Hoff's Hummus Grain Bowl
Yields: 2 servingsmeat-free, dairy-free, egg-free, oil-free, gluten-free
Ingredients:
Directions:
- 1 cup Jasmine Rice or Quinoa
- 1 1/2 cups Water
- Tofu or Baby Potatoes
- 15 oz can Chickpeas
- 1 Avocado (cubed)
- 1 cup Cucumber (chopped)
- 1 cup Carrots (shredded)
- 1/2 cup Onion (diced)
- 2 tsp. Sunflower/Pumpkin Seeds
- Cashew Cream (1/4 cup Cashews, 1/4 cup Water)
- Hummus
Directions:
- Drain Chickpeas but don’t rinse, add Tofu or Potatoes toss with desired spices, spread out on baking sheet air-fry or roast at 400 degrees for 12 minutes (AF), 30 minutes (oven)
- Meanwhile, place Rice & Water in an Instant Pot & cook on Manual for 3 minutes or Quinoa for 4 minutes Quick Release
- Divide Rice/Quinoa evenly into two bowls
- Divide remaining ingredients
- Top with desired amount of Cashew Cream & Hummus
