
  1. Blend ingredients together with a high speed blender until well combined 
  2. Store in airtight container in the fridge up to 1 week

Preparation: 
  1. Shake “Concentrate” container
  2. Mix 1/2 cup Concentrate with 1/2 cup Water in favorite mug; if only making 4 cups of mix, reduce to 1/4 cup Concentrate
  3. Microwave 2 1/2 minutes or until preferred temp (watch for boil over - timing for two mugs at same time)
  4. Enjoy the cozy!

Apple Cider

Apple Cider

Yields: About 5-6 cups

Ingredients:

  • 6 Apples (Fuji, Gala, Honeycrisp, etc)
  • 1 Orange
  • 6 cups Water
  • 1/2 cup Sugar
  • 2 Cinnamon Sticks
  • 1 tsp Ginger

Directions:
  1. Cut Apples & Orange in half, no need to core (remove stems)
  2. Dump Fruit into the IP
  3. Add Sugar, Cinnamon & Ginger
  4. Cover with Water
  5. Lock lid in place and make sure pressure release valve is closed
  6. Press "Manual" button and adjust cooking time to 15 minutes at high pressure
  7. When done, use natural release method 
  8. Remove Cinnamon Sticks
  9. Using a potato masher, mash Fruit to release leftover juices
  10. Using a funnel and fine mesh strainer, carefully pour Cider into mason jars or storage container of choice, while extracting solid bits (a second set of hands makes this easier)
  11. Can be kept in the fridge for up to a week

 Hoff Thoughts: Can use one type of Apple or a variety; you just want to use the sweetest varieties.

Indulgent Hot Cocoa

Indulgent Hot Cocoa
Serves: 2
dairy-free, egg-free, oil-free, soy-free 

Ingredients:
  • 2 cups plant-based Milk
  • 1/2 cup vegan Chocolate Chips
  • Vegan Whip Cream
  • Pinch of Nutmeg
  • Pinch of Sea Salt

Directions:
  1. Place Chips in high speed blender, followed by Milk, Nutmeg & Sea Salt
  2. Blend for 6 minutes
  3. Divide into two mugs, top with Whip Cream
  4. Ho Ho Ho!

Hoff's Coffee Maker Sweet Tea

Hoff's Coffee Maker Sweet Tea
Yields: 24 cups
dairy-free, egg-free, oil-free, soy-free, gluten-free

Ingredients:
  • 24 cups Water (divided)
  • 2 organic Black Tea Bags
  • 2 organic Peach Tea Bags (or flavor of choice)
  • 2 cups White Sugar or 1/2 cup Maple Syrup

Directions:
  1. Pour 12 cups of Water into water reservoir of coffee maker
  2. Spread out & minimally layer Tea Bags in the filter basket
  3. Brew Tea as you would coffee
  4. Add Sugar to large carafe/container
  5. Pour hot Water over Sugar, stir to dissolve
  6. Add another 12 cups of cold Water
  7. Stir
  8. Place in refrigerator to chill before serving or serve over ice 

Hoff Thoughts: Add juice from one Lemon to add brightness.

DIY Quick & Easy Almond Milk
Yields: 3 cups
dairy-free, oil-free, soy-free, gluten-free

Ingredients:
  • 3 cups Water
  • 1 tbsp. oil-free Almond Butter
  • 1 pitted Date
  • Optional 1 tsp. Vanilla (great for cereal, not so great for cooking)
Directions:
  1. Place all ingredients into a high speed blender
  2. Start low, then up to high quickly
  3. Blend for about 1 minute
  4. Store in refrigerator for up to a week
  5. Shake before using

AJ Thoughts: Only need 1 cup?  Blend 1 cup of Water with 1 tsp. of Almond Butter.

Bulk Vegan Hot Chocolate Mix II
Yields: 1 quart Mason Jar
dairy-free, oil-free, soy-free, gluten-free

Ingredients:
  • 2 cups Powdered Sugar
  • 1 cup Cacao Powder
  • 2 1/2 tsp. Sea Salt

Directions:
  1. Dump all ingredients into a 1 quart Mason Jar & shake to combine
  2. That's it!

Preparation:
  1. Microwave a mug of water for about 1-2 minutes, leaving about 1 1/2" of room
  2. Stir in 2 heaping spoonfuls of mix until completely dissolved
  3. Top off with a dash of Coconut Vanilla/Hazelnut Creamer (optional) or Vanilla Almond Milk

Hoff's Cranberry Orange Juice
Yields: About 6 cups

Ingredients:

  • 3 Seedless Oranges - peeled and sectioned
  • 1/2 cup fresh or frozen Cranberries
  • 6 Ice Cubes
  • 1 1/2 cups Water
  • 2 tbsp. Honey (sweeten to taste)
  • 3 tsp. Sugar (sweeten to taste)

Directions:
  1. Add all ingredients to blender
  2. Blend for 1 minute for pulp-free (30 seconds for pulp)
  3. Serve immediately

Hoff Thoughts:  A Vitamix was used for this recipe; results may vary with a traditional blender.  More or less sweeteners may be needed depending on the sweetness of the Oranges and tartness of the Cranberries.

