Hoff's Hummus Grain Bowl

Yields: 2 servings
meat-free, dairy-free, egg-free, oil-free, gluten-free


Ingredients:

  • 1 cup Jasmine Rice or Quinoa
  • 1 1/2 cups Water
  • Tofu or Baby Potatoes
  • 15 oz can Chickpeas
  • 1 Avocado (cubed)
  • 1 cup Cucumber (chopped)
  • 1 cup Carrots (shredded)
  • 1/2 cup Onion (diced)
  •  2 tsp. Sunflower/Pumpkin Seeds
  • Cashew Cream (1/4 cup Cashews, 1/4 cup Water)
  • Hummus

Directions:
  1. Drain Chickpeas but don’t rinse, add Tofu or Potatoes toss with desired spices, spread out on baking sheet air-fry or roast at 400 degrees for 12 minutes (AF), 30 minutes (oven)
  2. Meanwhile, place Rice & Water in an Instant Pot & cook on Manual for 3 minutes or Quinoa for 4 minutes Quick Release
  3. Divide Rice/Quinoa evenly into two bowls 
  4. Divide remaining ingredients
  5. Top with desired amount of Cashew Cream & Hummus

Hoff's Ninja Bulk Creamy “Fudgey” Chocolate Nice Cream II (4)

24 hour prep time
Yields: 4 Pints

dairy-free, egg-free, soy-free



Ingredients:
  • 2 - 15 oz can Black Beans (rinsed & drained)
  • 4 cups Plant-based Milk
  • 12 oz Cauliflower Rice
  • 10 Dates
  • 1/2 cup Cacao Powder
  • 1 tbsp Vanilla Powder
  • 1 tsp Sea Salt

Directions:
  1. Add all ingredients to a high-speed blender like a Vitamix
  2. Blend until smooth about 30 seconds
  3. Divide mixture into four Ninja Creami Containers
  4. Place in freezer for 24 hours without the lid*
  5. When ready to enjoy, process using a Ninja Creami Deluxe Lite Ice Cream setting, Re-Spin if necessary, adding milk if needed
  6. Eat it all or place leftovers back into freezer till next time

Hoff Thoughts: *Freezing without the lid or any covering helps to prevent the “volcano” mound from forming. Should a mound form simply scrape with the back of a spoon & smooth over shavings until a level base is formed, this prevents the blade from cutting into the container.

Ingredients:

  • 14 oz Extra Firm Tofu
  • 15 oz can Black Beans (rinsed & drained)
  • 15 oz can Chickpeas (rinsed & drained)
  • 1 cup Plant-based Milk
  • 1/2 cup Maple Syrup
  • 1/3 cup Cacao
  • 1 tbsp Almond Powder
  • 1 tsp Sea Salt

Directions:

  1. Dump ingredients into a food processor
  2. Blend until smooth, about 1-2 minutes
  3. Place Pudding in fridge until chilled at least a hour

Hoff's Roasted Veggie Wrap II

Yields: 4 servings
meat-free, dairy-free, egg-free, oil-free, gluten-free, soy-free



Ingredients:
  •  4 Gluten-free Wraps
  • 1 cup Baby Spinach or Cole Slaw mix
  • 1 Zucchini (sliced)
  • 4 Portobello Mushrooms (thinly sliced)
  • 2 Roma Tomatoes (sliced)
  • 1 Avocado (optional)
  • 1 Red Pepper (sliced)
  • 1 small Onion (sliced)
  • Hummus
  • Salt & Lemon Pepper to taste


Directions:
  1. Air-fry Veggies (except Spinach & Avocado) at 400 degrees for 20 minutes
  2. Spread Hummus onto one side of Wrap and layer with Veggies, Avocado & Spinach, season with Salt & Lemon Pepper
  3. Roll into a "burrito" & enjoy!

Hoff Thoughts: Crisp these up by placing in a 450 degree oven for 14 minutes.
