Hoff's Tofu Ramen Soup
Serves 2meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free
Ingredients:
- 2 bundles Ramen Noodles
- 4 cups Vegetable Broth
- 7 oz block firm Tofu (cut into small squares)
- 1 cup Cabbage (slaw mix)
- 1/2 cup organic Edamame
- 1/2 cup organic Corn
- 1/2 sheet of Roasted Seaweed (torn/cut into pieces)
- 1-2 tbsp Bragg's Liquid Amino Acid (or soy sauce) to taste
- 1 tbsp Almond Butter
- 1 tbsp Miso
- 1 tsp Umami Seasoning
- 1 tsp minced Ginger
- 1 tsp minced Garlic
- Juice from 1 Lime
Directions:
- Combine all ingredients (minus Noodles) in a pot and bring to a boil
- Add Noodles and cook according to package time
- Finish with Lime Juice
- Enjoy!