Hoff Thoughts: This drink tends to "foam up," be sure to use the tall 8 cup container and not the short 6 cup container if using a Vitamix to avoid overflow issues...

Hoff's Carrot Apple Ginger Juice

Hoff's Carrot Apple Ginger Juice
Serves: 2

Ingredients:
  • 4-5 Carrots
  • 4-5 Apples
  • 1 Organic Lemon
  • 1 tsp. Fresh/Frozen Ginger

Directions:
  1. Using a Juicer, push 2 Carrots through, then 2 Apples, then the Lemon, then the Ginger, finish with remaining Carrots & Apples
  2. Strain through a fine wire sieve
  3. Server over ice

Hoff Thoughts:  The amount of Carrots & Apples you use depends on the size you have and how much juice you want.  I use an Organic Lemon because I juice the peel as well and therefore the pesticides aren't so rough.  Look in your freezer section for Frozen Herbs such as Ginger in convenient 1 tsp. cubes.  Straining isn't absolutely necessary, but it gives me peace of mind. Want more juice?  Use a funnel to run the leftover pulp through the juicer a second time.

  • 2 Bananas
  • 1 1/2 cups Water
  • 2-3 pitted Dates
  • Dash of Vanilla
  • Pinch of Cinnamon
Directions:
  1. Place all ingredients in a Vitamix or high speed blender
  2. Blend until smooth, a few seconds
  3. Drink immediately

Honey Tea

I savor this tea every morning before work.  It's my own little decadent quiet time before taking on the world.  I deeply inhale the lemony fragrance wafting into the air, while mindfully sipping from my favorite mug.  Delightful...

Honey Tea
Serves: Just You
meat-free, dairy-free, egg-free, oil-free, soy-free


Ingredients:
  • Water
  • Honey
  • Cayenne Pepper
  • 1 Lemon Slice

Directions:
  1. Fill a mug with Water
  2. Add as much/as little Honey as you desire (I add about about a dime size)
  3. Sprinkle in a little Cayenne Pepper
  4. Squeeze in Lemon juice and plunk in Lemon Slice
  5. Nuke for 1-2 minutes

The Benefits:

  • Better Digestion & Elimination: Warm waters increases elimination of waste & toxins from the body, reduce constipation and diarrhea, cleanse your digestive tract and help with proper food digestion
  • Beautiful Skin: The Vitamin C from the Lemon rejuvenates the skin naturally
  • Energizing Your Body: Lemon is one of the few foods that contain more negative charged ions, providing your body with more energy
  • Smooth Throat: Cayenne is very high in Vitamin C and helps to unblock the sinuses and clear out mucus & Honey is a natural cough suppressant

Hoff Thoughts: Notice I mentioned a little Cayenne, this stuff is HOT, so go easy and adjust as you get used to it.  If the microwave isn't your thing, heat your water in a kettle (I'm just too impatient).

Hoff's B&W Hot Chocolate

Hoff's Quick B&W Hot Chocolate
Serves: 1
dairy-free, soy-free

Ingredients:
  • 1/2 cup Dark Chocolate Almond Milk
  • 1/2 cup Vanilla Almond Milk
  • 1/2 cup Water
  • Sea Salt
  • Cinnamon

Directions:
  1. Mix Milk & Water into a mug and microwave for 1-2 minutes
  2. Top with Salt & Cinnamon

Hoff's Bulk Vegan Hot Cocoa Mix

No winter should be fought with out this!


Hoff's Bulk Vegan Hot Chocolate Mix
Yields: 1 quart Mason Jar
dairy-free, oil-free, soy-free, gluten-free


Ingredients:
  • 2 cups Cacao Powder
  • 1 cup Coconut Sugar
  • 1/2 cup vegan Chocolate Chips
  • 2 tsp. Salt

Directions:
  1. Blend ingredients together with a high speed blender until well combined 
  2. Store in airtight container

Preparation:
  1. Microwave a mug of water for about 1 minute, leaving about 1 1/2" of room
  2. Stir in 1 heaping spoonful of mix until completely dissolved
  3. Top off with Vanilla Almond Milk or Coconut Vanilla Creamer

Hoff Thoughts: You can easily substitute Cocoa Powder & regular White Sugar.  I store this mix in a wide mouth quart canning jar. 

Add-in ideas:
Try adding 2 tsp. of Pumpkin Spice, Cinnamon, Nutmeg or Ginger to the bulk mix or just sprinkle on top of your cup o' cocoa.  Try adding 1 tsp of Honey to your prepared hot beverage.

Preparation Alternative:
Not into milk?  Use all water instead, adding 1 spoonful of Dandy Blend, to get the same frothy, thickness that the milk delivers.

Sherbert Lemonade

Sherbert Lemonade
Serves: 1



Ingredients
  • 2 Golden Delicious Apples
  • 1 Lemon
  • Ice

Directions
  1. Slice end off of Lemon and cut a 1" thick slice, leaving the peel on
  2. Throw Apples and Lemon slice into Juicer
  3. Pour over Ice & Drink!

A New Coffee Romance...HoffTea!

