Hoff's Mushroom Asparagus Fritatta

Hoff's Mushroom Asparagus Fritatta
Servings: 4-6
meat-free, dairy-free, egg-free, oil-free, gluten-free

Ingredients:
  • 14 oz. extra firm Tofu (drained)
  • 1 carton sliced Mushrooms
  • 1 bunch Asparagus (chopped)
  • 1 medium Sweet Onion (half moon slices)
  • 6 oz. Smoked Tempeh (chopped)
  • 1/3 cup Nutritional Yeast
  • 1 tbsp. Braggs
  • 1 tbsp. Arrowroot
  • 2 tsp. Italian Seasoning
  • 1 tsp. Dijon Mustard
  • 1/2 tsp. Turmeric
  • pinch of Sea Salt

Directions:
  1. Preheat oven to 375 degrees
  2. Saute Onions, Mushrooms & Asparagus until softened
  3. Meanwhile using a blender, blend Tofu, Nutritional Yeast, Braggs, Arrowroot, Italian Seasoning, Mustard, Turmeric & Salt until smooth
  4. In a large bow, mix Tofu mixture with Onions, Mushrooms & Asparagus
  5. Press mixture into glass 9" pie dish
  6. Bake for 40-45 minutes or until firm and browned

Clean That Juicer!

Do you clean your juicer?

Sure, after each use you take it all apart for washing, but have you cleaned the actually juicer?

Don't stress, it's easy and takes a few seconds.

With your machine ready to go, combine 3 cups of Water with 1 cup of White Vinegar.  Set machine to low and slowly pour the mixture down the chute.  Be careful, the water could shoot back up.  Turn off the machine, empty the pitcher and repeat again with Water only.

That's it!

This doesn't need to be done with each use, but it wouldn't hurt either.

P.S. This trick works well for your coffee pot too!  Just run the same Water/White Vinegar concoction through one cycle and chase with pure Water for another cycle.

Hoff's Coconut Black Bean Mango Rice (Instant Pot)

Hoff's Coconut Black Bean Mango Rice (Instant Pot)
Yields: 6 servings
meat-free, dairy-free, egg-free, oil-free, soy-free, gluten-free


Ingredients:
  • 2 cups Jasmine Rice
  • 1 14oz. can low fat Coconut Milk
  • 1 1/4 cups Water
  • 1 15 oz. can Black Beans (rinsed & drained)
  • 2 large Mangos (chopped)
  • 2 tbsp. Coconut Sugar
  • Season with Sea Salt

Directions (Instant Pot):
  1. Place all ingredients into the pot, stir
  2. Lock lid in place and make sure pressure release valve is closed
  3. Cook Manually on High Pressure for 10 minutes
  4. When done, use Quick Release Method

Directions (Stovetop):
  1. In a medium pot, bring Coconut Milk, Water & Sugar to a boil
  2. Reduce to simmer
  3. Add Rice, Black Beans & Mango, cover and cook for 20 minutes
  4. Fluff with fork

Hoff's Apple Cinnamon Oatmeal

Hoff's Apple Cinnamon Oatmeal
Serves: 1
dairy-free, egg-free, oil-free, soy-free, gluten-free


Ingredients:
  • 1 cup Water
  • 1 Republic of Tea Hot Apple Cider Tea bag
  • 1 cup Old Fashioned Oatmeal
  • Splash Unsweetened Vanilla Almond Milk
  • 1-2 tbsp. Brown Sugar
  • Dash of Cinnamon
  • Pinch of Sea Salt

Directions:
  1. In a small bowl, combine Oatmeal, contents from Tea bag & Water
  2. Let sit in the fridge overnight
  3. Cook Oatmeal in the microwave for 2-3 minutes
  4. Mix in Sugar, Cinnamon & Salt
  5. Top with a splash of Milk

SSS: Corn, Mashed Potatoes & Gravy


This Super Simple Supper came together in under 10 minutes thanks to some canned organic corn, instant mashed potatoes and Simply Organic Vegetarian (it's really vegan) Brown Gravy Seasoning Mix.  All made via the stove top!

When I can't get organic corn from my local farmer, I opt for frozen or canned organic corn.  But, explore your options - I've found that some brands can be sweet and crisp, while others are dull and mushy.

Hoff's Kraut Soup

Hoff's Kraut Soup
Yields: about 10 cups
meat-free, dairy-free, egg-free, gluten-free


Ingredients:
  • 6 cups Water
  • 3 tbsp. Water
  • 1 cup Sauerkraut Juice (reserved from Kraut)
  • 2 15oz. cans diced Potatoes (rinsed & drained)
  • 1 15oz. can Navy Beans (rinsed & drained)
  • 2 cups Sauerkraut (rinsed)
  • 2 vegan Sausages (chopped small)
  • 1/2 medium Sweet Onion (chopped)
  • 2 Garlic Cloves (minced)
  • 1/3 cup Alstertor Dusseldorf Mustard
  • Pepper to taste
  • Sea Salt to taste

Directions:
  1. Using a Blender - blend 1 can of Potatoes & 3 tbsp. Water until you get something resembling mashed potatoes (creamy, but lumpy), set aside
  2. In a large stock pot over medium-high heat, sautee Onions until browned
  3. Add Sausage and lightly brown
  4. Add Garlic and stir constantly for 30 seconds to prevent burning
  5. Pour in Water & Kraut Juice
  6. Add Potatoes, blended Potatoes, Beans, Kraut & Mustard
  7. Bring to a boil, reduce to a simmer and cook for 10 minutes
  8. Season with Salt & Pepper

Hoff Thoughts: You should be able to get about a cup of Kraut Water from a 32 oz. container of Kraut, if not, just substitute with Water to get to 7 cups of liquid total.  I have found Alstertor Dusseldorf Mustard at Giant Eagle and World Market.  Just use your favorite Mustard if this one eludes you, but you can't get any more German than Dusseldorf!
