Hoff's Salad Pita

Hoff's Salad Pita

Yields: 4 Large Pitas
meat-free, dairy-free, egg-free, soy-free



Ingredients:
  • 6 Pitas
  • Shredded Lettuce
  • Baby Cucumber (cut into spears)
  • Cherry Tomatoes (halved)
  • Avocado or Guacamole
  • Red Onion (sliced)
  • Black Olives
  • Pickle Relish/Pickle Chips
  • Imitation Bacon Bits
  • Plain Hummus or Vegan Ranch Dressing
  • Mustard

 Directions:
  1. Toast Pitas for 4 minutes to make malleable
  2. Cut each Pita in half
  3. Use a knife to spread Hummus/Guacamole inside Pita
  4. Stuff with remaining ingredients

Hoff Thoughts: I find it easier to mix all the ingredients in a bowl & then spoon into each Pita or cut the Pita into pieces, add to the bowl & serve as a salad.
