Serves: 2
meat-free, dairy-free, egg-free, oil-free, soy-free
Ingredients:
- 2 cans Potatoes (diced & rinsed)
 - 2 cups Veggie Broth
 - 2 cups Original Almond Milk
 - 1 cup Corn
 - 1/4 Onion
 - 2 tbsp Potato Flakes
 - 1 clove Garlic
 - Splash of Liquid Smoke
 - Sea Salt
 
Directions:
- Place 1 can of Potatoes, Veggie Broth, Milk, Onion, Potato Flakes & Garlic into a Vitamix
 - Blend for 6 minutes
 - Pour over 1 can of Potatoes & Corn
 - Stir in Liquid Smoke & Sea Salt to taste
 - Serve!
 
My2Cents: The soup, while hot, may not be enough to warm through the Potatoes & Corn - you may need to heat through for a few more minutes. The potato flakes work as a thickener and are a good alternative to flour or corn starch.