Until recently, I had my weekend coffee routine down to a science.

Adding cinnamon to the coffee grounds before brewing (a delightful surprise) and then taking my coffee with one tablespoon of blackstrap molasses and six tablespoons of  Coffee-mate Fat Free French Vanilla Creamer.  The molasses gives the coffee a nice earthy foundation and a healthy shot of potassium, while the French Vanilla is pure heaven.

I can hear the descent brewing - how could The Healthy Hoff willfully ingest such an unnatural substance?!?!

It was my one and only vice, people! In fact, I don't think I even like coffee, it was merely a delivery tool for my beloved Mr. French.  I would have panic attacks when running low.  I had to have two bottles on hand at all times to prevent such a catastrophe!

But, having recently given up oil...I found myself at a crossroads.  Mr. French and I needed to take a break.  I had to explore other fish in the sea and try as hard as it may be - to replace my coveted Mr. French.

I searched high and low and tried many, many concoctions and I am happy to reveal that I have in fact found my new love...

Adding lose leaf tea (I prefer berry infused) to the coffee grounds as well as cinnamon not only fills the house with a most excellent aroma, but it mellows out the bitterness of the coffee - leaving behind a smooth, rich and most yummy experience that will have you begging for more.  Add to that one tablespoon molasses, two tablespoons agave nectar and about 1/4 cup alternative milk of choice and it's curtains for trans fat ladened cream!

I'm sorry it had to end this way - it was a good run while it lasted, but you're just no good for me.

Ingredients:

Recipe: Make Your Own Rice Milk

Perhaps you heard in today's news that trace amounts of radiation have been found in milk samples taken in Washington and California.  The FDA reports these amounts are minuscule and harmless compared to what we are normally exposed to daily.  Gee, that sounds reassuring.  I opt for no radiation please.

I actually switched to milk alternatives a few years ago due to a dairy sensitivity.  I started with soy milk, moved onto almond milk (until a nut allergy stopped that), loved coconut milk (but not the 5 grams of saturated fat per cup) and have lastly landed on rice milk.

Yes, most stores now carry rice milk as a staple, but I wanted to try making it for myself (it's super easy).  So, I started my adventure in milk making, here are my results:

Batch 1 Cooked instant brown rice Skim milk consistency, light beige color, slightly sweet taste
Batch 2 Cooked long grain white rice Super thick cream consistency, pristine white, no taste
Batch 3 Soaked long grain white rice Gritty consistency, pristine white, no taste
Batch 4 Soaked instant brown rice Skim milk consistency, light beige color, slightly sweet taste
Batch 5 Soaked long grain brown rice Gritty consistency, light beige color, no taste

My fifth batch will be made with long grain brown rice soaked overnight and I will post the results later.  But for those of you who can't wait to get started, here's the recipe that has worked the best so far:

Homemade Rice Milk
Yields: 6 cups of milk


Preparing the Rice:

Option 1: Soak 1 cup of rice over night in about 5 cups of water (enough to cover once rice puffs), rinse rice
Option 2: Cook 1 cup of rice per instructions (I use a rice cooker)

Ingredients:
  • 2 cups rice (1 cup dried rice, soaked or cooked = 2 cups)
  • 5 cups water
  • Sweetener to taste (I use 2 packets of Stevia)
  • Optional 1 teaspoon vanilla (great for cereal, not so great for cooking)
Directions:
    1.  Place all ingredients into blender (I use a Vitamix)
    2. Start low, then up to high quickly
    3. Blend for 2-3 minutes
    4. Store in refrigerator
    5. Shake before using
    Milk will be warm so don't plan on immediate consumption (unless for hot cocoa).

    With a Vitamix there is no need to strain the milk, I do not know what the results are with a regular blender, you may want to strain through a wire sieve the first time, just in case.

    I like to store my rice milk in glass canning  jars.

    Milk will separate, don't worry a quick shake fixes that.

    Update 4.3.2011:

    Batch number five has been made and tasted and well it's gritty - long grain rice simply will not puff up from soaking.

    The bottom line, if you want to save effort by not cooking the rice, you'll need to use instant rice. For you ambitious folks go for the organic long grain brown rice and get the ultimate in satisfaction.

    Break it Down:

    A 14oz box of Minute Brown Rice costs around $2.39, you can get 4 cups of rice from each box. That means that a potential weeks worth of milk (6 cups) will cost you $.60.  Lets say that a 1/2 gallon (8 cups) of store brand milk costs $1.99 - that's a savings of $1.39 and over a course of a year that's a savings of $72.

    Ok, not a huge savings, but the satisfaction of making your own milk is priceless!

    Update 4.24.2011:

    I had a breakthrough this morning.  I noticed that my store bought rice milk, that I had on hand (just in case) had expired and I did not panic!  In fact, it hadn't even occurred to me to buy any type of milk during this weeks food hunt.  And at that moment, it hit me; I had successfully made the transition to homemade rice milk - a proud moment indeed.  I take comfort in knowing that I shall never again make an emergency run to the store for milk, for I can at any given time whip up my own milk!  I just need to keep the pantry stocked with rice...
