Hoff’s Red Beans & Rice

Yields: 6 servings
meat-free, dairy-free, egg-free, oil-free, gluten-free, soy-free

Ingredients: 
  • 2 1/2 cups Veggie Broth
  • 1 1/2 cups Jasmine Rice
  • 15 oz can Kidney Beans (rinsed & drained)
  • 1 cup Soy Crumbles
    • 1 tsp Hoff Seasoning
    • Pinch of Fennel Seeds
    • Splash of Hot Sauce
  • 1 Red Pepper (chopped)
  • 1 Sweet Onion (chopped)
  • 1 tsp Garlic (minced)
  • 2 tbsp Nutritional Yeast
  • 2 tsp Hoff’s Seasoning
  • 2 tsp Smoked Paprika
  • 1 tsp Thyme

Directions: 
  1. Preheat oven to 375 degrees
  2. Rehydrate Soy Curls in just enough Water to cover, mix in Seasonings, let sit 15 minutes
  3. In a 9x13 casserole dish, dump all ingredients, mix to combine 
  4. Cover & bake for 45 minutes

Hoff Thoughts: If making ahead of time, add Water at prep or right before baking - whichever your spirit whispers…mine can’t make up its mind.
